This cookie recipe-a favorite of our four children-has been in my collection for years. Sometimes I'll substitute mint-flavored chips for the semisweet chocolate chips. Either way, the chocolate cookies disappear quickly. This is one of our favorite easy chocolate chip cookie recipes. -Sheri Ziesemer, Olympia, Washington

1-1/4 cups butter, softened
2 cups sugar
2 large eggs, room temperature
2 teaspoons vanilla extract
2 cups all-purpose flour
3/4 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
2 cups semisweet chocolate chips

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and vanilla. In another bowl, whisk flour, cocoa, baking soda and salt; gradually add to creamed mixture. Stir in chips., Drop by teaspoonfuls onto lightly greased baking sheets. Bake 8-10 minutes (do not overbake). Cool on pans 1 minute. Remove to wire racks to cool.

Rich, fudgy, soft batch double chocolate chip cookies oozing with chocolate chips - Chocolate lovers rejoice!

1 cup all-purpose flour (spooned and leveled)
2/3 cup cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
10 tablespoons unsalted butter (softened (1 stick plus 2 tablespoons))
3/4 cup packed brown sugar
1/4 cup granulated sugar
1 large egg
1 1/2 teaspoons vanilla
1 cup chocolate chips

Steps:

  • Whisk together the flour, cocoa, baking soda, and salt.
  • In a large bowl beat together the butter and sugars until fluffy.
  • Add the egg and vanilla and continue mixing until combined. Turn off the mixer and scrape down the sides of the bowl.
  • Slowly mix in the dry ingredients on low speed until incorporated.
  • Turn off the electric mixer and stir in the chocolate chips. I usually reserve about 1/4 cup of chocolate chips for sprinkling on top.
  • Cover the bowl with cling film and chill in the refrigerator for at least 3 hours or up to 48.
  • When ready to bake, preheat the oven to 350F degrees. Line 2 cookie sheets with parchment paper or silicone baking mats. Take the dough out of the fridge for 10-15 minutes to warm up slightly.
  • Form dough into balls 3 tablespoons in size and place 3 inches apart on baking sheets. (Or form into balls of 1 - 1.5 tablespoons in size and place 2 inches apart).
  • Bake cookies for 11-13 minutes until the tops are just set (or 8-10 minutes for smaller cookies). Remove from oven and let cool on the tray for 10 minutes before transferring to a wire rack to continue cooling. While the cookies are fresh from the oven, optionally dot the tops of each cookie with a few extra chocolate chips.

With plenty of cocoa powder and big wells of dark chocolate, these double chocolate cookies are so fudgy that a tall glass of cold milk is not only delicious, but essential - especially when they are served hot from the oven. Just like David Leite's impeccable chocolate chip cookies, they bake up even better after the dough has had time to rest in the fridge. The extralong chill gives the dough a chance to hydrate fully and firm up, which yields more uniformly baked cookies, with the perfect amount of crunch around the edges and chew in the center. Thin chocolate discs or wafers, which are widely available, are used here. They melt into lovely chocolate layers as the cookies bake. But if you can't find them, chocolate chips make a fine substitute; there's no need to adjust the baking time.

3/4 cup/75 grams Dutch-process cocoa powder
3/4 teaspoon kosher salt

3/4 cup/150 grams dark brown sugar
2/3 cup/133 grams granulated sugar
1 large egg

2 cups/305 grams semisweet or bittersweet chocolate discs (or use 2 cups/340 grams chocolate chips)

Steps:

  • In a medium bowl, whisk together flour, cocoa powder, salt, baking powder and baking soda. Set aside.
  • In a stand mixer fitted with the paddle attachment, beat together butter, brown sugar and granulated sugar until very light, about 5 minutes. Add egg and vanilla and beat until well combined.
  • With the mixer on low, add the dry ingredients and beat just until combined. Add the chocolate discs and mix briefly to combine. Press plastic wrap against the dough and chill it for at least 24 hours and up to 36.
  • Heat oven to 350 degrees. Line a baking sheet with parchment paper. Portion the dough out into balls slightly larger than golf balls, about 3 1/2 ounces each, and transfer five balls to the baking sheet. (They will spread significantly.) Bake the cookies until set, being careful to remove cookies from the oven when still soft in the center, about 18 minutes. Transfer the parchment with the cookies to a rack to cool. Repeat with the remaining dough, baking a second batch of four or five cookies. Serve warm.

Steps:

3/4 cups special dark cocoa powder
1 teaspoon kosher salt
1 teaspoon baking soda
1/2 cup butter (softened)

1 large egg
3/4 teaspoon real vanilla extract
1/2 cup merlot
10 ounces chocolate chips (like Ghirardelli 60% cacao bittersweet )

Steps:

  • Preheat your oven to 375°.
  • In a mixing bowl combine, the flour, cocoa, salt and baking soda. Whisk and set aside.
  • Then into the bowl of your stand mixer, cream together the sugars and butter until light and fluffy.

These provocatively named cookies came to The Times in a 1999 Sunday Magazine article about Mrs. London's Bake Shop, a husband and wife owned bakery in Saratoga Springs, N.Y., known for their sweets. While the name suggests these cookies might veer into the too sweet and too rich category, they do not. Shiny and crackly on top while tender and deeply chocolaty in the center, they're like an ideal brownie in cookie form. They're kind of perfect. (One note: The recipe calls for bittersweet chocolate, but feel free to use semisweet or a combination of the two. Also, a sprinkle of flaky sea salt before baking would not be a bad idea.)

9 ounces bittersweet chocolate, preferably Valrhona, finely chopped, plus 6 ounces cut into 1/4 to 1/2-inch chunks

1 1/2 teaspoons vanilla extract
7 tablespoons sifted cake flour

Steps:

  • Preheat the oven to 325 degrees. In the top of a double boiler set over simmering water, combine the finely chopped bittersweet chocolate, butter and espresso. Stir occasionally until smooth. Set aside to cool slightly.
  • Meanwhile, in the bowl of an electric mixer, combine eggs and sugar and whip until the mixture is light in color and increases substantially in volume, about 10 minutes. Beat in the vanilla extract. Stir in the melted chocolate. In a separate bowl, whisk together the flour and baking powder and fold them into the chocolate mixture until just combined. Fold in the pecans and chocolate chunks.
  • Line two cookie sheets with parchment paper. Drop the batter by heaping tablespoons onto the paper, leaving about 2 inches between each. Bake until the cookies are slightly puffed and cracked on the outside but gooey inside, about 10 to 14 minutes. Cool on the cookie sheets.

1 1/2 cup dark brown sugar
1 cup granulated sugar
2 large eggs
4 teaspoon vanilla extract
4 cups all-purpose flour
3/4 cup Hershey's Special Dark Cacao
2 tablespoon cornstarch
2 teaspoon baking soda
1 teaspoon salt
2 cups semi-sweet chocolate chips

Steps:

  • Mix butter, shortening and sugars until light and fluffy.
  • Add egg and vanilla and mix until well combined.
  • Combine flour, cocoa, cornstarch, baking soda, and salt and mix together.
  • Mix dry ingredients slowly into wet ingredients and blend well.
  • If the dough is crumbly, stir in water 1 teaspoon at a time until it just holds together. The dough should not be sticky.
  • Add in chocolate chips and stir until evenly distributed.
  • Using ¼ cup measure, scoop out dough and form into a ball. Continue until all dough is balled. Approx 24 cookies.
  • Place dough in the freezer for 2 hours or up to 3 months.
