2 C tomato sauce
1/2 C water
1/2 C balsamic vinegar
1/3 C agave
1/2 T onion powder
1/2 T garlic powder
1/2 t salt
1 T dijon mustard
1/4 C worcestershire sauce

Steps:

  • Combine all ingredients in a blender and blend until smooth. Pour into a sauce pan and bring to a boil, immediately reduce to a simmer and let simmer for 45 minutes or until desired level of thickness. Stores well in the refrigerator for weeks.

This sauce may be used to baste meats and poultry before grilling or roasting. I got this from the Shoalwater Restaurant in Seaview, Washington. Enjoy! You may easily half this recipe. You could make this in the crock pot, just cook on low for 2-4 hours.

6 cups fresh cranberries or 6 cups frozen cranberries
2 cups water
1 cup vegetable stock or 1 cup chicken stock
1/2 cup diced onion
1/2 cup brown sugar
1 tablespoon tomato paste
2 tablespoons Worcestershire sauce
1/4 cup red wine vinegar
1/4 cup balsamic vinegar
1/4 teaspoon liquid smoke
2 teaspoons black pepper
1 tablespoon ground ginger
1/2 teaspoon Tabasco sauce
1 teaspoon dried tarragon
1 teaspoon dried oregano
1 teaspoon chili powder
1 teaspoon dried thyme
1 teaspoon paprika
1 tablespoon garlic salt
2 teaspoons dried mustard
1 1/2 teaspoons salt

Steps:

  • Place all ingredients into a stock pot and bring to a boil. Boil for 15 minutes or until the liquid is reduced to 1/3.
  • Place in a blender in small batches and puree (always be VERY careful when pureeing hot liquids in a blender!).
  • Strain the puree through a fine mesh strainer.
  • Chill in the refrigerator. This sauce will hold for weeks in the refrigerator.

1 can (14 ounces) whole-berry cranberry sauce
1-1/2 cups barbecue sauce
1 teaspoon ground cinnamon
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon pepper
1/2 teaspoon salt
Gouda cheese and assorted crackers

Steps:

  • In a small saucepan, combine the first seven ingredients; heat through. Store in an airtight container in the refrigerator for up to 1 month. To serve, reheat sauce and serve with cheese and crackers.

2 cups fresh or frozen cranberries
1 1/2 cups agave
1 1/2 cups ketchup
1 cup red wine vinegar
2 tablespoons lemon juice
2 tablespoons Worcestershire sauce
1/2 teaspoon course ground black pepper

Steps:

  • Combine all ingredients in a medium-large saucepan. Bring to a boil and simmer, covered, for 20 minutes. Remove cover and simmer for 20 minutes more or until thickened (mixture will thicken slightly as it cools). To can, pour hot sauce into sterilized jars, leaving 1/2-inch head space. Wipe tops and threads of jars with a clean, damp cloth. Place lids on jars so that the rubber sealing compound sits evenly on rim and screw rings on firmly. Place each jar in a pot of water that comes 1 to 2 inches above the jar tops. Cover and bring to a boil. Hold water at a steady boil for about 45 minutes. Remove jars from pot and let cool on a dishcloth with space in between each jar. Store in a cool dark place. (In lieu of canning, sauce may be stored, covered, in refrigerator up to 1 month.)

1 tablespoon vegetable oil
1 (8-ounce) can tomato sauce
1/2 cup agave
2 tablespoons vinegar
2 tablespoons minced parsley
1 tablespoon Worcestershire sauce
1/4 teaspoon black pepper
1/8 teaspoon cayenne pepper

Steps:

  • Sauté onion and garlic in oil until softened. Add remaining ingredients and bring mixture to boil reduce heat and simmer 5 minutes. Marinate beef, chicken or pork in sauce. Brush on meat during barbecuing or broiling.
