DOUBLE DREAM SLICE

I found this in a New Zealand Cook book... it makes a mountain load and is really eazy to make. They freeze well and are always a hit.

Number Of Ingredients 12

BASE
375 g butter or marg
1 1/2 c brown sugar
4 1/2 c plain flour
3 tsp baking powder
TOPPING
4 eggs
2 c brown sugar
3 Tbsp corn flour
1 tsp baking powder
3 c shredded coconut
2 c choc chips (the teeny tiny flecks of chocolate not your normal choc chips... if you can not find then simply chop up the normal choc chip to make them smaller)

Steps:

  • 1. BASE... Preheat oven to 190 degrees C. Melt the butter/marg and add the sugar to it. Sift in the flour and baking powder. Press into 2 lined, 20 X 30cm pan with high sides. Cook in preheated oven for 10 mins
  • 2. TOPPING... Beat eggs with the sugar. Pour over dry ingredients in a large bowl, Mix well. Pour over the 2 partially cooked bases and smooth over. Cook a further 40 mins at 160 degrees C. Top of slice should be slightly golden brown
  • 3. When slightly cooled, take out of the pan and cut into fingers. This makes ALOT but can be frozen...

½ cup unsalted butter
1 ½ cups graham cracker crumbs
1 cup semisweet chocolate chips
1 cup butterscotch chips
1 cup chopped walnuts
1 (14 ounce) can sweetened condensed milk
1 ⅓ cups shredded coconut

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Place butter in 13 x 9 inch pan and melt in oven. Swirl to coat bottom and sides with butter.
  • Spread graham cracker crumbs evenly over bottom of pan. Layer chocolate chips, butterscotch chips, and nuts over crumbs. Pour condensed milk over nuts. Sprinkle coconut over condensed milk.
  • Bake until edges are golden brown, about 25 minutes. Let cool before cutting into bars.

Number Of Ingredients 12

CRUST:
1 cup all-purpose flour
1/2 cup packed brown sugar
1/2 cup butter, cubed
FILLING
2 large eggs, lightly beaten
1 cup packed brown sugar
1 teaspoon vanilla extract
2 tablespoons all-purpose flour
1/2 teaspoon salt
1 cup sweetened shredded coconut
1 cup chopped walnuts

Steps:

  • In a small bowl, combine flour and brown sugar; cut in butter until crumbly. Pat into a 13x9-in. baking pan. Bake at 350° for 10 minutes. , Meanwhile, in a bowl, beat eggs and brown sugar; stir in vanilla. Combine flour and salt; add to egg mixture. Fold in coconut and walnuts. Spread over baked crust. Return to oven and bake 20-25 minutes longer or until golden brown. Cool on a wire rack.

Our family's favourite choice for Easter dessert, an easy and delicious Pineapple slice! The graham cracker crust and a fluffy pineapple filling is perfection!

2 1/2 cups graham crumbs better if you make them yourself
1/2 cup of margarine
2 cups of icing sugar
1/2 cup of margarine
1/2 cup of cream cheese or 2 eggs
1 cup of whipped cream
1 large can crushed pineapple drained thoroughly (20 ounces)

Steps:

  • Melt the margarine and combine the first ingredients for the crust. I crushed the wafers myself and it made such a lovely, chunky, solid crust! Press 2/3 of the mixture firmly into an 8x8 (or a 9x9) pan and bake at 300 for 8-10 minutes.
  • When the crust is cooling, whip up the cream cheese (or eggs) icing sugar and margarine.
  • When the crust is completely cooled, spread the mixture on top.
  • Time for the topping! Whip up the cream until, well, it's whipped cream. Fold in the very well drained pineapple.
  • Put the topping on, then sprinkle the rest of the graham crumb mixture on top. Refrigerate overnight for best results, or at least 4 hours if it's for the same day.

This chocolate banana bread is super moist, yet hearty and stable to hold its shape when sliced. Loaded with chocolate chips for the chocolate lover's dream!

1 cup all purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter (melted)
1/2 cup granulated sugar
1/2 cup light brown sugar
1 cup mashed ripened bananas ((about 3 medium overripe bananas))
2 large eggs (lightly beaten)
1/2 cup sour cream
1 teaspoon vanilla extract
1 1/2 cups semi-sweet chocolate chips (divided)

Steps:

  • Preheat oven to 350°F. Grease a 9x5-inch loaf pan with nonstick spray (I recommend Baker's Joy).
  • In a large mixing bowl, whisk the flour, cocoa, baking soda and salt; set aside.
  • In a medium bowl, beat together the melted butter and sugars until thick. Stir in the banana, eggs, sour cream and vanilla. Pour into the dry ingredients and gently stir to combine. Fold in 1 cup of the chocolate chips.
  • Pour batter into the prepared loaf pan and spread with a rubber spatula. Sprinkle remaining ½ cup chocolate chips evenly over top.
  • Bake for 50-60 minutes or until passes toothpick test and done in the middle. Optional: Loosely cover with foil the last 10 minutes of baking to avoid crispy edges.
  • Remove from oven and allow to completely cool in loaf pan on wire rack before removing to slice and serve.
