1 (6 ounce) package Mexican cornbread mix
4 eggs, beaten
1/3 cup butter, melted
1 cup sharp cheddar cheese, shredded
1 (4 1/2 ounce) can chopped green chilies, undrained
1/2 cup chopped red bell pepper
2 tablespoons chopped jalapenos, fresh
1/4 teaspoon cayenne, to taste

Steps:

  • Heat oven to 400°F and grease 8-inch square baking dish.
  • In a large bowl, combine cornbread mix, eggs, melted butter, cheese, green chilies, bell pepper, jalapeños and red pepper.
  • Stir until well mixed.
  • Pour into greased baking dish and bake at 400°F for 35-40 minutes or until set and golden brown.

1 cup butter
3/4 cup sugar
4 eggs
1/2 cup green chili, diced (may use canned)
1 1/2 cups cream-style corn
1/2 cup cheddar cheese, shredded
1 cup flour
1 cup yellow cornmeal
2 tablespoons baking powder
1 teaspoon salt

Steps:

  • Preheat oven to 325 degree f.
  • Cream butter and sugar.
  • Add eggs slowly, one at a time.
  • Add chiles, corn and cheese, mixing well to incorporate.
  • Sift together dry ingredients, then add and mix until smooth.
  • Pour into well-buttered, square 9 inch pan and bake about 1 hour.

1 (1 lb) can cream-style corn
3/4 cup milk
1/3 cup shortening
2 eggs, slightly beaten
1 cup cornmeal
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 (4 ounce) can diced green chilies, drained
1 1/2 cups shredded cheddar cheese

Steps:

  • Preheat oven to 400 degrees.
  • Combine corn, milk, shortening, eggs, cornmeal, soda, baking powder, salt, drained chiles and cheese.
  • Mix well.
  • Pour into greased 9-inch square pan.
  • Bake for 45 minutes until golden.
  • Serve hot.

2 Tbsp butter
6 large fresh green chiles (such as anaheim), roasted, peeled and seeded
1/2 c grated monterey jack cheese
1/4 c grated sharp cheddar cheese
3 eggs -- yolks and whites separated
2 ears corn, kernals removed
2 Tbsp yellow cornmeal
2 Tbsp flour
1/3 c milk
2 Tbsp sour cream
1/2 tsp salt

Steps:

  • 1. Preheat oven to 350° . Butter an 8-inch-square baking pan with 1 tablespoon of the butter.
  • 2. Place the chiles in a layer on the bottom of the pan, and sprinkle all but 2 tablespoons of the cheese on top of them.
  • 3. Beat the egg whites until fluffy, but not stiff.
  • 4. In another bowl, mix together the egg yolks, corn kernels, cornmeal, flour, milk, sour cream and salt. Fold the whites gently into the yolk-flour mixture. Spoon over the cheese and peppers.
  • 5. Cut the remaining butter into small pieces and scatter over the top. Sprinkle the remaining cheese over all. Bake for 20-25 minutes, or until all but the very center is set. Serve hot.

2 cups plain soymilk
2 cups chicken stock or 2 cups vegetable stock
3 tablespoons olive oil
1 tablespoon dark honey
1 cup of stone-ground cornmeal (regular is fine if you can't find stone-ground)
1 1/4 cups corn kernels (fresh, or frozen that have been thawed)
1 shallot, minced
1 tablespoon chopped fresh thyme
1 teaspoon baking powder
1/2 teaspoon salt
4 egg whites
1 tablespoon grated parmesan cheese

Steps:

  • Preheat the oven to 375°F Lightly coat a 3 quart souffle dish with olive oil cooking spray.
  • In a saucepan over medium heat, combine the soy milk, stock, olive oil and honey. Heat until very hot, but not to boiling. Reduce the heat to low until so the mixture simmers. Add in the cornmeal in a stream while whisking constantly. Cook, stirring constantly, until the mixture thickens, about 5 minutes. Transfer to a large bowl, stir in the corn, shallot, thyme, baking powder, salt and stir to comine.
  • In a large bowl, using an electric mixer on high speed, beat the egg whites until stiff peaks form. Gently whisk 1/3 of the egg whites into the corn mixture to lighten it. Using a rubber spatula, gently fold the remaining egg whites into the corn mixture just until combined.
  • Pour the batter into the prepared souffle dish and sprinkle with cheese. Bake until puffed and lightly golden, about 35 minutes. Let it stand in the dish for 5 minutes before serving.
