This double chocolate oatmeal is a quick and healthy breakfast recipe. Chocolate flavored oats are sweetened with maple syrup, topped with strawberries and chocolate chips!

- In a pot, combine rolled oats, milk, water and salt. Cover it with a lid and bring to a boil. Remove the lid, reduce the heat to low and add cocoa powder. Stir constantly for 5 to 7minutes or until the oats are cooked and you are happy with their consistency.
- Turn off the heat. Stir in the maple syrup and chocolate chips. Divide into 2 bowls, top with strawberries and extra chocolate chips.

Steps:
- Preheat oven to 350 degrees F. Grease a 9 inch square baking pan.
- To prepare Filling: In a heavy pot, melt 2 tablespoons of the butter and chocolate chips. Add the evaporated milk and 1/4 cup of the white sugar. Bring to a rolling boil, stirring constantly. Remove from heat. Stir in nuts and cool.
- To prepare cookie base: Cream 1 1/2 cups of the butter and the brown sugar together. Add the vanilla and the egg, and beat until light and fluffy.
- Add the flour, baking soda, and 1 3/4 cups of the oats and blend well.
- Press 2/3 of this mixture into the bottom of the greased pan. Spread the cooled filling on top of the cookie crust.
- Mix the remaining 1/4 cup of oats with the remainder of the cookie base, and crumble over the filling. Bake for 25-30 minutes.

DARK CHOCOLATE OATMEAL
Steps:
- Bring 3 cups water to a boil in a large saucepan over medium heat. Add the oats, cocoa powder, vanilla and salt and cook, stirring regularly, until thickened, 5 to 7 minutes. Turn off the heat and stir in the honey. Cover and let stand for 2 minutes.
- Top each serving with 2 tablespoons chopped walnuts, half of a sliced banana and 2 tablespoons cherries. Serve immediately.

- Preheat oven to 350°.
- Grease a 9x13 baking pan.
- Cream butter or margarine with both sugars.
- Add egg and mix well.
- Add vanilla and continue mixing.
- Sift together flour soda, baking powder and salt.
- Add to creamed ingredients, mix well.
- Add oats and continue mixing.
- Add 1 cup chocolate chips until well blended.
- With a large spoon, drop six large mounds into prepared baking pan.
- Cut a piece of plastic wrap large enough to cover pan.
- Place plastic wrap over mounds and press with your hand to spread the dough evenly; cover the entire pan with dough.
- Remove plastic wrap.
- Bake at 350° for 15-17 minutes or until light brown--Do not over bake.
- Remove pan from oven and turn off oven.
- Sprinkle the remaining 1 1/2 to 2 cups chocolate chips over the baked bars.
- Return to cooling oven for 30 seconds.
- Remove pan from oven.
- Use a plastic spatula to spread the melted chocolate until it completely covers the bars.
- Place in refrigerator until chocolate is cold and firm.
- Cut into squares.
CHOCOLATE OATMEAL BARS
Steps:
- Preheat the oven to 325 degrees and line a 8×8-inch baking pan with aluminum foil and spray the foil with cooking spray ( overhangs the edges of the foil to lift the bars easier from the pan) .
- Combine flour, oats, 11/3 cups light brown sugar, baking powder and salt in a medium bowl, add 101/2 tablespoons melted butter and stir to combine.
- Press half of mixture firmly into the pan and bake about 8 minutes, cool it.
- To make the filling, melt the butter and chocolate chips together and stir until it's smooth.
- Whisk together flour, sugar and salt in a bowl.
- Whisk eggs into cooled chocolate mixture, then stir in flour mixture.
- Pour chocolate filling over cooled crust and top with remaining oatmeal mixture.
- Bake 35 to 40 minutes.
- Cool completely before serving

- Heat oven to 350°.
- Line a 13x9-inch baking pan with foil, letting ends extend about 2 inches above pan.
- Lightly coat with nonstick spray.
