DOUBLE-CHOCOLATE CRANBERRY MUFFINS

Steps:
- Heat oven to 375°. Grease 12 medium muffin cups, 2 3/4x1 1/4 inches, with shortening; or line muffin cups with paper baking cups and spray with cooking spray.
- Mix flour, 1/3 cup sugar, the cocoa, baking powder and salt in large bowl. Stir in egg, milk, butter and chocolate chips just until blended. Fill muffin cups about 2/3 full.
- Mix cream cheese, melted baking chips and 1 tablespoon sugar in small bowl until smooth. Stir in cranberries. Drop spoonfuls of cream cheese mixture onto muffin batter, pressing down slightly.
- Bake 20 to 25 minutes or until muffins are puffed and cream cheese mixture is light golden brown. Remove from pan to wire rack. Cool 15 minutes before serving.

This recipe came from the Wisconsin State Cranberry Assoc. You can use fresh or frozen cranberries and combined with Vanilla chips and unsweetened cocoa is very good.

- 1. Preheat oven to 400 df . Prepare 12 cup muffin pan by lightly greasing bottoms only. Stir dry ingredients together in large bowl. Stir in chips and cranberries. Beat wet ingredients in mixer. Make a well in bowl with dry ingredients and pour wet ingredients in well. Stir just until moistened. Spoon batter about 2/3 full in each muffin cup.
- 2. Bake for 20-25 minutes until done. Immediately turn out onto cooling racks to cool.
- 3. TOPPING: Melt 1/2 cup chocolate chips with 1 Tablespoon shortening in microwave and drizzle over tops of muffins. Yield 12 muffins

- Whisk together the flour, cocoa powder, baking powder, baking soda and salt in a large bowl. Stir in the chocolate chips. In a medium bowl, whisk together the milk, brown sugar, butter, oil, vanilla and eggs until smooth.
- Quickly fold the milk mixture into the flour mixture with a rubber spatula. Divide the batter evenly among the prepared muffin cups. Bake until a toothpick inserted in the center comes out clean, about 25 minutes. Transfer the muffins from the pan to a wire rack to cool.
BEST EVER DOUBLE CHOCOLATE MUFFINS
Steps:
- Preheat your oven to 350 degrees Fahrenheit and prepare a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt, along with the chocolate chips, reserving a few chocolate chips for topping the muffins (optional).
- Into a large liquid measuring cup or bowl, add the milk, eggs, vanilla and oil. Whisk together with a fork.
- Add the liquid ingredients and mix everything together just until no streaks of flour remain.

- Heat oven to 375°F.
- Add milk to 1 cup cereal in medium bowl; stir to evenly moisten cereal. Let stand 3 min. Meanwhile, crush remaining cereal; mix with dried cranberries, nuts, 1 Tbsp. sugar and 1 tsp. oil.

- Preheat oven to 400F (205 C) and line 12-count muffin tin with cupcake liners
- In large bowl combine melted butter, oil and granulated sugar. Stir well.

EASY CRANBERRY WHITE CHOCOLATE MUFFINS RECIPE

- Preheat the oven to 360F/180C/160C Fan. Line the muffin pan with the muffin cases.
- Measure all of the dry ingredients into a large mixing bowl. (all-purpose flour (plain flour), baking power, cocoa, salt, chocolate chips, cranberries and the two sugars) and mix them together.
- Mix the wet ingredients together in another bowl. (the eggs, milk (dairy or non-dairy), the oil and the orange extract together in another bowl.
- Add the wet ingredients into the dry ingredients and mix only enough so that there are no dry pieces of flour stuck on the side of the bowl. A metal spoon can be very useful for this. This shouldn't take very long, you are not looking for a silky smooth batter. Lumpy is ok.
- Spoon the batter into the lined muffin pan. Fill the cups to 3/4 full.
- Bake in the oven for approximately 20 minutes. Test for 'doneness' by inserting a toothpick into the centre of a muffin and then checking that it comes out clean with only 1 or 2 crumbs sticking to it. If there is still batter sticking to the toothpick then cook for 2 or 3 more minutes and check again.
- Once the muffins are baked through, take them our of the oven and place the tray on a cooling rack for 5 minutes before removing the muffins from the tray.
- Then take the muffins out of the pan and allow to finish cooling before dusting with icing sugar, an icing glaze or a chocolate drizzle.
