1 1/3 cups buttermilk
1 egg, beaten
2 tablespoons margarine
2 tablespoons sugar
1 1/2 teaspoons salt
4 cups bread flour
1 tablespoon cocoa
1 1/2 teaspoons yeast
1/2 cup chocolate chips

Steps:

  • Follow instructions for your bread machine.
  • My machine instructs to measure buttermilk, beaten egg, margarine, sugar, salt, flour, cocoa, and yeast in the order listed into baking pan. (I mix buttermilk and egg and microwave on high for about 30 seconds before putting in pan.).
  • Insert baking pan into oven chamber and secure pan.
  • Select sweet bread setting and 2 pound loaf.
  • Add chocolate chips when "add ingredient" signal sounds.
  • When cycle ends, I put loaf into a large zip lock bag, seal, and place on wire rack to cool completely before slicing.
  • NOTE: Mini chocolate chips will give a solid chocolate color, while larger chips may result in a marbled texture.

2/3 cup milk
1 teaspoon vanilla extract
1 egg
1 tablespoon margarine or 1 tablespoon butter
2 cups bread flour
2 tablespoons brown sugar
1 tablespoon unsweetened cocoa powder
1/2 teaspoon salt
1 teaspoon active dry yeast
1/2 cup semi-sweet chocolate chips

Steps:

  • Select loaf size and add ingredients to machine according to machine instructions.
  • Using mini chips works better than the larger chips. You can add them in the beginning.
  • I find the addition of a tesp. of Cinnamon to be nice, this is optional.

2 tablespoons dry milk powder
2 tablespoons honey
2 tablespoons margarine
1 ½ teaspoons salt
1 cup bread flour
2 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground ginger
½ teaspoon ground allspice
½ teaspoon ground mace
½ teaspoon ground cardamom
1 ¼ teaspoons active dry yeast
½ cup raisins
½ cup candied mixed fruit peel

Steps:

  • Place ingredients in order suggested by your manufacturer.
  • Select sweet bread setting. Add the raisins and mixed peel when the machine beeps, or 5 minutes before kneading is complete.
