Double Cheese and Bean Nachos image

It's hard to resist a platter of crunchy, gooey nachos, especially this jalapeño-studded version loaded with cheese.

4 cups small round corn tortilla chips
1 cup Old El Paso™ refried beans (from 16-oz can)
1/2 cup Old El Paso™ Thick 'n Chunky salsa
2 tablespoons Old El Paso™ pickled jalapeño slices, drained, chopped (from 12-oz jar)
1/2 cup chopped green onions (8 medium)
2 cups shredded Mexican cheese blend (8 oz)

Steps:

  • Heat oven to 400°F. Line 12-inch pizza pan or 15x10x1-inch pan with foil; spray with cooking spray. Spread half of chips evenly on pan.
  • In small bowl, mix refried beans and salsa. Drop about half of mixture by small spoonfuls over chips. Top with half each of jalapeño slices, onions and cheese. Repeat layers ending with cheese.
  • Bake 10 to 12 minutes or until cheese is melted. Serve immediately.

1 pound ground beef
1 envelope taco seasoning
3/4 cup water
1 package (13 ounces) tortilla chips
1 cup refried beans
1 jar (15-1/2 ounces) salsa con queso dip
2 plum tomatoes, chopped
1/4 cup minced fresh chives, optional
1/2 cup sour cream

Steps:

  • Preheat oven to 350°. In a large skillet, cook and crumble beef over medium heat until no longer pink, 5-7 minutes; drain. Stir in taco seasoning and water; bring to a boil. Reduce heat; simmer, uncovered, until thickened, about 5 minutes, stirring occasionally., In an ungreased 13x9-in. baking pan, layer a third each of the following: chips, beans, beef mixture and queso dip. Repeat layers twice., Bake, uncovered, until heated through, 10-15 minutes. Top with tomatoes and, if desired, chives; serve immediately with sour cream on the side.

1 cup (250 mL) Old El Paso Refried Beans (from 398 mL can)
1/2 cup (125 mL) Old El Paso Thick N' Chunky Salsa
2 tbsp (25 mL) Old El Paso Sliced Jalapeno Peppers drained, chopped
1/2 cup (125 mL) chopped green onions
2 cups (500 mL) shredded Mexican cheese blend

Steps:

  • Heat oven to 400ºF. Line 12-inch pizza pan or 15x10x1-inch pan with foil; spray with cooking spray. Spread half of chips evenly on pan.

1 lb ground beef
1 onion, chopped
1 garlic clove, minced
0.5 (300 g) bag tortilla chips
1/2 cup cheddar cheese
1/2 cup monterey jack cheese
1/2 green pepper, diced and seeded
1/2 jalapeno pepper, sliced into rounds
1 tablespoon cumin
1 teaspoon chili powder
1 small tomatoes, chopped
1/2 cup sour cream
1/4 teaspoon salt

Steps:

  • Cook ground beef with minced onion, green peppers and garlic for 15 mins and break up meat into chunks.
  • Add Cumin, chili powder and salt.
  • On a baking dish put a layer of tortilla chips, then some beef mixture, then the cheese; repeat once.
  • Add the sliced Jalapeno pepper rounds.
  • Bake in 350 oven set on broil for 5 mins or until cheese melts.
  • Take out of oven and add chopped tomatoes. Enjoy!

A tray of these easy homemade nachos with ground beef makes a fun weeknight dinner or a festive party appetizer.

1 lb. ground beef
½ cup finely chopped onion
1 (1 ounce) packet taco seasoning mix (or use homemade taco seasoning blend)
1 large bag tortilla chips ((about 11 ounces))
4 cups grated cheese ((try cheddar, Monterey Jack, Pepper Jack, Colby, or a combination of these))
½ cup pickled jalapeños, patted dry (optional)
Optional toppings: chopped tomato, salsa, sour cream, sliced black olives, chopped green onions, fresh cilantro, diced avocado or guacamole

Steps:

  • Preheat oven to 425° F. Grease a large rimmed baking sheet or line with foil or parchment; set aside.
  • In a large skillet over medium-high heat, cook the ground beef and onion until the onion is tender and the meat is no longer pink. Drain off the fat; return beef and onion to the skillet. Add taco seasoning (and water if called for on the packet). Cook according to the instructions on the seasoning packet.
  • Arrange half of the tortilla chips on the prepared baking sheet. Top chips with half of the beef mixture, half of the cheese, and half of the jalapeños (if using).
  • Repeat layers once more.
  • Bake in the oven until the cheese melts, about 10-15 minutes. Add optional toppings; serve immediately.
