ROASTED ASPARAGUS WITH LEMON VINAIGRETTE --COURTESY MELISSA D'AR

Roasted Asparagus With Lemon Vinaigrette --Courtesy Melissa D'ar image

Simple, fresh, and bright. Serve warm or cold. Recipe by Melissa d'Arabian, winner of "The Next Food Network Star" 2009. Her show is called "Ten Dollar Dinners with Melissa d'Arabian". This recipe is from "Savory Savings" episode. This would be wonderful dish for a picnic. COOKS NOTE: I had more asparagus then the recipe called for so I doubled the Vinaigrette but used only about 3/4 of it. Since you have the whole lemon anyway, you might as well double it. I did not want to saturate the asparagus but felt it needed more. I also used some of the lemon zest as a garnish and served it chilled. It was wonderful...

Time 25m

Yield 4 serving(s)

Number Of Ingredients 7

3/4 lb fresh asparagus, washed, woody stems removed
2 tablespoons extra virgin olive oil
kosher salt & freshly ground black pepper
1/2 teaspoon Dijon mustard
1/2 lemon, juiced
1 tablespoon olive oil
kosher salt & freshly ground black pepper, to taste

Steps:

  • Preheat the oven to 400 degrees F.
  • Wash asparagus well to remove any sand from the tips, break off woody part of stem by holding the stalk at each end and gently bending until it snaps. pat asparagus dry.
  • In a large bowl toss asparagus with the olive oil, and liberally season with salt and pepper.
  • Spread the stalks out on a baking sheet, in a single layer, and roast until tender but still firm and moist, about 10 minutes. If you are using the really "skinny" stalks, be careful not to over roast them.
  • Meanwhile, make the vinaigrette, see Cooks Note:.
  • In a small bowl, vigorously whisk together the mustard and lemon juice. Slowly drizzle in the olive oil, whisking quickly to emulsify the olive oil into the juice mixture. Season with salt and pepper, to taste.
  • Transfer the asparagus to a serving platter, toss with the vinaigrette and serve. The dish may be eaten warm or cold.

Grilled Asparagus with Roasted Garlic Toast and Balsamic Vinaigrette image

This recipe is delicious during the spring. Even asparagus haters love this one. They do!

Provided by DJFoodie

Categories     Side Dish     Vegetables     Asparagus

Time 1h15m

Yield 4

Number Of Ingredients 8

1 medium head garlic, unpeeled
5 tablespoons extra virgin olive oil, divided
salt and pepper to taste
2 tablespoons minced shallot
1 ½ teaspoons balsamic vinegar
½ teaspoon red wine vinegar
1 ½ pounds thick stemmed asparagus
4 slices sourdough bread

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Coat the head of garlic with 1 tablespoon olive oil, salt, and pepper. Place on a baking sheet, and roast 45 minutes in the preheated oven, until golden brown. Once the garlic is roasted, cut the head in half horizontally, exposing all the cloves. Squeeze both halves into a bowl, discarding any skin. Whisk in 2 tablespoons of olive oil, salt, and pepper. Set aside.
  • While the garlic is roasting, place the minced shallot in a bowl with the balsamic and red wine vinegars for about 30 minutes to let the flavors blend. Whisk in remaining olive oil, and season with salt and pepper. Place asparagus spears in the mixture until ready to grill.
  • Preheat grill for medium-high heat.
  • Place asparagus in a large skillet or directly on the grill. Grill the asparagus, turning over once, until tender, about 10 minutes. While asparagus is grilling, spread the roasted garlic mixture on the bread. Grill bread until toasted. Arrange the bread and asparagus on a plate, and drizzle with the remaining shallot and vinegar mixture.

ASPARAGUS VINAIGRETTE

Asparagus Vinaigrette image

Asparagus is at its flavorful best for only a short time, usually between March and May, when you'll want to avail yourself of its abundance. There are, of course, a number of ways to prepare and serve asparagus, but this method, in which it is paired with a savory vinaigrette, is one of Martha's seasonal favorites.

Provided by Martha Stewart

Categories     Food & Cooking     Dinner Recipes     Dinner Side Dishes

Number Of Ingredients 9

Coarse salt
2 bunches asparagus (about 2 pounds), trimmed
1/2 teaspoon Dijon mustard
1 1/2 tablespoons champagne vinegar
Pinch of sugar
Freshly ground pepper
3 tablespoons extra-virgin olive oil
1 teaspoon lemon zest
1/2 teaspoon finely chopped fresh tarragon

Steps:

  • Prepare an ice-water bath; set aside. Bring a large pot of water to a boil. Add a generous amount of salt, and the asparagus. Return to a boil, and cook until asparagus are bright green and tender, about 3 minutes. Transfer to ice bath to cool. Drain well, pat dry, and transfer to a serving platter.
  • In a small bowl, whisk together mustard, vinegar, and sugar. Season with a pinch each of salt and pepper. Whisk in oil. Add lemon zest and tarragon; whisk to combine. Taste, and adjust for seasoning. Drizzle over asparagus. Serve immediately, or let stand at room temperature for up to 30 minutes before serving.

Time 30m

Yield 6 servings

Number Of Ingredients 8

Kosher salt
1 1/2 to 2 pounds asparagus
1 shallot, peeled
2 tablespoons tarragon leaves
2 tablespoons flat-leaf parsley leaves
Juice of 1 lemon
1/4 cup grapeseed oil
1/4 cup extra virgin olive oil

Add the lemon juice and a pinch salt. Then, with the motor running, add the grapeseed and olive oils. Adjust the seasoning if necessary, then strain through a sieve, reserving the dressing and discarding the rest.
  • Bring large pot of salted water to boil. Put in the asparagus stalks, in batches if necessary, lower heat and simmer until just tender and still bright green, about 5 minutes. Drain on towels and serve with vinaigrette spooned over.

  • Cook eggs on the stove until hard boiled (I usually let them boil for 5 minutes). Or make Instant Pot hard boiled eggs, so easy.
  • In a large pot, add 3/4 cold water and bring to a boil (you can use the same pot you used for cooking eggs previously). While water is coming to a boil, trim asparagus by snapping the end of one spear and cutting remaining asparagus with a knife the same length.
  • Then chop asparagus spears into 2 inch pieces, add to boiling water, and cook for 60 seconds if it is thin or for 3 minutes if the stalks are thick. Pierce with a knife or fork and stop cooking while vegetable is still bright green.
  • Drain asparagus, return to the pot and fill it with cold water and ice to cover. This will stop the cooking process. Set aside.

  • Heat the oil in a medium skillet over medium heat until it shimmers. Add the pancetta and cook, stirring occasionally, until the pancetta begins to render its fat, about 3 minutes. Add the shallot and cook, stirring frequently, until translucent and the pancetta is crisp, about 2 minutes more. Add the sherry vinegar and toss to combine. Remove from heat and set aside.
  • Line a large plate with paper towels. Fill a large straight-sided skillet with 3 inches of water and 1-1/2 tsp. salt. Bring to a boil over high heat. Reduce the heat to medium- high, add the asparagus, and cook, stirring occasionally, until the asparagus are bright green and crisp-tender, 2 to 4 minutes. Using tongs, transfer the asparagus to the prepared plate, leaving the water in the skillet. Pat the asparagus dry with paper towels, divide among 4 plates, and sprinkle with arugula, if using. Set the paper towel-lined plate aside.
  • Add the white wine vinegar to the water. Reduce the heat to maintain a medium simmer. Crack the eggs into separate small cups. Gently slide the eggs into the water. Using a spoon, gently swirl the egg whites back towards the yolks to form a more compact shape. Reduce the heat to maintain a low simmer and cook until the whites are set and the yolks are runny, 4 to 5 minutes. Using a slotted spoon, transfer the eggs to the paper towel-lined plate.
  • Place one egg on top of each plate of asparagus. Heat the pancetta mixture over medium heat until warmed through. Spoon the mixture over the top of the eggs and asparagus. Season with salt and pepper, and serve immediately.
