3 cups all-purpose flour
1 cup sugar
1 cup medium cornmeal
2 tablespoons baking powder
1 1/2 teaspoons salt
1 1/2 cups whole milk
1/2 pound unsalted butter, melted and cooled
2 extra-large eggs

Steps:

  • Preheat the oven to 350 degrees F.
  • Line 12 muffin cups with paper liners. In the bowl of an electric mixer fitted with a paddle attachment, mix the flour, sugar, cornmeal, baking powder, and salt. In a separate bowl, combine the milk, melted butter, and eggs. With the mixer on the lowest speed, pour the wet ingredients into the dry ones and stir until they are just blended. Spoon the batter into the paper liners, filling each one to the top. Bake for 30 minutes, until the tops are crisp and a toothpick comes out clean. Cool slightly and remove from the pan.

1/2 cup all-purpose flour
1/2 cup cornmeal
3 tablespoons sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg
1 cup sour cream

Steps:

  • In a large bowl, combine the flour, cornmeal, sugar, baking soda and salt. In another bowl, beat egg and sour cream; stir into dry ingredients just until moistened. , Fill greased muffin cups two-thirds full. Bake at 400° for 15-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack to cool completely.

3 tablespoons unbleached flour
3 tablespoons yellow cornmeal
1 tablespoon sugar
3/4 teaspoon baking powder
1/8 teaspoon salt
1 large egg yolk, beaten
2 tablespoons milk
2 teaspoons butter, melted
1 teaspoon yellow cornmeal

Steps:

  • In a small bowl stir together flour, 3 T yellow cornmeal, sugar, baking powder and salt.
  • Make a well in the center of the dry ingredients.
  • Stir together beaten egg yolk, milk and melted butter.
  • Add all at once to the dry ingredients, stirring just till moistened.
  • Line two 6-ounce custard cups with paper baking cups.
  • Fill cups 2/3rds full.
  • Sprinkle a little additional cornmeal atop muffins.
  • Micro-cook, uncovered, on 100% power about 45 seconds or till done, rearranging once. (When done, the surface may appear moist but a wooden pick inserted near the center should come out clean.).

1 cup all-purpose flour
1 cup yellow cornmeal
1/4 cup sugar
2-1/2 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon baking soda
1 large egg
1 large egg yolk
1-1/4 cups buttermilk
1/3 cup canola oil
3/4 cup whole kernel corn
HONEY BUTTER:
1/2 cup butter, softened
2 to 3 tablespoons honey

Steps:

  • In a large bowl, combine the first six ingredients. In another bowl, combine the egg, egg yolk, buttermilk and oil. Stir into dry ingredients just until moistened. Fold in corn., Fill greased muffin cups three-fourths full. Bake at 400° for 18-23 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. , In a small bowl, beat butter and honey until blended. Serve with muffins.

Buttermilk gives these muffins a tender crumb and light texture, and they really need no accompaniment-though they're even more irresistible topped with butter or one of the delicious flavored butters in the Toppings and Sauces chapter. If you like a fruity muffin, add fresh raspberries or any other berry, and for a cheese flavor, stir in grated sharp white Cheddar (see variations). You can also add a zing by adding black pepper or jalapeño peppers.

Number Of Ingredients 8

2 cups all-purpose flour
1 cup cornmeal
1 1/2 tablespoons baking powder
1/2 teaspoon kosher salt
1/2 pound (2 sticks) unsalted butter, at room temperature
3/4 cup sugar
2 extra-large eggs, at room temperature
1 1/4 cups buttermilk

Steps:

  • Position an oven rack in the middle of the oven. Preheat the oven to 350°F. Line two standard muffin pans with 20 paper baking cups or lightly butter the muffin cups.
  • Combine the flour, cornmeal, baking powder, and salt in a large bowl and set aside.
  • Using a mixer set on high speed, cream the butter and sugar in a medium mixing bowl for about 5 minutes, or until light and fluffy. Beat in the eggs, one at a time, beating well after each addition.
  • Turn the mixer to low and combine the flour mixture with the butter mixture in three additions, alternating with the buttermilk; beat just until incorporated, with no streaks of flour remaining.
  • Spoon the batter into the muffin cups, filling them two-thirds full. Bake the muffins for 20 to 25 minutes, or until the tops spring back when pressed lightly and a toothpick inserted into the center comes out clean.
  • Remove the muffins from the oven and allow to cool in the pan for 5 minutes. Remove the muffins from the pan, transfer to a wire rack, and allow to cool for 15 minutes.
  • Add 1 cup grated sharp white Cheddar cheese to the batter after all the other ingredients have been combined.
  • Add 1 cup fresh or frozen raspberries to the batter after all the other ingredients have been combined.
