DOT'S CHEESE BACON PUFFS
I am posting this recipe in memory of my dear friend, Dot, who died in 2008. Dot was a wonderful lady and matriarch of a large and fascinating family. She was also an avid and excellent cook. It didn't matter when you arrived at Dot's home, there was always some freshly made goodie for you to sample. These puffs were just one of her offerings. The yield is a guess, as I forgot to write down what she said. Love you, Dot, and miss you!

Steps:
- Preheat oven to 180°C/350°F.
- Combine egg and milk, and stir into remaining ingredients.
- Drop by rounded teaspoon onto a lightly greased cookie sheet.
- Bake until golden (about 20 minutes).
- Cool on wire racks.

CHEDDAR BACON PUFFS
Steps:
- Gather the ingredients.
- Line two baking sheets with parchment paper or silicone baking mats. Set aside.
- Preheat the oven to 400 F.
- In a medium saucepan, combine the water, milk or light cream, salt, and butter. Put over high heat and cook, stirring, until butter is melted. Bring to a boil.
- With a wooden spoon , stir in the flour all at once. Continue stirring until the dough leaves the sides of the pan and forms a ball.
- Transfer the hot dough to a large mixing bowl or the bowl of a stand mixer with paddle attachment. Let the dough rest for 2 minutes.
- Beat the hot dough on low speed for 1 minute. Quickly beat in the first egg, beating until thoroughly blended into the dough. Continue beating in the remaining eggs, one at a time, beating well after each addition.
- Beat in the shredded cheese, bacon, cayenne, and freshly ground black pepper. Continue beating until the dough is smooth and well blended.
- Using a tablespoon measure or small cookie scoop, drop the dough onto the parchment lined baking sheets. With moistened fingers, smooth any peaks on top of the mounds of dough. If peaks are left, they tend to over-brown or burn.
- Bake the puffs for about 20 to 22 minutes, until nicely puffed and golden brown.
- Serve and enjoy!

- Heat the oven to 220°C/200°C fan/gas 6. Unroll the pastry, still on its paper, onto a flat baking sheet, then divide into 4 equal rectangles. Spread each rectangle with 1 tbsp pesto, leaving a 2cm border of pastry around the edges, then roughly fold over the edges. Chill in the fridge for 15 minutes.
- Heat a wide, heavy-based frying pan over a medium-high heat. Add the bacon lardons and sliced leek and cook, stirring, for 8 minutes until the bacon is golden and crisp.
- Divide the bacon and leek mixture equally among the chilled pastry rectangles, then top with the cheese. Bake for 20 minutes until golden and oozing. Drizzle with a little more pesto to serve. Serve with a simple side salad.

- Unroll 1 of the pastry sheets on a lightly floured flat surface. Use a rolling pin, roll the pastry sheet out into a large 12 x 12 inch square. You need to make them at least 2" squares - so you'll wind up with 36 squares from one sheet. Trust me, don't make them too small or they won't be able to hold the yummy topping.
- I cut mine directly on the baking sheet so I don't have to transfer anything, but if you don't, transfer them to a baking sheet now.
