DOROTHY'S POTATO SALAD



Dorothy's Potato Salad image

Dorothy's Homemade Potato Salad is so creamy and flavorful, made with tender potatoes, hard-boiled eggs, green onion, crisp celery, and a dressing made of mayo, sweet pickle relish and Dorothy Lynch!

Number Of Ingredients 9

7 medium potatoes, peeled, cubed, cooked and cooled
4 eggs, hard-boiled, peeled and chopped
2 stalks celery, diced
5 green onions, sliced
1/2 cup mayonnaise
2 Tablespoons sweet pickle relish
3/4 cup Dorothy Lynch Home Style Dressing & Condiment
1 Tablespoon fresh chives, chopped
salt & pepper to taste

Steps:

  • Add potatoes to a big bowl, followed by eggs, celery and onion.
  • Top with Dorothy Lynch, mayo, sweet pickle relish, fold together until everything is incorporated.
  • Salt and pepper to taste and top with fresh chives before serving.

1 lb ground beef
1 pkg taco seasoning mix
1 medium head iceberg lettuce
1 can(s) kidney beans, rinsed and drained (15 oz)
6 oz shredded cheddar cheese
1 pt cherry tomatoes, halved
2 stalk(s) green onions, diced
1 can(s) black olives, diced (3.8 oz)
1/2-1 pkg nacho cheese chips, crushed (9.34 oz)
1 c Dorothy Lynch salad dressing

Steps:

  • 1. Prepare ground beef with taco mix according to directions. Place in refrigerator to let cool.
  • 2. In a very large salad bowl, layer lettuce, beef mixture, beans, tomatoes, olives, and green onion.
  • 3. Add crushed chips and cheese right before serving.
  • 4. Right before serving, toss the salad together.
  • 5. Pour salad dressing over the salad and toss.

This is my husband's favorite dressing, and it is the best dressing to use in taco salad. The original dressing was made in St. Paul, Nebraska and is sold in the midwest but is becoming more expensive. This recipe is very similar to the store version and uses products I regularly have in my pantry. We love it.

1 (10.75 ounce) can condensed tomato soup
1 cup vegetable oil
¾ cup white sugar
½ cup vinegar
1 teaspoon dry mustard powder
1 teaspoon salt
1 teaspoon celery seeds
¼ teaspoon coarsely ground black pepper
⅛ teaspoon garlic powder
¼ teaspoon cornstarch, or as needed

Steps:

  • Mix tomato soup, vegetable oil, sugar, vinegar, dry mustard, salt, celery seeds, black pepper, and garlic powder in a large jar with a lid. For thicker dressing, stir in cornstarch. Serve immediately or refrigerate overnight for best flavor.
