DON PABLO QUESO DIP

Steps:

• Saute onion in butter.
• Add all the tomatoes and cook until thick.
• Add cheeses and cook to thick and smooth, stirring often.
• Refrigerate overnight.
• Heat to eat.

DON'S QUESO DIP

Steps:

• In a small saute pan, saute jalapeño until softened.
• In a large pot, heat cheese and milk on medium-low heat, stirring constantly.
• Once cheese is melted, slowly mix in salsa, jalapeño, green chilies and ground beef.
• Mix in seasonings.
• Enjoy with Chips.
• I usually use a slice of Fresh lime to spice up the chips a little. Try it on one chip to make sure you like it.
• If you are making it in the Crockpot, just through it all in and stir occasionally. Cook on Low.

DON PABLO'S QUESO DIP RECIPE

Steps:

• Saute onions in butter. Add tomatoes with chilies and stewed tomatoes; cook until thick. Add processed and cubed cheeses. Cook until thick and smooth, stirring often to keep from sticking. Refrigerate overnight. Heat to eat. Serve with corn chips, Triscuits or vegetables. This recipe yields ?? servings.

CHEF JOHN'S QUESO DIP

Steps:

• Grate Cheddar cheese into a bowl. Sprinkle in cornstarch and toss to coat.
• Melt butter in a saucepan over medium-high heat. Add garlic and light parts of the scallions. Sprinkle in salt, chipotle, and cumin. Cook and stir until fragrant, about 2 minutes. Add green chiles and 1/2 cup tomatoes; cook and stir for 2 minutes more. Pour in evaporated milk and bring to a boil. Add the Cheddar cheese and stir just until melted; immediately remove from heat.
• Stir in cilantro. Season to taste, adding cayenne if desired. Garnish with reserved green onion parts and 1 tablespoon diced tomato.
