DOMINICAN CHIMICHURRI BURGER (KATLETI)
This delicious street food burger is very popular with my Ukrainian family. One of my baby cousins said it's a superman katletka. Ukrainian katleti are very similar but I must admit a little boring compared to the chimichurri. Don't be afraid to try this for your Eastern European family, they will absolutely love it. Before you know it, you won't be making katleti anyone, all chimichurri for our household! Enjoy and don't be afraid to let me know your outcome.

Steps:
- Mix ground beef, green bell pepper, finely chopped onion, Worcestershire sauce, soy sauce, yellow mustard, garlic, oregano, salt, and pepper together in a large bowl. Form mixture into 4 patties that will fit inside the rolls.
- Heat vegetable oil in a large skillet over medium-high heat. Cook patties until browned on the bottom, about 6 minutes. Reduce heat to medium-low and flip; cook for 4 minutes. Top each patty with a slice of Cheddar cheese; cook until cheese starts to melt, about 2 minutes. An instant-read thermometer inserted into the center of each patty should read 150 degrees F (66 degrees C) for medium-well.
- Mix ketchup and mayonnaise together in a small bowl. Spread evenly over both sides of each bun. Transfer a patty to each bun; top with sliced cabbage, tomatoes, and onion.

DOMINICAN CHIMICHURRI BURGERS WITH CHIPOTLE GLAZED GRILLED YELLOW PLANTAINS
Steps:
- For the burgers: Mix together beef, onion, bell pepper, garlic, cilantro, oregano, soy sauce, Worcestershire sauce, a scant 1/2 teaspoon salt, and 1/2 teaspoon pepper. Form into 4 (4 1/2-inch-wide) patties. Heat a large griddle or 12-inch heavy skillet over medium heat until hot, then lightly toast buns. Oil griddle, then cook patties, turning once, about 8 minutes total for medium-rare. Transfer to buns. Mix together cabbage, carrot, and 1/4 teaspoon salt, then cook, turning occasionally, until slightly wilted, about 2 minutes. Divide among burgers.
- Oil griddle again, then sear onion and tomato, turning once, until slightly charred, about 2 minutes total. Divide among burgers. Stir together ketchup, mayonnaise, and mustard, then top burgers with sauce.
- For the plantains: While the hamburgers are cooking, peel plantains and wrap them in foil. Place wrapped plantains on grill and cook until tender but still firm, slightly caramelized. Once cooked, remove from grill, and slice into 1/2-inch rounds, on the diagonal. In a small bowl, mix together the yogurt, mayonnaise, and chipotle peppers until smooth. Return the sliced pieces of plantains to the grill, and brush chipotle sauce on 1 side. Flip after a couple of minutes and brush the sauce on the other side. Remove from grill and serve with the burgers.

A saucy, simply seasoned burger, topped with sauteed cabbage, tomato and onion, the Chimichurri Burger - aka "Chimi" - is Dominican street food at its finest!

Steps:
- In a large bowl, combine ground beef, Worcestershire sauce, 3 Tablespoons soy sauce, 2 teaspoons garlic powder, onion powder, salt, and black pepper. Mix well, then form 4 equal patties.
- Heat a stove-top grill pan over medium heat. Spray pan with oil-based cooking spray, then cook patties, turning once, for about 8 minutes for medium-rare. Remove to a plate.
- Heat a skillet over medium heat. Add cabbage, remaining soy sauce and garlic powder, and saute 4-5 minutes. Place cabbage in bowl and set aside.
- (optional step) Return pan to stove and heat olive oil. Sear tomato and onion slices for 1 minute on each side. Remove to a plate.

DOMINICAN PLANTAINS
Steps:
- Roll puff pastry out with flour, thinly. Cut into 3 to 4-inch lengths - the same size as the plantains.
- Spray nonstick cooking spray onto a cookie sheet. Place rolled-out puff pastry onto sheet. Place marinated plantains in center of each puff slice. Roll up. Prepare egg wash (2 eggs beaten), using a pastry brush paint egg wash on all sides of pastry. Bake for 20 minutes at 400 degrees.
- Sauce for Dominican Plantains: Drain and strain marinade, add thickening (1 tablespoon cornstarch to 1 cup water, mix well). Bring all liquid to a boil for 3 to 5 minutes. Drizzle on plate,place baked plantains (2 to a plate) and drizzle sauce on top.
DOMINICAN CHIMICHURRI BURGERS
No need to worry about why this Dominican burger shares a name with the Argentinean sauce-nobody knows. Instead, just call it a chimi, grab a cold beer, and enjoy!
