CHICKEN ENCHILADAS
These are the BEST Chicken enchiladas, my dish of choice anytime I go out for Mexican! If you're an enchilada lover like me, you will love these!!

Steps:
- In a medium saucepan, spray oil and sauté garlic. Add chipotle chiles, chili powder, cumin, chicken broth, tomato sauce, salt and pepper. Bring to a boil. Reduce the heat to low and simmer for 5-10 minutes. Set aside until ready to use.
- Preheat oven to 400 degrees.
- Heat the vegetable oil in a medium skillet over medium-high heat. Sauté onions and garlic on low until soft, about 2 minutes. Add chicken, salt, cilantro, cumin, oregano, chili powder, tomato sauce, chicken broth, and cook 4 to 5 minutes. Remove from heat.
- Spray a 13 by 9-inch glass baking dish with non-stick spray. Put 1/3 cup chicken mixture into each tortilla and roll it.
- Place on baking dish seam side down, top with sauce. Then top with cheese.
- Cover with aluminum foil and bake in the oven on the middle rack for 20-25 minutes. Top with low fat sour cream or scallions if you wish. (Extra points) Makes 8 enchiladas.

I have tweaked this recipe over the years as a full fat recipe, but now that I'm eating healthy, it's been transformed into an easy, yummy recipe that fits into my daily tracker! You will love it guaranteed!

Steps:
- 1) Chop onion
- 2) Add olive oil to pan and saute onion for 2-3 minutes
- 3) Add green chilies & chicken breasts
- 4) Season with Chili Powder, Cumin, ground red pepper, salt & pepper
- 5) Cook until Chicken is done.
- 6) Remove chicken from pan and shred with two forks
- 7) Remove onion/green chilie/spice mixture from pan and put into a bowl
- 8) Add cream cheese and shredded chicken - mix
- 9) Add filling to the 8 tortillas and roll into enchiladas
- 10) place in shallow 9x13 pan - spray with a little non-stick spray first
- 11) mix can of green chili sauce and low fat sour cream
- 12) pour over filled tortillas
- 13) Cook in a 350 degree oven for 35-40 minutes
- 14) sprinkle cheese over the top and melt
- 15) Enjoy - Makes 8 servings

- Spoon 1/2 cup enchilada sauce into a greased 13x9-in. baking dish. In a large saucepan, cook and stir the cream cheese and salsa over medium heat until blended, 2-3 minutes. Stir in the chicken, beans and chiles. , Place about 1/3 cup chicken mixture down the center of each tortilla. Roll up and place seam side down over sauce. Top with remaining enchilada sauce; sprinkle with cheese. , Cover and bake at 350° until heated through, 25-30 minutes. If desired, serve with lettuce, tomato, sour cream and olives.

THE ABSOLUTE BEST CHICKEN ENCHILADA RECIPE YOU'LL EVER TRY...
I came across this recipe about three years ago on TOH's website. It originally called for 10 flour tortillas (6 inches), but I found my alteration to the recipe to be much better. I have also substituted on occasion pintos for black beans, and used Pace Picante sauce instead of the salsa. This recipe has become a staple at my house.

- Sprinkle chicken with chili powder. In a large nonstick skillet coated with cooking spray, cook chicken in oil over medium heat until no longer pink. Sprinkle with flour, coriander and spicy chocolate cinnamon sugar; stir until blended., Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened.
