TEEDEE'S PECAN CANDY

This is a Louisiana favorite. I have to make it every Christmas for my family.

2 teaspoons butter, or as needed
2 (12 fluid ounce) cans evaporated milk
1 ½ cups white sugar
2 cups pecans
¼ cup butter
1 teaspoon vanilla extract
1 teaspoon almond extract

Steps:

  • Grease a 9x13-inch pan with 2 teaspoons butter.
  • Combine evaporated milk with sugar in a heavy, large stockpot and place over medium heat. Stir constantly and bring to a boil. Cook the syrup, stirring often, until a candy thermometer reads 235 degrees F (110 degrees C) or a small spoonful of syrup dropped into a glass of cold water forms a soft ball, 5 to 8 minutes.
  • Stir pecans and butter into the syrup and continue to cook until solid crystals of candy begin to form on the side of the pot, about 30 minutes. Remove from heat and stir vanilla and almond extracts into candy.
  • Pour candy into prepared dish and let cool for 10 minutes before cutting into squares.

2 cups white sugar
½ cup light corn syrup
½ cup hot water
¼ teaspoon salt
2 egg whites
1 teaspoon vanilla extract

Steps:

  • In a heavy, 2 quart saucepan, combine the sugar, corn syrup, hot water, and salt. Cook and stir until the sugar dissolves and the mixture comes to a boil. Then cook to hard ball stage without stirring, 250 degrees F (120 degrees C.) Frequently wipe crystals forming on the sides of the pan, using a pastry brush dipped in water. Remove from heat.
  • Just as the syrup is reaching temperature, begin whipping egg whites: In a large glass or stainless steel mixing bowl, beat egg whites until stiff peaks form. Pour hot syrup in a thin stream over beaten egg whites, beating constantly with the electric mixer at medium speed. Increase speed to high, and continue beating for about 5 minutes. Add vanilla; continue beating until the mixture becomes stiff and begins to lose its gloss. If it is too stiff, add a few drops hot water.
  • Immediately drop by teaspoonfuls onto waxed paper. For a decorative flair, twirl the top with the spoon when dropping. Let stand until set. Store in an airtight container at room temperature.

SOUTHERN PECAN DIVINITY CANDY

I don't recall exactly how the conversation came about, but as a new bride, I discovered that my husband loves Southern Pecan Divinity Candy. Divinity is a traditional nougat-like Southern candy made with vanilla and pecans.

Number Of Ingredients 7

2 1/2 cups granulated sugar
1/2 cup light corn syrup (I use Karo)
1/4 teaspoon salt
1/2 cup water
2 egg whites
1 1/2 teaspoon vanilla extract
1 1/2 to 2 cup pecans (chopped)

Steps:

  • Combine sugar, corn syrup, salt and water in a 2 quart saucepan. Stir only until the sugar dissolves. Cook to 260 degrees (hard ball stage). I highly recommend using a food thermometer to make sure you get the syrup to the right temperature.
  • With an electric mixer, beat egg whites until stiff peaks form. When the syrup is ready, slowly pour it over the egg whites while beating on high-speed. BE CAREFUL! The syrup is hot and it will burn the fool out of you if it splatters.
  • Add vanilla and continue beating until the candy holds is shape.
  • Add pecans, mix well.
  • Drop by teaspoons onto waxed or parchment paper.
  • Let the candy dry on the paper before attempting to stack it in a candy dish or storage container.

2 1/2 cups sugar
3/4 cup corn syrup
1/4 cup water
2 egg whites
1/2 teaspoon peppermint extract, optional

Steps:

  • In a small heavy-bottomed pot dissolve the sugar in the corn syrup and water. Bring to a boil. Boil to thread stage (the candy thermometer should read between 223 to 234 degrees F). Brush down the inner wall of the pot with a heat-proof pastry brush and a small amount of water to prevent crystal formation.
  • In the meantime beat egg whites with mixer and whisk attachment until they hold stiff but not dry peaks. Pour 2/3 of the boiled syrup mixture in a thin stream over the beaten egg whites, whisking all the time on high speed. Put the remaining mixture back on the heat and cook to soft ball stage (the candy thermometer should read between 234 to 240 degrees F). Whisk into the egg white mixture with the mixer on high speed. Add extract. Continue whisking until mixture forms stiff peaks.
  • Pour into a buttered 9 by 13-inch pan. Let cool and cut. Store in an airtight container for chewier divinity or leave uncovered for a crispier texture.

2 1/2 c pecans, coarsly chopped
1 1/2 lb vanilla almond bark, coarsly chopped
1 can(s) sweetened condensed milk
1/4 tsp salt
1/2 tsp pure vanilla extract
1/2 tsp almond extract

Steps:

  • 1. Preheat oven to 350 degrees
  • 2. Spread chopped pecans on cookie sheet and bake for 8-10 minutes until toasted.
  • 3. Line a 15x10 inch jelly roll pan with wax paper; lightly spray with Pam or Bakers Joy
  • 4. Microwave candy coating, condensed milk and salt together in microwave safe bowl at high for 2-4 minutes. Stir at one minute intervals until melted and smooth.
  • 5. Stir in vanilla, almond and pecans; spread in an even layer on prepared pan.
  • 6. Cover with wax paper and chill until set - about 1-1/2 hours.
  • 7. Turn candy out onto cutting board and cut into squares. Cover and store at room temp.

2 large egg whites
2 cups sugar
1/2 cup light corn syrup
1/2 cup water
1 teaspoon pure vanilla extract
1/2 cup pecans

Steps:

  • Beat the egg whites with an electric mixer until stiff. Line a baking sheet with parchment or waxed paper. Put the sugar, corn syrup, and water in a medium-size heavy saucepan over medium-high heat. Stir to dissolve the sugar, bring to a boil and cook until the temperature reaches 260 degrees F on a candy thermometer, or the hard-ball stage, when a bit of the mixture dropped into cold water holds its shape, 10 to 15 minutes. Remove from the heat. Pour in a thin steady stream into the beaten egg whites and beat with an electric mixer on high for about 3 minutes, scraping down the sides of the bowl. Add the vanilla, and continue beating on high just until the candy starts to lose its gloss, 5 to 6 minutes. When the beaters are lifted, the mixture should fall in a ribbon that mounds on itself.

1 jar (7 ounces) marshmallow creme
1 teaspoon vanilla extract
1-1/2 cups chopped pecans

Steps:

  • In a large heavy saucepan, combine the sugar and water. Cook over medium heat, without stirring, until a candy thermometer reads 250° (hard-ball stage). , Remove from the heat; stir in the marshmallow creme, vanilla and pecans. Continue stirring until candy cools and begins to hold its shape when dropped from a spoon. , Quickly drop by heaping teaspoonfuls onto waxed paper-lined baking sheet. Store in an airtight container at room temperature.

EASY.....and the saltiness with the sweet chocolate is divine. Use very good quality chocolates, like Ghiardelli or better, for best results.

1 cup pecans, coarsely chopped
3 (4 ounce) bars bittersweet chocolate
3 (4 ounce) bars white chocolate
1 teaspoon coarse sea salt

Steps:

  • Preheat oven to 350 degrees.
  • Place pecans in a single layer on a baking sheet. Bake until toasted, 8-10 minutes.
  • Decrease oven temperature to 225 degrees.
  • Line a 17" x 12" jelly roll pan with parchment paper. Break each chocolate bar into 8 equal pieces. You will have 48 pieces total. Arrange in a checkboard pattern in jelly roll pan, alternating white and dark chocolate. Pieces will touch each other like puzzle pieces.
  • Bake chocolate for 5 minutes or just until melted. Remove pan to a wire rack. Swirl chocolates into a marble pattern using a wooden pick. Sprinkle chocolate evenly with toasted pecans and salt.
  • Chill 1 hour or until firm. Break chocolate into pieces. Store in an airtight container in refrigerator for up to one month.
