Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Cream the butter with 1/2 cup of the confectioners' sugar and the vanilla. Mix in the flour, pecans, and salt. Roll about 1 tablespoon or so of dough into balls and place on an ungreased cookie sheet.
- Bake in preheated oven until bottoms are golden, about 15 minutes. Do not allow these cookies to get too brown: it's better to undercook them than to overcook them. While cookies are still hot, roll them in confectioners' sugar. Once they have cooled, roll them in confectioners' sugar once more.

SNOWBALL COOKIES
Steps:
- Heat oven to 325°F.
- Process pecans in food processor until finely chopped. Transfer chopped pecans to bowl; stir in flour and salt. Set aside.
- Cream butter and granulated sugar in medium bowl 2 minutes or until fluffy. Beat in vanilla. Reduce speed to low; add nut mixture. Beat just until dough is combined.
- Working with 1 tablespoon dough, shape dough into 1-inch balls. Place, 1 inch apart, onto ungreased cookie sheets. Bake 16-18 minutes or until very lightly browned. Let cookies cool on cookie sheet 5 minutes; transfer to cooling rack to cool completely.
- Place powdered sugar into shallow bowl; roll cooled cookies in sugar to coat. Store in airtight container. If necessary, re-roll cookies in powdered sugar before serving.

- Melt chocolate in double boiler or microwave. Combine melted chocolate, granulated sugar, vanilla and vegetable oil in a mixer. Add eggs, one at a time, blending well each time. Sift (or stir) together flour and baking powder, add to wet mixture. Mix well. Let stand in refrigerator for a few hours or overnight. Roll dough into small balls (no more than about 1 inch in diameter), and roll in powdered sugar until coated. Bake for 12 minutes in a preheated 350 degree F oven.

- Preheat the oven to 400°. Line sheet pans with parchment paper or silicone baking mats.
- Combine the butter, sugar and vanilla in the bowl of a food processor (or in a mixing bowl with a mixer). Add the flour and salt. Pulse until coarse crumbs forms. Shape the dough into walnut-sized balls, pressing to pack your own snowball cookies.
- Place the dough balls on an ungreased cookie sheet or one lined with a silpat baking mat. Bake until set about 9 minutes. Do not brown. Roll the warm cookies in powdered sugar.

- Combine cream cheese and cookie crumbs. I use my hands for this. Mess, but easier than trying to use a spoon.
- Let mixture cool in the fridge for 30 minutes.
- Roll mixture into bite size balls and freeze for one hour.
- Melt almond bark in a double boiler.
- Dip frozen balls into almond bark and place on wax paper lined cookie sheet. Freeze until bark is hardened.

- In a food processor, mix together the Oreos and cream cheese until they are well-blended. (If you don’t have a food processor, you can crush the Oreos in a large ziplock bag, and then stir/mix in the cream cheese by hand.) Remove, and then shape the dough into little balls about 1″ in diameter. Chill the balls in the refrigerator for at least 1 hour. (Or pop them in the freezer for 15 minutes.)
- Meanwhile, melt the almond bark (or white chocolate chips) in a double boiler or carefully in the microwave. If it is too thick, feel free to stir/melt in a tablespoon or two of shortening to thin it out. Then begin dipping each of the balls by dropping them one-at-a-time into the chocolate, and then carefully removing them with a fork (let the excess chocolate drip through the prongs), and then set them to dry on wax paper or aluminum foil.
- Optional chocolate drizzle: Melt 1 cup of semi-sweet chocolate chips in the microwave or double-boiler. Then spoon mixture into a pastry bag with a small tip, and use it to pipe your favorite lines or pattern on the truffles. OR, spoon the mixture into a small Ziplock bag, seal it, and then cut a tiny hole in one of the bottom corners and use it to pipe your design. OR, simply dip a fork in the chocolate mixture, and swish it back and forth over the truffles for a fine drizzle.
