1 lb ground beef
2 garlic cloves (minced)
2 celery ribs (chopped)
1 medium onion (finely chopped)
1 TBSP. chopped fresh parsley
1 green bell pepper chopped
1 tsp. salt
¼ tsp. ground red pepper
¼ tsp. ground black pepper
1 TBSP Worcestershire sauce
1 cup uncooked rice (white rice or brown rice)
(1) 14.5 oz. can beef broth
¾ cup water

Steps:

  • Cook ground beef,garlic cloves, onion celery,parsley and green pepper over medium heat until meat is no longer pink in large skillet.
  • Stir in salt, red pepper, black pepper and Worcestershire sauce - cook stirring often.
  • Add rice, broth, ¾ cup water, stirring well. Bring to a boil, cover reduce to medium high heat and simmer 25 minutes or until rice tender. Remove from the heat.
  • Salt and pepper to taste. You can also add bay leaves to the mixture.

1 1/2 cups long-grain rice
2 1/2 teaspoons salt
1 tablespoon unsalted butter
3 tablespoons vegetable oil
1 medium red onion, finely chopped
2 cloves garlic, peeled, finely chopped
1/2 pound chicken livers, cleaned and finely chopped
2 scallions, trimmed, white and green parts, cut crosswise into 1/8-inch pieces
2 stalks celery, including leafy greens, finely chopped
1/4 cup finely chopped green bell pepper
1/2 cup finely chopped red bell pepper
2 tablespoons chopped fresh flat-leaf parsley
2 tablespoons chopped fresh or dried oregano
1 jalapeno pepper, seeds and ribs removed, finely chopped
1/2 teaspoon freshly ground black pepper

Steps:

  • Bring 3 cups water to a boil in a saucepan. Stir in rice, 1 teaspoon salt, and butter. Cover, reduce heat to low, and cook 15 to 17 minutes, until water is absorbed. Set aside.
  • Heat oil in a cast-iron skillet over medium-high heat. Add onions and garlic; reduce heat to medium. Cook, stirring occasionally, until brown, about 10 minutes. Add chicken livers; cook, stirring, 5 minutes. Add rice and all remaining ingredients. Cook, tossing and stirring, until hot, 2 to 3 minutes. Serve immediately.

2 cups enriched rice
4 cups chicken stock
4 cloves minced garlic
1 1/2 cups diced white onion
1 cup diced green bell pepper
2 tablespoons vegetable oil
Salt and pepper
1 teaspoon dried thyme
1 bay leaf
1/4 teaspoon cayenne pepper
1/4 pound pork sausage meat
1/4 pound ground beef
1/2 pound chicken giblets
1 bunch green onions, chopped

Steps:

  • In colander, rinse rice several times until water runs clear. Place rice in pot and add chicken stock. Bring to a boil then cover and simmer for 20 minutes. Do not overcook.
  • Saute garlic, onions and bell peppers in vegetable oil until soft for about 15 minutes. Season with salt, pepper, thyme, bay leaf and cayenne and add to rice. Cook sausage and ground beef together in sautepan and add to rice.
  • In separate pot place giblets, cover with water and simmer for 30 minutes with green onions, salt and pepper. Let cool enough to chop into small dice then add to rice mixture. Mix rice well and let simmer on lowest heat for an additional 30 minutes, stirring continuously, until flavors meld.

Believe it or not, the first place I ever had dirty rice was at Popeyes®. They were out of the red beans and rice. I'd never been a huge fan of liver before, but not only have I come to love dirty rice, I've also started to crave it with even more "dirt," i.e. more liver, pork, and aromatic vegetables, hence this redundantly named dish. While the traditional method cooks the rice first before "soiling" it, here we add all the "filth" at the beginning and cook it into the rice.

1 tablespoon vegetable oil
6 ounces boneless pork shoulder, diced
1 yellow onion, diced
½ cup diced celery
½ cup diced green bell pepper
1 tablespoon paprika
2 teaspoons ground cumin
2 teaspoons freshly ground black pepper
½ teaspoon cayenne pepper
½ teaspoon garlic powder
¼ teaspoon dried oregano
¼ teaspoon dried thyme
1 andouille sausage, diced, or to taste
8 ounces chicken livers, minced
2 cups long-grain rice
2 teaspoons kosher salt, or to taste
4 cups chicken broth
1 bay leaf
1 dash Worcestershire sauce
¼ cup sliced green onions
¼ cup chopped Italian parsley

Steps:

  • Heat oil in a high-sided pan over medium-high heat. Cook and stir pork until well browned and fat is rendered, 5 to 7 minutes. Add onion, celery, and bell pepper; saute until translucent, about 5 minutes. Stir in paprika, cumin, black pepper, cayenne, garlic powder, oregano, and thyme. Cook, stirring occasionally, until vegetables continue to soften, about 5 minutes.
  • Reduce heat to medium and add andouille sausage. Cook and stir to release some flavor, 2 to 3 minutes. Stir in chicken livers and rice until well coated. Season with salt, pour in broth, and bring to a simmer over medium-high heat. Add bay leaf and Worcestershire sauce. Cover tightly; reduce heat to medium-low. Cook, without stirring, until most of the liquid is absorbed and rice is starting to get tender, about 25 minutes.
  • Add green onions and parsley; mix well. Continue cooking over low to medium-low heat until rice is tender, about 10 minutes more. Taste for seasoning and remove bay leaf before serving.

1 1/2 cups long-grain white rice, well rinsed and drained (3 3/4 cups cooked)
Kosher salt and freshly ground pepper
1 cup low-sodium chicken broth
2 teaspoons Worcestershire sauce
2 teaspoons soy sauce
1/2 teaspoon paprika
1/2 teaspoon dried oregano
3 tablespoons extra-virgin olive oil
1/2 pound ground beef
1 small onion, finely chopped (1 cup)
1 rib celery, thinly sliced (3/4 cup)
1/2 green bell pepper, seeded and chopped into small pieces (3/4 cup)
2 tablespoons minced garlic (from 4-6 cloves)
1/2 pound chicken liver, patted dry and chopped (1 cup)
Thinly sliced jalapenos and hot sauce, preferably Crystal, for serving

Steps:

  • Bring rice, 1 3/4 cups water, and 1/2 teaspoon salt to a boil in a medium saucepan. Reduce heat to a simmer, cover, and cook until rice is tender, 15 minutes. Uncover, fluff with a fork, and set aside to cool.
  • Combine broth, Worcestershire, soy sauce, paprika, and oregano and set aside. Heat a large skillet (preferably cast-iron) over high. Add 1 tablespoon oil and beef; season with salt. Cook, stirring occasionally to break up and brown meat all over, about 4 minutes. Remove with a slotted spoon to a plate.
  • Return skillet to high heat. Add remaining 2 tablespoons oil, onion, celery, bell pepper, and garlic. Sprinkle with salt. Cook, scraping brown bits from bottom of pan and stirring often so garlic doesn't burn, until just starting to soften, about 3 minutes. Add liver and cook, stirring occasionally, about 4 minutes. Add rice and cook, stirring occasionally until rice is heated through and browned in places, 3 minutes. Return beef to skillet and add broth mixture. Cook until liquid is completely absorbed and rice gets browned and crisp in places, stirring and scraping every 30 seconds, about 5 minutes more. Check seasoning. Serve with sliced jalapenos and hot sauce.

Steps:

  • Heat the oil in a large skillet over high heat. When the oil is hot, add the pork and chicken livers and cook, stirring, until browned. Add the salt, black pepper, and chili powder and stir often, but resist the impulse to stir constantly: You want the meat to stick to the pan and get crusty. Add 1/4 cup of the chicken broth and cook until it has evaporated, allowing the meat mixture to get browned and crusty and stick to the pan once again. Add the onion, celery, garlic, jalapeño, and oregano and cook, stirring, until the vegetables are nicely browned and crusty and beginning to stick to the pan. Add the rice, the remaining 1 1/4 cups broth, the scallions, and parsley. Stir until the liquid is absorbed and the rice is heated through.

Steps:

Steps:

  • In a large skillet, cook sausage for 2-3 minutes; stir in chicken livers. Cook until sausage and chicken livers are no longer pink, 5-7 minutes; drain and set aside. , In the same skillet, melt butter over medium heat. Add onion, celery and green onions. Cook and stir until vegetables are tender, 3-5 minutes. Add parsley and garlic; cook 1 minute longer. Add broth, basil, thyme, salt, pepper and hot pepper sauce. 2 cups chicken broth
1 bay leaf
1½ cup long grain rice
1 tablespoon bacon fat (or vegetable oil)
½ lb ground beef
½ lb ground pork
6 oz. chicken livers (finely chopped)
1 onion (chopped)
1 stalk celery (chopped)
½ green bell pepper (seeded and chopped)
¼ teaspoon dried thyme
2 cloves garlic (minced)
½ teaspoon salt
2 teaspoons Cajun seasoning (blend of paprika, oregano, thyme, chili pepper, garlic, salt and pepper)

Steps:

  • Reserve ½ cup (250 ml) chicken broth and pour the rest into a pot.
  • Add 1½ (350 ml) cup of water and the bay leaf. Put to boil.
  • Add the rice, cover and cook for about 15 minutes over low-medium heat.
  • Heat the bacon fat in a Dutch oven. Add the chopped beef and pork and crumble them with a wooden spoon.
  • Add the onion, celery and green bell pepper. Cook over medium heat, stirring occasionally until the beef is no longer pink and the vegetables are softened.
  • Add the chicken liver and garlic and continue cooking for 5 minutes.
  • Add the salt, Cajun seasoning and thyme.
  • Add the reserved chicken broth and scrape the bottom of the Dutch oven to release all the brown pieces.
  • Simmer one minute.
  • Remove the bay leaf from the rice and add the rice in the Dutch oven. Stir well.
  • Remove from the heat and serve very hot.

1 1/2 cup basmati rice
2 tbsp vegetable oil
8 oz chicken livers (trimmed)
1 lb bulk pork sausage
1 onion (finely chopped)
1 green bell pepper (diced)
1 red bell pepper (diced)
1 tbsp minced garlic
1 tbsp chopped jalapeno chile
1/4 cup worchestershire sauce
2 bay leaves
1 tbsp chopped fresh thyme
2 tsp freshly ground black pepper
1 tsp kosher salt
1/2 tsp paprika
pinch of cayenne pepper
4 green onions (white and green parts, chopped)

Steps:

  • In a large bowl, cover the rice with 2 to 3 inches of cold water. Stir the rice with your hand and drain. Repeat five or six times, until the water runs clear.
  • Transfer the washed rice to a medium heavy bottomed pot. Add enough fresh cold water to cover the rice by about 1 inch. Bring to a boil, reduce to a simmer, cover and cook until the rice is tender, about 20 minutes. Do not overcook.
  • In a large saute pan, heat the oil over medium high heat until shimmering. Add the livers and sausage and cook, stirring occasionally and breaking up the sausage with the back of a spoon, until the meat is no longer pink, 7 to 8 minutes.
  • With a slotted spoon, transfer the livers and sausage to a small bowl. Add the onion, green and red bell peppers, garlic and jalapeno to the pan, and cook over medium high heat until the vegetables are soft, Stirring occasionally until 10 minutes.
  • Meanwhile chop the chicken livers into small dice. Return them to a saute pan, along with the sausage, worcestershire sauce, and the cooked rice. Stir until the rice is fully incorporated. Stir in the bay leaves, thyme, black pepper, salt, paprika, cayenne and green onions. Partially cover the pan, reduce the heat to low and cook until the flavors are well blended, about 15 minutes. S Remove bay leaves, discard and serve immediately.

1 cup finely chopped yellow onion
3/4 cup finely chopped green bell pepper

2 teaspoons minced garlic
1 tablespoon Essence, recipe follows
1 teaspoon salt
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Steps:

  • In a large, heavy saute pan, heat 2 tablespoons of the oil over medium-high heat. Add the chicken livers and sausage and cook, stirring, until the meat is browned, about 6 minutes. Add the remaining tablespoon of oil, the onion, bell pepper, celery, garlic, Essence, salt and pepper, and cook, stirring, for 5 minutes. Add the stock and bay leaves and scrape the bottom of the pan to loosen any browned bits. Bring to a boil, then lower the heat and simmer for 5 minutes. Add the rice and stir thoroughly. Cook until the rice is heated through, about 5 minutes. Remove from the heat and remove the bay leaves. Stir in the parsley and serve.
  • Combine all ingredients thoroughly and store in an airtight jar or container.

1 green bell pepper, chopped

2 teaspoons annatto or achiote powder
¼ teaspoon crushed red pepper
1 teaspoon ground cumin
¼ teaspoon ground cinnamon
1 ⅓ cups uncooked white rice
2 ¾ cups water
1 teaspoon salt
3 roma (plum) tomatoes, chopped
1 ⅓ cups whole corn kernels, blanched
1 cup black beans, cooked and drained
¼ cup toasted pine nuts
freshly ground black pepper
1 red onion, thinly sliced
1 tablespoon fresh lime juice
2 tablespoons chopped fresh cilantro
1 lime, cut into wedges
2 teaspoons annatto powder

Steps:

  • In a heavy saucepan, heat 1 tablespoon of the olive oil over medium heat. Add the garlic and the chopped onions; saute for 5 minutes, stirring frequently. Mix in the bell pepper, chili powder, ground annatto, chili flakes, cumin, and cinnamon. Saute for 2 minutes.
  • Pour the rice into the saucepan and stir to coat. Add the water and 1 teaspoon salt, and bring the rice to a boil over high heat. Cover the pan and turn the heat to low. Simmer the rice for 25 minutes.
  • When the rice is cooked, mix in tomatoes, corn, black beans, and pine nuts. Stir in salt, pepper and lime juice. When the mixture is heated through, spoon it onto plates and top with the sliced red onion and cilantro. Serve a wedge or two of lime with each plate to squeeze over the rice.
