GARLIC MASHED POTATOES
This classic potato dish is always on everyone's favorites list for a Thanksgiving side.

- Peel potatoes and quarter lengthwise; cut crosswise 1/2 inch thick. In a 5-quart saucepan, combine potatoes and garlic cloves; cover with water (about 8 cups) by 1 inch. Add 1 tablespoon salt.
- Bring to a boil; reduce heat, and simmer until potatoes are easily pierced with the tip of a paring knife, 25 to 30 minutes.
- Drain; return garlic and potatoes to pan. Stir over medium-high heat until dry, 1 to 2 minutes. Remove from heat.
- In a small saucepan, bring milk to a boil; pour over potatoes. Add butter and 1 teaspoon of salt. Mash until smooth and creamy.

Steps:
- Bring a large pot of lightly salted water to a boil. Add potatoes, and cook until tender but still firm, about 10 minutes. Drain, and place in a large bowl.
- Combine potatoes with butter, milk, sour cream, salt, and pepper. Mash together until smooth and creamy.

DIRTY POTATOES
Steps:
- Preheat your oven to 400℉.
- Place the potatoes on a baking sheet (lined with parchment for easier cleaning).
- Add the 2 Tablespoons of olive oil to the potatoes and toss with your hands.
- Bake for 40-50 minutes. After about 25 minutes, turn each potato over so that both sides bake to a golden crispy brown.
- While the potatoes are roasting, in a small pan sauté the onions and mushrooms in one teaspoon of olive oil or butter for about 3-4 minutes - just until the mixture starts to turn a slight golden brown.
- Add the pureed or minced olives to the sauté pan of onions and mushrooms. Stir together and warm together over medium heat. Voilà! You have made "dirt"! Set this aside until the potatoes are done.
- When the potatoes are golden brown and crisp on the outside remove from the oven and add to a serving bowl. Add the "dirt" to the potatoes and gently toss together. Serve warm.

- Combine all ingredients, except the corn flakes and 1/4 cup margarine.
- Put in a 12x9-inch pan.
- Crush corn flakes and mix with margarine.
- Sprinkle on top.
- Bake for 45 minutes at 350°F or until bubbly.

Steps:
- Put onion, mushrooms and 2 tablespoons of the butter in 2-quart casserole.
- Microwave on high power, uncovered, 2 minutes.
- Stir in tarragon, wine, salt and pepper.
- Microwave on high power for 5 to 7 minutes, until vegetables are very tender, stirring once.
- Set aside to keep warm.
- Put potatoes and water in 2-quart casserole, cover.
- Microwave on high power for 14 to 16 minutes, until very tender, stirring twice.
- Let stand, covered, 3 minutes.
- Add the rest of the butter (2 tablespoons) to potatoes, mash.
- Add mushroom mixture with its liquor and milk.
- Whip until fluffy.
- Add more milk if too thick.

- 2. Scrub or peel potatoes, cut into bite sized pieces. Place in bowl and drizzle with olive oil. Sprinkle with dry onion soup mix, stir to coat.
