We have a cow, so homemade ice cream is a regular dessert in our household. This creamy mint chocolate chip ice cream recipe has a mild mint flavor. -Farrah McGuire, Springdale, Washington

1-3/4 cups whole milk
3/4 cup sugar
Pinch salt
3 large eggs, room temperature, lightly beaten
1-3/4 cups heavy whipping cream
1 teaspoon vanilla extract
1/4 teaspoon peppermint extract
4 drops green food coloring, optional
1/2 cup miniature semisweet chocolate chips

Steps:

  • In a small saucepan, heat the milk to 175°; stir in the sugar and salt until dissolved. Whisk in a small amount of the hot mixture to the eggs. Return all to the pan, whisking constantly. Cook and stir over low heat until mixture coats the back of a metal spoon and reaches at least 160°, 2-3 minutes. Remove from the heat. , Cool quickly by placing pan in a bowl of ice water; stir for 2 minutes. Stir in whipping cream, extracts and food coloring if desired. Press plastic wrap onto surface of custard. Refrigerate for several hours or overnight., Stir in the chocolate chips. Fill ice cream freezer cylinder two-thirds full; freeze according to the manufacturer's directions. Refrigerate remaining mixture until ready to freeze. Transfer ice cream to a freezer container; freeze for 2-4 hours before serving.

2 cups 2% milk
2 cups heavy cream
1 cup sugar
½ teaspoon salt
1 teaspoon vanilla extract
1 teaspoon peppermint extract
3 drops green food coloring
1 cup miniature semisweet chocolate chips

Steps:

  • In a large bowl, stir together the milk, cream, sugar, salt, vanilla extract and peppermint extract until the sugar has dissolved. Color to your liking with the green food coloring.
  • Pour the mixture into an ice cream maker, and freeze according to the manufacturer's instructions. After about 10 minutes into the freezing, add the chocolate chips. After the ice cream has thickened, about 30 minutes later, spoon into a container, and freeze for 2 hours.

We have news for you. That supermarket mint chip ice cream with the nuclear-green color? It doesn't have any mint leaves in it. It has mint oil or fake mint flavoring, and that nasty color comes from artificial coloring. Real, fresh mint leaves give our Dirty Mint a fresh, cool intensity. Why is it "dirty"? Because we use brown sugar in the base, which gives the ice cream a deep caramel punch and a natural light brown color. It is also "dirty" because we don't strain out the mint. Leaving it in deepens the flavor the longer the ice cream is in the freezer. (Warning: This has been known to convert mint ice cream haters.) Plain Custard Base, made with light brown sugar instead of granulated
1/2 cup mini semisweet chocolate chips (we like Guittard or Ghirardelli)

Steps:

  • Stir mint leaves, dark brown sugar, and salt into base. Mix well.
  • Process in an ice cream maker according to manufacturer's instructions.
  • Transfer to a bowl and fold in chocolate chips.
  • Scrape into an airtight storage container. Freeze for a minimum of 2 hours before serving.

1-2 ounces coconut milk or other milk substitute
1 tablespoon maple syrup*
1 cup baby spinach
3 to 5 drops of food grade peppermint oil or mint extract
2 bananas (sliced and frozen)
3 tablespoons raw cacao nibs or mini chocolate chips.

Steps:

  • Slice the bananas and put in a freezer proof container and freeze for minimum 2 hours.
  • For Blendtec: Add the coconut milk (start with 1 ounce, add more as needed to blend), spinach, honey, and mint. With the TWISTER JAR or FOURSIDE Jar - Use SPEED 4 for 5 to 10 seconds until spinach is blended. Add the frozen banana + 2 tablespoons of raw cacao nibs or chocolate chips. Press the ICE CREAM button. If cavitation occurs (will not with Twister Jar), stop machine and move ingredients toward the blade. Then use SPEED 4 for until well combined (about 20 - 30 seconds). Careful not to over blend. Add 1 tablespoon of raw cacao nibs and PULSE 2 times.
  • For Vitamix: Add the spinach, banana, coconut milk and honey and 2 to 3 drops of peppermint. Use VARIABLE speed #2 for 45 seconds, using the tamper to push the ingredients towards the middle, then increase to VARIABLE speed #7 for 10 seconds.
  • Add the Cacao Nibs and PULSE** 2-3 times.
  • Serve immediately OR for a traditional ice cream texture, place ice cream into a freezer proof container and freeze for approximately 2 hours or until set, but not hard.

2 quarts vanilla ice cream, softened
1 package (15-1/2 ounces) Oreo cookies, crushed
1 carton (8 ounces) frozen whipped topping, thawed
Additional cookies, halved and/or crushed, optional
Fresh mint, optional

Steps:

  • In a large bowl, combine ice cream and cookies. Fold in whipped topping. Pour into an ungreased 13-in. x 9-in. dish. Cover and freeze overnight. Remove from freezer 10 minutes before serving. Garnish with additional cookies and mint if desired.

This is a light, refreshing ice cream and the only fat comes from the chocolate chips. Our whole family loves it! For a truly fat free treat, leave out the chips :) (Cook time is freezing time)

2 cups fat-free half-and-half
1 cup skim milk
1 cup granulated sugar
4 ounces pastuerized egg substitute (Egg Beaters)
1/2-1 teaspoon peppermint extract
3/4-1 cup semi-sweet chocolate chips or 3/4-1 cup miniature semisweet chocolate chips

Steps:

  • Stir together egg substitute, sugar, and mint extract and combine well.
  • Add half-n-half and milk and stir until incorporated.
  • Chill for at least 30 minutes.
  • Pour chilled liquid into your ice cream maker.
  • Five minutes before freezing is complete, add the chocolate chips.
  • Enjoy!
  • Note: Be careful of the mint extract; some are stronger than others (start at smallest amount and taste before freezing).

  • Combine milk, cream and sugar in a saucepan and heat on medium-high until the liquid is simmering.
  • Slowly add 1 cup of the hot milk to the yolks all the while whisking. Once combine whisk back into the hot milk and continue heating until the custard base thickens. It take about 3-5 minutes and you'll know it's ready when the milk coats the back of a spoon. Don't allow the custard base to boil.
  • Remove custard base from heat and allow to cool slightly before adding to a food processor along with mint and process briefly. About 6 pulses will be sufficient.

  • Place cashews in a heat resistant bowl. Bring 3 cups of water to a boil and pour it over the cashews. Allow to soak for two hours before moving to step two.
  • Next, prepare your ice cream base by draining the cashews and placing them in a blender. Add the coconut milk, maple syrup, peppermint extract, vanilla extract and optional liquid chlorophyll to the container. If you're using a high-speed blender, blend on high for about 2 minutes. If you're using a regular blender, blend for 3-4 minutes to make sure it is smooth.
  • The mixture will become warm during the blending process, so when you're finished place it in the fridge to chill for about 30-45 minutes. (I leave mine in the blender container.)
  • Pour the mixture into your ice cream maker and churn according to your manufacturer's instructions. Add the chocolate chips during the last five minutes of churning.
