This is a quick, easy and delicious recipe that pairs well with lightly seasoned, oven roasted potatoes and steamed broccoli or a salad.

cooking spray
1 pound ground beef
½ cup chopped onion
½ cup rolled oats
1 cup shredded Cheddar cheese
¾ cup milk
1 egg
1 teaspoon salt
⅔ cup ketchup
½ cup brown sugar
1 ½ teaspoons dry mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish with cooking spray.
  • Stir ground beef, onion, oats, Cheddar cheese, milk, egg, and salt together in a bowl; mix well. Divide meat mixture into 8 equal portions and form each into a loaf shape. Place loaves in prepared baking dish.
  • Stir ketchup, brown sugar, and mustard together in a bowl until smooth. Spread ketchup mixture over meat loaves.
  • Bake in the preheated oven until no longer pink in the center, about 40 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

Delicious Beef & Pork Meatloaf with a Chili Flavoured Twist. Inspired by recipes by Nita Holleman & Kittencal

Number Of Ingredients 13

1 1/2 lbs ground beef
1/2 lb ground pork
1 onion, diced
1/2 cup chili sauce
1/2 cup corn flake crumbs
2 eggs, slightly beaten
1/4 cup milk
1 tablespoon fresh minced garlic (or use 1-1/2 teaspoons garlic powder)
3 tablespoons Worcestershire sauce
1 tablespoon garlic plus seasoning
4 tablespoons apple cider vinegar
2 -4 tablespoons brown sugar, packed firm (to taste)
1/2 cup ketchup

Steps:

  • Set oven to 350°F.
  • Prepare a 9 x 5-inch baking pan and a baking sheet covered with foil to place underneath to catch any drippings.
  • In small mixing bowl add the eggs, milk, garlic, Worcestershire sauce & Garlic Plus seasoning, stirring constantly until blended well.
  • Using a large mixing bowl, dump in the mixed ingredients from the small bowl and add the diced onion, corn flake crumbs and chili sauce, mixing well.
  • The apple cider vinegar, brown sugar and ketchup are for the sauce. DON'T mix them in with meatloaf.
  • Last, using clean hands mix the beef and pork into the bowl, continuing until all ingredients are well combined.
  • Pack the mixture into prepared pan.
  • Place the pan on a foil-lined baking sheet to catch any spills.
  • Bake for 1 hour.
  • While baking, mix together the apple cider vinegar, brown sugar and ketchup for the sauce.
  • After the 1 hour of baking, remove the meat loaf (at this point you can carefully drain off some of the fat if desired) and spread the sauce over the top.
  • Place back in the oven and bake for another 20-30 minutes, or until the meat loaf is pulling away from the sides of the pan. (Meatloaf should be 140°F at centre.).
  • Enjoy!

I just kind of made up this meatloaf from combinations of several recipes. It is so good. Even my picky son said it was good.

1 lb extra lean ground beef
1 egg
1/4 cup breadcrumbs
1 teaspoon garlic powder
1 teaspoon onion flakes
1 teaspoon Worcestershire sauce
2 tablespoons ketchup
3 slices processed cheese
salt and pepper

Steps:

  • Mix together all ingredients except cheese slices.
  • Bake at 375% for one hour.
  • For last 5 minutes, top with the cheese slices to melt.
  • Let stand for a couple of minutes for easy slicing.

I Have never been a fan of meatloaf, until I found this recipe. The flavor is so good, and it is moist w/o any canned soup to do it, just the veggies!

4 slices white bread, torn into pieces
2 1/2 lbs lean ground beef
1 medium onion, peeled and quartered
2 garlic cloves
2 celery ribs
2 carrots, peeled and cut into 2 inch chunks
1/2 cup fresh parsley leaves (fresh)
1 large egg
1/2 cup ketchup
2 teaspoons dry mustard
1 tablespoon salt
2 teaspoons fresh ground pepper
1/2 cup ketchup
4 teaspoons dry mustard
4 tablespoons brown sugar

Steps:

  • Heat oven to 400°.
  • Place bread in food processor and pulse to make fine bread crumbs, add to meat and mix.
  • Place onion, garlic, celery, carrots, and parsley into food processor and pulse till finely chopped.
  • Add to meat mixture.
  • Add ketchup, mustard, salt, and pepper.
  • Mix well w/ your hands and shape into approx 8 small loaves and place on an oven broiler pan.
  • Mix sauce ingredients and spread over tops.
  • Bake approx 35-45 minutes or till done when center tested.

1 (120 g) package Stove Top stuffing mix or 1 (120 g) package dry bread cubes, if you prefer
1 cup water
1 teaspoon italian seasoning
1/2 cup pasta sauce
1/2 cup mozzarella cheese, shredded
2 teaspoons chili powder
1/2 cup salsa
1/2 cup monterey jack cheese, shredded
1 teaspoon dried oregano
1/2 cup roasted red pepper
1/2 cup feta cheese, crumbled
1 teaspoon garlic powder
1/2 cup barbecue sauce
1/2 cup cheddar cheese

Steps:

  • Preheat oven to 375 degrees.
  • Mix meat, stuffing mix, or bread cubes,water, and seasoning (choose one: italian seasoning, OR chili powder, OR oregano OR garlic powder) until well blended.
  • Press evenly into 12 greased muffin tins.
  • Make a small indentation in the middle of each with the back of a spoon.
  • Fill the indentation with your choice of filling. (Choose one: pasta sauce OR salsa OR roasted red peppers OR BBQ sauce following the version of your choice.).
  • Bake for 30 minutes or until loaves are cooked through. Top with the cheese specified in the recipe of your choice and bake 5 minutes or until cheese is melted.
  • Let stand 10 minutes before removing from baking pan.
  • For OAMC: Remove from baking pan and let cool. Flash freeze on a cookie sheet until frim. Transfer to a labeled ziploc bag. To serve: Defrost overnight, then reheat in oven or microwave until heated through.
