DINO KALE SALAD



Dino Kale Salad image

I know I should eat kale but until now couldn't find a recipe I liked. My husband doesn't like avocados. But we both love this salad. I can't get enough of it. And you can make it as spicey as you like. A gal at Whole Foods was doing a demo on kale and I asked her for the recipe. Be sure to use the Dino Kale as it isn't bitter.

Number Of Ingredients 5

1 bunch(es) dino kale
1 - ripe avocado
- juice of 1 lemon
- cayenne pepper to taste
- salt and pepperto taste

Steps:

  • Rinse and dry kale. Chop kale very finely.
  • Add avocado, lemon juice and salt, pepper and cayenne to taste.
  • With your hand squish everything together, taste, adjust seasonings and serve.

Number Of Ingredients 8

1 bunch of Dinosaur Kale (tuscan kale), center ribs removed, sliced (or torn) very thinly
Handfuls of croutons
Dried cranberries
1 handful basil- shredded or torn
Shredded parmesan cheese
Olive oil
Balsamic Vinegar
Salt and pepper

Steps:

  • Combine all salad ingredients. Toss with olive oil, vinegar, salt and pepper to taste.
