1 cup whole milk
½ cup warm water
¼ cup unsalted butter, melted
¼ cup sugar
2 ¼ teaspoons active dry yeast, 1 packet
4 cups all-purpose flour, plus more for dusting
1 ½ teaspoons kosher salt
2 large eggs, room temperature
neutral oil, for greasing
sea salt, for sprinkling

Steps:

  • In a liquid measuring cup or small bowl, combine the warm milk, warm water, melted butter, and sugar.
  • Sprinkle the yeast evenly over the wet ingredients, stir to combine, and let stand for 5 minutes, until foamy
  • In a large bowl, combine the flour and salt, and stir to combine. Beat 1 egg, then add to the bloomed yeast mixture. Pour the wet ingredients into the flour and use a knife to stir until the mixture just comes together and forms a dough. Turn the dough out onto a lightly floured surface and knead for 5-10 minutes, or until the dough becomes smooth. Add more flour as needed to keep the dough from sticking. To test if it's done, tear off a small piece of dough and stretch into a thin layer. If the dough doesn't rip, it's ready. Or, press a finger into the dough to see if it bounces back.
  • Lightly grease a large glass bowl with oil. Add the dough, cover with plastic wrap, and let rest for 1 hour, or until doubled in size.
  • Punch down the dough, then turn out onto a floured surface. Knead for a few more minutes, just until the dough is smooth, about 2 minutes.
  • Divide the dough into 16 equal balls, roughly the size of tangerines.
  • Knead the balls, gathering the edges of the dough toward the center to make a taut, round ball with a smooth top.
  • Place the rolls on a parchment paper-lined baking sheet. Cover with plastic wrap and let rise for 30 minutes.
  • Preheat the oven to 375˚F (190˚C).
  • Beat the remaining egg in a small bowl. Uncover the rolls and brush with the egg wash. Lightly sprinkle the rolls with sea salt.
  • Bake for 25-30 minutes, or until the rolls have lightly browned and doubled in size.

Soft and Fluffy Homemade Dinner Rolls. They are buttery, flakey and perfectly golden brown on the outside. They are the perfect roll to serve alongside your holiday meals, soups or favorite dinners!

1 cup milk (I used 2%) heated to 115 F
1 tbsp Instant yeast
2 tbsp honey
1 large egg
1/4 cup unsalted butter, softened
1 tsp salt
3-3 1/2 cups all purpose flour
1 egg whisked plus 1 tablespoon water for optional egg wash

Steps:

  • Add the milk and yeast to a stand mixer and stir to combine. Let sit for 5 minutes.
  • Add the honey, egg, butter, salt and 1 cup of the flour. Beat until combined then scrape the sides of the bowl.
  • Add the remaining flour and beat for 2-3 minutes or until the dough is combined and forms a ball. If the dough still looks sticky and is not forming into a ball add more flour. (I start at 3 cups and work my way up to 3 1/2 if needed)
  • Working with floured hands grab ball of dough and transfer to a large bowl sprayed with nonstick cooking spray or oil. Rotate the ball of dough to coat in the oil. Cover with a towel and place in a warm area to double in size about 90 minutes.
  • Grease a 9 x 13 pan with nonstick cooking spray, set aside.
  • Once dough has doubled punch it down and roll into 15 balls.
  • Place the dough balls in the prepared baking pan and cover to rise for another hour.
  • When your ready to bake preheat oven to 350 degrees.
  • Make an egg wash by whisking the egg and water in a small bowl. Brush on top of each roll.
  • Place in the oven and bake for 20-25 minutes or until golden brown. If the tops are getting too brown simply cover with foil or lower the oven rack to the bottom.
  • Serve the rolls warm with melted butter brushed on top if desired!

1/4 cup warm water (110°F)
2 Tablespoons sugar
2 cups all-purpose flour, plus more as needed
1/2 teaspoon salt
1/2 cup whole milk
2 Tablespoons unsalted butter, melted, plus more for brushing
Large-flake sea salt (optional)

Steps:

  • In the bowl of a stand mixer fitted with the dough hook, combine the warm water, yeast and sugar. Let the mixture stand for 5 minutes.
  • Add 1 cup of the flour, as well as the salt, whole milk and melted butter and beat for 2 minutes.
  • Add an additional 1 cup of flour and beat on high speed for 2 minutes until the dough begins to form a ball. (If the dough is still very sticky, add an additional 1/4 cup flour as needed.)
  • Lightly flour your work surface. Scrape the dough onto your work surface, and using the heel of your hand, knead it for 2 minutes then place the dough in a greased bowl and cover the bowl with a towel. Set the bowl in a dark, warm place for 30 minutes until it has doubled in size.
  • Grease an 8-inch round pan with cooking spray or butter.
  • Divide the dough into 12 pieces then roll each piece into a ball and arrange the balls in the prepared pan. Cover the pan with a towel then return it to a dark, warm place for 30 minutes.
  • Preheat the oven to 375°F. Uncover the rolls then bake them for 20 to 25 minutes until they are golden brown and cooked through.
  • Remove the rolls from the oven, brush them with additional melted butter and immediately sprinkle them with the sea salt (optional). Serve them warm.
  • If you want to prepare the rolls in advance, follow the directions up until you place the (unbaked) rolls in the baking pan then tightly cover the pan with plastic wrap. When ready to serve, remove the rolls from the freezer and place them in the fridge overnight then bring them to room temp to rise before baking them as directed.

1/4 cup warm water (115 degrees)
2 packets (1/4 ounce each) active dry yeast
1 1/2 cups warm whole milk (115 degrees)
1/2 cup (1 stick) unsalted butter, melted, plus more for bowl and pans
1/4 cup sugar
2 1/4 teaspoons salt
3 large eggs
6 to 6 1/2 cups all-purpose flour (spooned and leveled), plus more for work surface

Steps:

  • Place water in a small bowl; sprinkle with yeast, and let stand until foamy, about 5 minutes. In a large bowl, whisk together milk, butter, sugar, salt, and 2 eggs. Whisk in yeast mixture.
  • Using a wooden spoon, stir in 6 cups flour, 1 cup at a time, until you have a soft, shaggy dough (if necessary, add up to 1/2 cup more flour). Turn dough out onto a floured work surface; knead until smooth and elastic, 5 to 10 minutes. Butter the inside of a large bowl; place dough in bowl, turning to coat. Irresistibly Soft Dinner Rolls are easy to make with just 6 ingredients. There's nothing like fluffy warm homemade dinner rolls. These are holiday-worthy bread rolls!

1 1/2 cup whole milk (warmed to 110F)
4 Tbsp unsalted butter (melted)
1 Tbsp active dry yeast
1/3 cup granulated sugar
1 1/4 tsp salt ((we used fine sea salt))
4 cups all-purpose flour
1 Tbsp unsalted butter (melted to brush the tops of dinner rolls)
1/2 tsp kosher salt (to sprinkle finished rolls)

Steps:

  • In the bowl of your mixer, whisk together warm milk (about 110F) and 1 Tbsp sugar. Sprinkle the top with 1 Tbsp yeast and let sit 1 minute. Whisk together and let it sit for about 5 minutes until yeast looks foamy. Add 4 Tbsp melted butter, remaining sugar and salt.
  • Add flour half a cup at a time until the dough whisking to incorporate. Once the dough gets too thick, switch to the dough hook attachment and mix on speed 2 (you can also continue mixing by hand with a stiff spatula). Add about 4 cups of flour, adding the last 1 to 3 Tbsp of flour only if needed. The dough should feel sticky and tacky but should not stick to clean/dry finger tips.
  • Knead the dough with the dough hook in a stand mixer for 2 minutes or knead by hand (10 min), then place dough in an oiled bowl. Cover it with plastic wrap and let it rise about 2 hours in a warm place or until doubled in size.
  • Once the dough rises, turn it out onto a lightly floured surface and cut it into 15-24 even pieces depending on the shape of your baking dish. Roll each piece of dough into a ball and place them onto an oiled 9x13 casserole dish or baking sheet.
  • Cover the dinner rolls with plastic wrap and let them rise another 30-60 minutes in a warm place or until puffed (do not over-proof). Bake at 375F for about 23-25 minutes or until the tops are golden brown.
  • Immediately brush tops of dinner rolls with melted butter and set aside to cool to room temperature before serving.

1 cup (240ml) whole milk, warmed to about 110°F
2 and 1/4 teaspoons Platinum Yeast from Red Star instant yeast (1 standard packet)
2 Tablespoons granulated sugar, divided
1 large egg
1/4 cup (60g) unsalted butter, softened to room temperature and cut into 4 pieces
1 teaspoon salt
3 cups (390g) all-purpose flour or bread flour*
optional topping: 2 Tablespoons melted unsalted butter mixed with 1 Tablespoon honey

Steps:

  • Whisk the warm milk, yeast, and 1 Tablespoon of sugar together in the bowl of your stand mixer. Cover and allow to sit for 5 minutes. *If you do not own a stand mixer, you can do this in a large mixing bowl and in the next step, mix the dough together with a large wooden spoon/rubber spatula. It will take a bit of arm muscle. A hand mixer works, but the sticky dough repeatedly gets stuck in the beaters. Mixing by hand with a wooden spoon or rubber spatula is a better choice.*
  • Add the remaining sugar, egg, butter, salt, and 1 cup flour. With a dough hook or paddle attachment, mix/beat on low speed for 30 seconds, scrape down the sides of the bowl with a rubber spatula, then add the remaining flour. Beat on medium speed until the dough comes together and pulls away from the sides of the bowl, about 2 minutes. If the dough seems too wet to a point where kneading (next step) would be impossible, beat in more flour 1 Tablespoon at a time until you have a workable dough, similar to the photos and video above. Dough should be soft and a little sticky, but still manageable to knead with lightly floured hands.
  • Keep the dough in the mixer and beat for an additional 3 full minutes or knead by hand on a lightly floured surface for 3 full minutes. (See video tutorial above if you need a visual of kneading dough by hand.)
  • Lightly grease a large bowl with oil or nonstick spray. Place the dough in the bowl, turning it to coat all sides in the oil. Cover the bowl with aluminum foil, plastic wrap, or a clean kitchen towel. Allow the dough to rise in a relatively warm environment for 1-2 hours or until double in size. (I always let it rise on the counter. Takes about 2 hours. For a tiny reduction in rise time, see my answer to Where Should Dough Rise? in my Baking with Yeast Guide.)
  • Grease a 9×13 inch baking pan or two 9-inch square or round baking pans. You can also bake the rolls in a cast iron skillet or on a lined baking sheet.*
  • When the dough is ready, punch it down to release the air. Divide the dough into 14-16 equal pieces. (Just eyeball it- doesn't need to be perfect!) Shape each piece into a smooth ball. I do this entirely in my hands and you can watch in the video tutorial above. Arrange in prepared baking pan.
  • Cover shaped rolls with aluminum foil, plastic wrap, or a clean kitchen towel. Allow to rise until puffy, about 1 hour.
  • Adjust oven rack to a lower position and preheat oven to 350°F (177°C). (It's best to bake the rolls towards the bottom of the oven so the tops don't burn.)
  • Bake for 20-25 minutes or until golden brown on top, rotating the pan halfway through. If you notice the tops browning too quickly, loosely tent the pan with aluminum foil. Remove from the oven, brush with optional honey butter topping, and allow rolls to cool for a few minutes before serving.
  • Cover leftover rolls tightly and store at room temperature for 2-3 days or in the refrigerator for up to 1 week.

4 cups (512g) all-purpose flour, (or more if needed)
2 envelopes (about 2 tablespoons) rapid rise or instant yeast
1/4 cup (50g) granulated sugar
1 large egg, (room temperature)
1 teaspoon salt
1 1/2 cups (367g) whole milk
2 tablespoons salted butter, (melted)
1 teaspoon kosher salt, (optional)

Steps:

  • Combine 3 cups flour, undissolved yeast, sugar, egg, and salt in a large bowl or in the bowl of your stand mixer fitted with dough hook.
  • Heat milk until very warm (110°F to 120°F).
  • Add warm milk to flour mixture. Knead 2 minutes at medium speed, scraping bowl occasionally if needed. Add 1/2 cup flour; knead 2 more minutes.
  • Add remaining 1/2 cup flour. The dough should be pulling away from the sides of the bowl and very soft. (If the dough seems too wet you may need more flour. Add in 1/4 cup increments until the dough has pulled away from the sides of the bowl while kneading.)
  • Cover with a clean towel and let REST 30 MINUTES.
  • Remove towel and punch down dough.
  • Divide dough into equal pieces and shape into balls. Place in greased 9x13 inch pan. Cover with plastic wrap and REST in a warm place - over 70°, preferably 75° - until doubled in size, about 30 minutes. (I had 6 left over and added them to a greased 7-inch pie dish and baked as directed.)
  • Bake in preheated 375°F oven for 12-17 minutes or until golden brown.
  • Brush with melted butter while warm.
  • Sprinkle kosher salt on top if desired.

2 tablespoons instant dry yeast
1/4 cup white granulated sugar
2 teaspoons salt
6 tablespoons salted butter (softened)
2 large eggs
6 cups all-purpose flour
1 tablespoon melted butter

Steps:

  • In the bowl of a stand mixer, combine warm milk, yeast, sugar, salt, butter, and eggs.
  • Add in 5 1/2 cups of flour. Using a dough hook, turn the mixer on to a low speed. Once the flour starts to incorporate into the dough, increase the speed to a medium range. Slowly add the remaining 1/2 cup of flour until the dough pulls away from the sides of the bowl. The dough mixture should be slightly sticky and soft. Add more or less flour until the dough reaches the desired consistency. The amount of flour you add in bread making is always an approximation and you should go by feel.
  • Transfer the dough to a lightly greased mixing bowl. Cover with a towel and let rise 90 minutes.
  • Lightly grease a baking sheet. Punch down the dough and form into 24 rolls. Place on the greased baking sheet in six rows of four. Cover and let rise 1 hour.
  • Preheat oven to 375 degrees. Bake the rolls for 12 to 14 minutes, until lightly browned.
  • Remove rolls from oven and brush with melted butter. Serve the rolls warm, or to cool, let rest on the pan for 15 minutes before transferring to a wire cooling rack. Once cooled completely, store in a plastic bag.

Homemade Dinner Rolls image

Bake your own yeasty, buttery and golden Homemade Dinner Rolls with Food Network's easy recipe.

1 (1/4-ounce) package dry active yeast
1 cup warm water, about 110 degrees F
1/2 cup sugar
1 egg, beaten
2 teaspoons salt
1 cup milk, scalded but cooled to warm
4 ounces melted butter, plus 2 ounces
5 cups flour, plus more, as needed
6-cup, 3-inch muffin tin pan

Steps:

  • In a standing mixing bowl with dough hook, dissolve yeast in warm water. Let sit until lightly foamy, then stir in sugar and add egg, salt, warm milk, and 4 ounces of butter. Slowly add 5 cups flour, adding more as needed to make an elastic dough. Mix well, then roll out to floured surface and knead dough for about 5 minutes.
  • Place dough in buttered bowl, cover with towel, and set in a warm place to rise until double in bulk, about 1 hour.
  • Lightly oil the muffin pan. Punch down dough and form dough into 1-inch balls. Place 3 balls in each muffin tin. Fill muffin pan, cover with towel, and allow to rise an additional 1/2 hour.
  • Preheat oven to 425 degrees F.
  • Brush with remaining melted butter. Bake in preheated oven for 10 to 15 minutes, until golden brown.

1 1/4 cups warm water (110° to 115°F)
1/3 cup plus 1 tablespoon granulated sugar
1 (1/4-ounce) packet rapid-rise yeast
4 cups Gluten-Free Bread Flour Mix (page 158)
1 tablespoon xanthan gum
1 1/2 teaspoons salt
1 cup mashed potatoes
1/3 cup dairy-free, soy-free vegetable shortening, melted
1/3 cup Better Than Milk rice milk powder or other vegan milk powder
1 1/2 teaspoons Ener-G egg replacer mixed with 2 tablespoons rice milk, at room temperature
Baking spray, for coating tops of rolls (see Tip, opposite)

Steps:

  • Combine the warm water, sugar, and yeast in the bowl of a stand mixer fitted with the paddle attachment (not bread hook). Use a wooden spoon or whisk to mix well. Make sure the yeast is completely dissolved.
  • Whisk together the flour mix, xanthan gum, and salt. Set aside.
  • Add the mashed potatoes, melted shortening, and rice milk powder to the yeast mixture. Beat on medium speed for about 1 minute. Add the egg replacer and mix on medium speed until smooth, 1 minute more. Add the flour mixture to the yeast mixture in two batches, and mix well on medium speed, until the dough is coming together, about 1 minute.
  • Grease two 9-inch round cake pans liberally with vegetable shortening.
  • Using a rubber spatula, turn out the dough onto a well-floured board. Sprinkle the top of the dough with flour mix, pat into a disk, and cut in half. Roll the dough into two 12-inch logs. Cut one log into 12 pieces. Roll the pieces vigorously between your hands into 12 smooth balls. Place the balls in the first pan. It's fine if they're touching. Repeat with the remaining log. Spray the rolls with baking spray. Cover the pans with clean dish towels or cloth napkins. Put a pan of very hot water in the bottom of the oven. Place the rolls in the oven and let rise for 1 hour.
  • Remove all of the pans from the oven and preheat the oven to 400°F.
  • Once the oven is preheated, spray the rolls again with baking spray and bake for about 25 minutes, or until golden on top. Remove from the oven. You may spray them once more with baking spray to keep them soft, or leave as is for a slightly harder roll. Serve warm or at room temperature. To freeze, let them cool completely, then store in a gallon-size freezer bag.

  • In the bowl of a stand mixer add the water, yeast, and a pinch of sugar. Let sit for 10 minutes. You want the yeast to get bubbly and foamy, this signifies the yeast is active and working.
  • Once the yeast is bubbling add the sugar, salt, and 3 cups of flour. Using the paddle attachment, mix until combined. With mixing speed on low add the eggs one at a time. Add shortening and mix until combined. Switch to the dough hook, add remaining 4 cups of flour. Mix on medium low speed for 8 minutes. The dough should pull away from the sides of the bowl. Dough will be tacky but not overly sticky. If the dough is sticky add additional flour 1 tablespoon at a time until the dough reaches the correct consistency.
  • Place the dough in a lightly oiled bowl then flip it over so that the top and bottom of the dough are lightly oiled. Cover and let rise for 1 hour or until doubled in size.
  • When dough has nearly doubled in size punch down, and shape into 24 balls. Place the dough balls on a lightly greased baking sheet. Cover the baking sheet with plastic wrap and let the dough balls rise for 30-40 minutes or until puffy and almost double in size.
