CLASSIC BEEF STROGANOFF IN A SLOW COOKER
This classic beef stroganoff recipe uses ingredients commonly kept on hand for an easy and delicious family meal.

- Cut steak diagonally across the grain into 1/4-inch thick slices. Place steak, mushrooms, onion, mustard, parsley, garlic, salt, dill, and black pepper into a 3-quart slow cooker; stir well.
- Place flour in a small bowl; gradually add broth, stirring with a whisk until blended. Add to slow cooker; stir well. Cover with the lid; cook on High for 1 hour. Reduce heat to Low and cook until steak is tender, 7 to 8 hours.
- Turn slow cooker off and remove lid. Allow stroganoff to stand for 10 minutes. Stir in sour cream. Serve over noodles.

VENSION STROGANOFF WITH SPATZLE
My version of venison stroganoff relies good, fresh mushrooms, shallots, a splash of Madeira wine, and both fresh dill and a rarer ingredient, dill pollen, which you can omit if you can't find it. As for the dairy, butter is the fat and sour cream is the sauce. Can you loosen it with some heavy cream? You bet. Sometimes I do, sometimes I don't. I did not in the photo.

- I make the spaetzle first. These can be made up to a day ahead and stored in the fridge. Mix all the ingredients except the heavy cream together in a bowl. Now thin the sticky dough into a batter that is a bit like really thick pancake batter with the heavy cream. I use a Spaetzle Maker to make my spaetzle, but you can either use a colander with wide holes or just flick the dough/batter off a cutting board with a knife.
- Get a kettle of salty water going over high heat. Once it boils, make the spaetzle. Boil them hard until they float, then 1 minute more. Skim off with a slotted spoon or a spider skimmer. Move them to a baking sheet. When they are all made, toss them with a little oil so they don't stick together.
- To make the stroganoff, salt the venison well and let it sit on the cutting board for 20 minutes or so. I do this while I make the spaetzle. Get 2 tablespoons butter in a large saute pan good and hot over medium-high heat. Pat the venison dry and sear all sides well in the butter. Cook it until it's rare to medium-rare. If you don't know how to determine this, use the finger test for doneness. When the meat is ready. move it to a cutting board and let it rest.
- Add the mushrooms to the pan and turn the heat to high. Soon they will give up their water, and when they do, use a wooden spoon to scrape up any browned bits from the bottom of the pan. When most of the water has boiled away, add the rest of the butter to the pan along with the shallots and saute everything for 3 to 5 minutes, stirring often. Add the garlic, toss and cook over high heat for another 3 minutes or so. Sprinkle some salt over everything.
- Add the Madeira and toss to combine. Let this boil down furiously. While it is doing so, grate some nutmeg over the mixture. When the Madeira is mostly gone, turn the heat down to low. Slice the venison thinly and return it and any juices that have collected on the cutting board to the pan. Stir to combine and add most of the chopped fresh dill.
- Stir in the sour cream and turn off the heat. Stir to combine and let it heat through from the heat in the pan. Do not let this boil, or even simmer, or Very Bad Things will happen. Think nasty curdled crap. To serve, spread out over the spaetzle and top with any remaining dill and the dill pollen, if using.

- Cut meat into 1/4" strips and brown in butter.
- In a separate pan, saute mushrooms and add to meat. In the separate pan, saute onions and add to meat mixture. Add beef stock.
- Cover and simmer 1 hour.
- At about 40 min., begin to cook noodles.
- Mix corn starch and water in small container and add, stirring rapidly until sauce is thickened.
- Stir in sour cream and dill weed.
- Serve over Paprika Noodles: Drain noodles and p ut in bowl.
- Toss gently with chicken stock base, butter, and paprika.
- Note: Chicken stock base or granular boullion may be very salty.
- Let diners salt and pepper to their own tastes.

DILLED SALMON STROGANOFF

- Heat butter in a large non-stick frying pan set over medium heat. Add salmon and cook until underside is light brown, about 2 minute Turn salmon and continue cooking until browned 2 more minutes. Reduce heat to low, cover continue to cook for 6 more minutes. Remove to plate and cover to keep warm.
- Meanwhile, slice zucchini lengthwise into four strips, then thinly slice and add to pan. Stir constantly over medium high heat until slightly softened, about one minute. Stir in broth. Bring to a boil. Cook, uncovered and stirring often until reduced by half, about 2 minutes.
- Stir in sour cream, mustard and dill weed. Gently stir for 2 minutes. Finely slice onions, and stir into sauce.
- Add salmon and cook until just heated through, about one minute. Season with salt and pepper.

BEEF STROGANOFF

- Cube the beef into bite sized pieces. Carefully dry the pieces of meat and set aside.
- Mince garlic and set aside.
- Chop the onion and set aside.
- Chop the mushrooms and set aside.
- Dice the dill pickles and set aside.
- Generously season the beef with salt and pepper. Place a heavy bottomed saute pan over medium high heat on your stove top. Turn down the heat to medium, add the oil and let it get hot. Add the beef and cook until browned.
- Add the onion, mushroom and pickle to the pan and cook until vegetables are soft and any liquid has cooked off.
- Add the whipping cream and cook until the cream thickens to a nice consistency. It will still be saucy but will stick to the meat and vegetables and will turn a deeper colour when it is done.
- Serve over egg noodles, rice or gluten-free noodles.

- Put a large pan of salted water on to boil. While the water heats up, peel and finely dice the onion. Heat 1 tablespoon of oil in the frying pan. Add the onion and gently fry for 10 minutes, stirring now and then to stop it catching.
- Add a splash of water if it looks like it might. Wipe both types of mushrooms clean. Slice the smaller ones. Cut the the portobellos into quarter's, then slice. Wash half the packs of dill and parsley and shake or pat dry with kitchen paper or a clean cloth.
- Roughly chop both. Wash the salad leaves. Once the water comes to the boil, add the rice. It will take about 20 minutes to cook (NB brown rice still has a little more bite to it than white once cooked).
- Once the onion has fried for 10 minutes, increase the heat a little. Add the mushrooms and a splash more oil. Fry, stirring, for 3 minutes. Add both paprikas and fry for 1-2 minutes, until the mushrooms are softened. Season with salt and pepper.
