With six kids at home, I try to grow as much of our own food as possible, and our big potato patch means easy and affordable meals for much of the year. For this fresh and tasty side dish, I season red potatoes with homegrown dill. -Jennifer Ferris, Bronson, Michigan

2 pounds baby red potatoes (about 24)
1/4 cup butter, melted
2 tablespoons snipped fresh dill
1 tablespoon lemon juice
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Place potatoes in a Dutch oven; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 15-20 minutes., Drain; return to pan. Mix remaining ingredients; drizzle over potatoes and toss to coat.

12 small red potatoes, about 1 pound
Salt and freshly ground white pepper to taste
1 tablespoon butter
1/4 cup finely chopped dill

Steps:

  • For an attractive touch, use a paring knife to remove a thin band of skin around each potato. Leave the rest of the skin intact.
  • Wash the potatoes and place them in a saucepan with water to cover. Add salt, bring to a boil and simmer about 20 minutes or until tender.
  • Drain the potatoes and add pepper, butter and parsley or dill. Toss well and serve hot.

1 tablespoon cornstarch
1 teaspoon salt
1/4 teaspoon ground nutmeg
1 pinch paprika
5 medium potatoes
3 sliced green onions
1/2 cup chopped fresh dill
1/4 cup grated parmesan cheese
250 ml whipping cream
1/2 cup milk
1/3 cup grated swiss cheese

Steps:

  • Combine whipping cream, milk and swiss cheese, set aside.
  • Mix together cornstarch, salt & spices.
  • Peel potatoes, slice and coat with cornstarch, salt & spices.
  • Add parmesan cheese and onions, toss well to coat.
  • Place potatoes in greased casserole dish.
  • Pour liquid carefully over potatoes.
  • Cover and bake @325F for 45 minutes.
  • Uncover and bake another 30 minutes.

1 1/2 lbs salmon fillets
4 -6 medium potatoes, pared
2 medium onions, peeled
3 tablespoons dill
1 teaspoon salt
1/4 teaspoon fresh ground black pepper
4 eggs
2 cups milk
2 tablespoons butter
1/2 cup breadcrumbs
chopped parsley (to garnish)

Steps:

  • Preheat oven to 350°F.
  • Slice fillets into bite size chunks, and set aside.
  • Thinly slice potatoes and onions.
  • Cook potatoes in boiling salt water approx 10 minutes and drain.
  • Grease a shallow 2-quart casserole dish.
  • Layer half the potatoes and half the onions in dish.
  • Sprinkle with half the dill, salt and pepper.
  • Top with the salmon chunks.
  • Layer with the remaining potatoes, onions, dill, salt and pepper.
  • Whisk eggs and milk and pour over casserole evenly.
  • Melt butter and mix with bread crumbs.
  • Drizzle evenly over the top.
  • Bake uncovered at 350°F for 25 to 30 minutes, or until potatoes are tender.
  • Sprinkle with chopped parsley and serve.

5 large russet potatoes, halved and thinly sliced
salt and ground black pepper to taste
6 tablespoons butter
½ cup all-purpose flour
4 cups milk
4 tablespoons chopped garlic
1 (16 ounce) package shredded sharp Cheddar cheese

Steps:

  • Generously spray a slow cooker with cooking spray. Place a layer of potatoes in the bottom of the slow cooker and season with salt and pepper. Repeat until all potatoes have been used.
  • Melt butter in a saucepan over medium heat. Add flour and whisk until bubbling. Cook, stirring constantly, for 1 to 2 minutes. Slowly add milk and continue to cook, whisking continually, until thick, 5 to 10 minutes. Stir in garlic.
  • Remove from the heat and add Cheddar cheese. Stir until cheese has melted, placing it back on the heat briefly if necessary, being careful the mixture doesn't scorch. Pour cheese sauce over the potatoes. Shake the slow cooker a bit (do not stir!) to allow cheese sauce to reach all the way to the bottom.
  • Cook on Low for 8 hours or on High for 4 hours, until potatoes are tender and fully cooked.
