- In a small saucepan, saute rice in butter until golden, stirring constantly. Add broth and onion; bring to a boil. Reduce heat to low; cover and cook for 20 minutes or until rice is tender. Stir in dill.

DILL TOFU ON RICE
Extra firm tofu popping with bold flavors of onion, garlic, mushrooms and tomatoes. Fresh dill weed makes this dish sensational!

Steps:
- In a large freezer bag, place the tofu. Squeeze out as much air as possible.
- In a 2nd large freezer bag, combine the onion, garlic, tomatoes, mushrooms, lemon juice and dill weed. Seal the bag and toss baggie to mix well. Gently squeeze out as much air as possible.
- I choose at this point to also add in the cooked brown rice in quart size baggie. I like to have a "dinner kit" in the freezer.
- Place the 3 filled bags into a large freezer bag, along with this printed recipe and seal. Freeze.
- To cook; thaw.
- Cook brown rice if you didn't prior.
- Preheat oven to 350 degrees.
- Place tofu in a greased baking dish.
- Bake, uncovered, for 15 minutes, or until golden brown.
- While the tofu is cooking, heat a large skillet over medium heat. Add tomato mixture and heat thoroughly for about 10 minutes or until veggies are done.
- Salt and pepper the cooked tofu to taste.
- Make a bed of rice on each dinner plate and top with a tofu fillet; spoon vegetable mixture evenly over each tofu steak.

- Once the tofu has been pressed, make the marinade for it. Whisk together the vegetable broth, lemon juice, olive oil and 1 teaspoon of salt in a large mixing bowl.
- Then, cut the block of tofu into whatever shapes you want. I like to slice the tofu into slices that are about 1/3-1/2 inch thick and then cut those diagonally so I have small triangles. You just want them to be about that thickness.
- Now, place all of the tofu into the marinade and let marinate for at least an hour. The longer the better, and you can even do it in the morning when you want it for dinner or the night before.

- Meanwhile, prepare the lemon dill dressing in a processor. My mini processor worked well for this (just call me a broken record).
- Preheat a large skillet over high heat and add a teaspoon of oil. Meanwhile, chop up the tofu into small, thin squares.
