BREAD MACHINE ONION RYE BREAD

Steps:
- The quantities are for 2 small loaves using the dough cycle only and shaping for baking in a standard oven. However, I have successfully produced a largish loaf in the pan through the whole ABM cycle. The order of ingredients depends on the type of ABM. Go by your own manufacturer's instructions. For the largish loaf, use the basic setting (4 hours in mine). If baking in a standard oven, remove after the dough cycle and split the dough in 2 pieces. Flatten each one, fold over a few times and form into torpedo shapes. Cover with oiled film and leave to rise for around 45 minutes in a warm spot. Slash the tops of the loaves diagonally and bake at 450 degrees F for around 20 minutes.

- In a bowl, combine 2 cups all-purpose flour, rye flour, milk powder, yeast, sugar, salt and seasonings. In a saucepan, heat water and shortening to 120°-130°. Add to dry ingredients; beat until smooth. Stir in enough remaining all-purpose flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 45 minutes. , Punch dough down. Turn onto a lightly floured surface; divide in half. Shape into two balls. Place on two greased baking sheets. Cover and let rest in a warm place until doubled, about 35 minutes., With a sharp knife, make several shallow slashes across the top of each loaf. Bake at 375° for 30-35 minutes or until golden brown. Remove from pans to wire racks to cool.

- In a large bowl, dissolve yeast in warm water. In a small saucepan, heat cottage cheese to 110°-115°; add to yeast mixture. - Combine sour cream, mayonnaise, chipped beef, parsley, onion, seasoned salt, and dill in a bowl until dip is well mixed; chill in refrigerator for 24 hours.
- Cut the top off the rye bread and scoop out the bread, breaking into bite-size pieces. Fill bread "boat" with dip. Place bread "boat" on a serving tray and arrange the bread pieces around it.

CANDI'S DILL RYE BREAD
This was a test run in the kitchen today and boy oh boy did it turn out amazing! Very proud of this loaf! After it was done and I could actually jump for joy, I did! Very Very delish bread!

- 1. Sift all dry ingredients (except yeast, dill seed and sesame seed) into large bowl.
- 2. Bring about 2 cups of water to a boil in a small pot with dill seed and sesame seeds in it. Turn heat off once it starts boiling.pour 1 1/3 cup water into measuring cup strain out rest of seed and add to water (pictured) set aside to cool a bit so not to kill yeast. (reserve remaining dill water)
- 3. Once cooled add butter to melt, once butter melts add yeast and stir till completely desolved.
- 4. add water to dry mixture and mix thoroughly, you will have to a a tad of the reserved dill water here to make a good dough.
- 5. Wrap bowl with plastic wrap and set in warm place to rise twice it's size. About 1 1/2 hours. Once risen, roll onto floured surface and knead 20-30 times, shape and place in greased bread pan,rub top of loaf with shortening, cover with dry towel and let rise again till doubled in size, about an hour!
- 6. Place in 350* oven for 20-30 minutes until done. Cool on wire rack for 15-20 minutes before slicing. This bread turned out amazing!
DILLY DELI RYE BREAD
This is out of my bread machne book called Bread Machine Magic by Linda Rehberg and Lois Conway. It is an excellent book, and every loaf I ever made came out beautifully. This is a nice bread with ham and swiss cheese sandwich, or a big bowl of onion soup.
