FRESH DILL PASTA SALAD



Fresh Dill Pasta Salad image

A nice twist to your standard shrimp salad. I made this recipe when I had tons of dill in my garden and needed something to do with it. Enjoy!

1 (8 ounce) package seashell pasta
1 cup mayonnaise
¼ cup sour cream
1 ½ tablespoons lemon juice
1 ½ tablespoons Dijon mustard
¼ cup chopped fresh dill weed
¼ teaspoon ground black pepper
2 (4 ounce) cans small shrimp, drained
½ cup chopped celery
½ cup chopped seeded cucumber
2 tomatoes, diced
3 tablespoons minced shallot
salt to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook until tender, about 8 minutes. Drain and rinse under cold running water to cool.
  • In a serving bowl, combine the mayonnaise, sour cream, lemon juice, mustard, dill and black pepper. Gently stir in the pasta, shrimp, celery, cucumber, tomato and shallots. Mix in salt to taste and refrigerate for at least 2 hours before serving.

2 cups coarsely grated kosher dill pickles (such as Claussen®)
1 cup mayonnaise
1 tablespoon dried dill weed
1 tablespoon ground black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, 8 minutes. Drain.
  • Mix pickles, mayonnaise, dill weed, pepper, and salt in a large bowl; stir in pasta until coated. Refrigerate for 1 hour before serving.

1/4 medium red onion, minced
2 teaspoons kosher salt, plus additional for salting water
8 ounces elbow macaroni (about 2 cups)
2 tablespoons milk
2 tablespoons white wine vinegar
1 tablespoon Dijon mustard
Freshly ground black pepper
1/3 cup extra-virgin olive oil
1/3 cup sour cream
6 ounces cooked ham, cut into 1/3-inch cubes
3/4 cup frozen baby peas, thawed (about 4 ounces)
2 ribs celery, with leaves, diced
2 tablespoons chopped fresh dill

Steps:

  • To mellow the minced onion, soak it in cold water while you make the salad.
  • Bring a large pot of cold water to a boil over high heat and salt it generously. Add the macaroni and boil, stirring occasionally, until al dente, about 8 minutes. Drain the macaroni in a colander, put in a serving bowl, and toss with the milk. Allow the macaroni to cool slightly while you make the dressing.
  • For the dressing: Whisk the vinegar, mustard, the 2 teaspoons salt, and black pepper to taste in a large bowl. Gradually whisk in the olive oil, starting with a few drops and then adding the rest in a steady stream to make a smooth, slightly thick dressing. Whisk in the sour cream.
  • Drain the onions, pat dry, and add to the macaroni along with the ham, peas, celery, and dill. Add the dressing and fold to coat the pasta evenly. Serve immediately or cover and refrigerate until ready to serve.

½ pound dry shell pasta (about 3 cups)
¾ cup pickles (sliced)
⅔ cup cheddar cheese (diced)
3 tablespoons white onion (finely diced)
2 tablespoons fresh dill
½ cup pickle juice
⅔ cup mayonnaise
⅓ cup sour cream
⅛ teaspoon cayenne pepper
4 tablespoons pickle juice
salt & pepper to taste

Steps:

  • Boil pasta al dente according to package directions. Run under cold water to stop cooking.
  • Toss cold pasta with about ½ cup of pickle juice and set aside for about 5 minutes. Drain & discard pickle juice.
  • Combine all dressing ingredients in a small bowl and mix well.
  • Toss all ingredients in a large bowl. Refrigerate at least 1 hour before serving.

Dill Pickle Pasta Salad will be an instant favorite! Tender spiral pasta, 2 cups of diced pickles, cheese, and onion covered in a ultra creamy homemade dill dressing with pickle juice.

1 box (16 oz) rotini pasta
1/3 cup dill pickle juice (from the pickle jar)
2 cups chopped baby dill pickles
1 block (8 oz) Colby Jack cheese (cubed small)
1 small white onion (finely chopped)
1 cup mayonnaise
1/2 cup sour cream
1/3 cup dill pickle juice (from the pickle jar)
2 tablespoons chopped fresh dill ((or 1 tablespoon dried dill))
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook pasta according to package directions. Don't forget to add some salt to the boiling water before adding the pasta. I add about 1 teaspoon.
  • When pasta is done cooking drain pasta and rinse with cold water. Move rinsed cooked pasta to a mixing bowl and pour 1/3 cup of pickle juice over it. Stir to combine. Let it sit while you prepare the rest.
  • Chop the dill pickles and cheese into small cubes. Finely chop the white onion.
  • Drain the pasta again that was sitting in the pickle juice. Add it back to the mixing bowl. Add in the pickles, cheese, and white onion. Stir to combine.
  • In a small bowl combine all the dressing ingredients and pour over the pasta salad. Stir everything together to combine well. Salad can be eaten right away but I prefer it cold, and if you do too, then cover it and refrigerate it for 1-2 hours.
  • * I would recommend not making this too far ahead of time. For best results serve this salad within a few hours of making it. Either right away or after the refrigeration time. Leftovers do keep well in the fridge but the dressing thickens up and it's not as creamy as when you first make it.

This is from Food TV's website (next to Zaar, my favorite recipe website.) I have not made this yet, am posting for future use. Can't wait to try it, though! The recipe also had this interesting comment: Why the milk? When we left it out of the recipe, the macaroni absorbed too much of the dressing and the salad was overly acidic. Adding just a couple tablespoons mellowed the dressing and gave the salad a wonderful old-fashioned quality without being goopy or heavy.
