Shrimp Salad With Dijon Dressing image

Apart from the usual ingredients, one can easily find in a salad, like lettuce, arugula, onion, avocado or cherry tomatoes, we've used for this one some shrimp. We've cooked the shrimp with garlic and ginger and then made a really nice dijon mustard dressing to go with!

1 tablespoon vegetable oil
2 garlic cloves, crushed
1 teaspoon ginger, shredded
4 ounces of shrimp
1 tablespoon dijon mustard
1 tablespoon olive oil
1 tablespoon lemon juice
1 teaspoon fresh oregano leaves
salt
2 ounces of salad mix
½ red onion, sliced
½ avocado, sliced
5 cherry tomatoes, halved

Steps:

  • Heat the vegetable oil in a skillet over low heat. Add the garlic, ginger, and shrimp and cook for 4-5 minutes. Set aside.
  • Add the Dijon mustard, olive oil, lemon juice, fresh oregano and some salt to a small bowl. Mix them.
  • Add the lettuce and arugula to a medium-sized bowl and mix them together with the red onion, avocado, cherry tomatoes, shrimp and Dijon mustard mixture.

A quick and easy salad. So easy it really isn't a recipe. I make this for lunch often. If I could afford to eat shrimp everyday, I might eat this salad everyday. It is also South Beach Diet friendly.

6 ounces cooked shrimp (I use the pre-cooked kind)
2 tablespoons red wine vinegar
2 teaspoons Dijon mustard
1 1/2 teaspoons Splenda sugar substitute or 1 1/2 teaspoons sugar
2 tablespoons extra virgin olive oil
4 cups lettuce (I use red leaf)
1 cup of your favorite salad vegetables, I use celery, cauliflower and a few slices of red onion

Steps:

  • In a large bowl whisk together red wine vinegar , Dijon mustard and Splenda.
  • Then continue to whisk while adding olive oil until dressing is thoroughly mixed.
  • Add lettuce and vegetables of your choice. Toss to coat.
  • Top with cooked shrimp and you're ready to eat.

6 hard boiled Eggs
1 Green Onion stalk chopped thin
1 Tbs Shallots finely chopped
1 Tbs Dill Pickles finely chopped
1/4 cup Mayo
1 Tbs Honey Dijon Mustard
1 tsp Tarragon
Salt and Pepper to taste

Steps:

  • Add eggs to medium saucepan and fill water just above eggs.
  • Bring to boil, the reduce heat to a high simmer for 10 minutes.
  • Run eggs under cold water and peel.
  • Add eggs to medium size bowl and mash with a whisk or fork.
  • Add the rest of the ingredients and stir well.
  • Scoop egg salad onto romaine leaves and serve.
  • Enjoy!

1 cup of Low Fat Honey Dijon salad dressing (I prefer Kens)
1/8 of a cup chopped scallions
1 Cup of chopped tomatoes
8 Medium Red leaf lettuce leaves

Steps:

  • Combine shrimp, salt pepper and hot sauce in a medium bowl. In a small bowl Combine dressing and dijon mustard. Add the salad dressing and scallions to the seasoned shrimp, mixing until combined. Fill lettuce leaves with salad and top with chopped tomatoes. (Make sure lettuce leaves are dry) Wrap the filled leaves and enjoy.

1/4 cup mayo
1 Tbsp dijon mustard
1 Tbsp lemon juice
1 Tbsp chopped chives
1 Tbsp chopped fresh dill
2 ribs celery (minced)
1 tsp Old Bay seasoning
1 tsp garlic paste (or 1 garlic cloves finely minced)
a few dashes of hot sauce
1 head Boston or Bibb lettuce

Steps:

  • Cut the shrimp into smaller pieces and put them in a bowl. Add the mayo, dijon mustard, lemon juice, chives, fresh dill, minced celery, Old Bay seasoning, garlic and hot sauce. Stir until combined.
  • Place the shrimp salad in the fridge for about an hour. Once ready to serve separate the lettuce leaves and put some of the shrimp salad into each lettuce wrap.
