4 bone-in chicken breast halves, with skin
2 teaspoons salt
2 tablespoons butter
3 cloves garlic, chopped
3 tablespoons Dijon mustard
2 tablespoons white wine
2 cups seasoned dry bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Season chicken with salt. In a small skillet or saucepan, saute butter, garlic, mustard, and wine together for 3 to 4 minutes over medium low heat; spread mixture over chicken.
  • Place bread crumbs in a shallow dish or bowl and dredge chicken in crumbs, leaving skins on. Place coated chicken pieces in a lightly greased 9x13 inch baking dish.
  • Bake at 350 degrees F (175 degrees C) for 1 hour or until chicken is cooked through and juices run clear.

3/4 cup Fiber One™ original bran cereal
2 tablespoons grated Parmesan cheese
1 teaspoon dried basil leaves
1/4 teaspoon garlic salt
1/4 teaspoon coarse ground black pepper
1 egg white, beaten
2 tablespoons Dijon mustard
4 boneless skinless chicken breasts (about 1 1/4 lb)
1 tablespoon canola or vegetable oil

Steps:

  • Heat oven to 400°F. Spray 15x10x1-inch pan with cooking spray. Place cereal in resealable food-storage plastic bag; seal bag and finely crush with rolling pin or meat mallet (or finely crush in food processor).
  • In shallow bowl, mix cereal, cheese, basil, garlic salt and pepper. In another shallow bowl, mix egg white and mustard until blended.
  • Dip chicken into egg white mixture, then coat well with cereal mixture; place in pan. Drizzle oil over chicken.
  • Bake 20 to 25 minutes or until juice of chicken is clear when center of thickest part is cut (170°F).

1/4 cup butter or margarine, melted
2 tablespoons Dijon mustard
3/4 cup Progresso™ Parmesan bread crumbs
1/4 cup grated Parmesan cheese
6 boneless skinless chicken breast halves (1 3/4 pounds)

Steps:

  • Heat oven to 375°F. Mix butter and mustard in shallow dish until well mixed. Mix bread crumbs and cheese in large plastic bag.
  • Dip one piece of chicken at a time into butter mixture, coating all sides. Then place in bag of bread crumbs, seal bag and shake to coat with crumb mixture. Place chicken in single layer in ungreased rectangular pan, 13x9x2 inches.
  • Bake uncovered 20 to 30 minutes, turning once, until juice of chicken is no longer pink when centers of thickest pieces are cut.

3 boneless skinless chicken breasts
3/4 cup parmesan cheese
5 tablespoons Dijon mustard
3 tablespoons olive oil
tomato sauce, for dipping

Steps:

  • Heat oil in skillet to a medium heat.
  • Cut each chicken breast into manageable pieces, about three pieces to each breast.
  • Coat the chicken, first with the mustard then the Parmesan.
  • Once the oil is hot add the chicken to your pan and cook until there is no more pink, turning once.
  • Remove the chicken and serve with warmed tomato sauce if desired.

  • Heat oven to 375°F Grease 13 X 9 inch pan.
  • Mix bread crumbs and cheese in alrge resealable plastic food storage bag.
  • Mix butter and mustard in shallow dish.

nonstick cooking spray
½ cup panko bread crumbs
¼ cup freshly grated Parmesan cheese
4 (5 ounce) bone-in, skin on chicken thighs
¼ cup melted butter
2 tablespoons Dijon mustard
1 ½ pounds tri-color baby potatoes (red, gold, and purple)
1 pound fresh green beans, trimmed
1 teaspoon dried thyme
freshly cracked salt and pepper to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a large sheet pan or jelly roll pan with aluminum foil and coat with nonstick cooking spray.
  • Mix bread crumbs and Parmesan cheese in a small bowl. Set aside.
  • Place chicken thighs on the prepared baking sheet. Stir together butter and Dijon in a large bowl. Brush the tops of the chicken thighs with some of the butter-Dijon mixture.
  • Add potatoes and green beans to the bowl and toss in the remaining butter-Dijon mixture. Spread vegetables around the chicken onto the baking sheet in an even layer. Season everything with thyme, salt, and pepper. Press the bread crumb mixture onto the top of the chicken thighs.
  • Bake in the preheated oven until chicken is no longer pink at the bone and the juices run clear and the potatoes can be pierced easily with a fork, 25 to 30 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
