CHEESY MAPLE DIJON CHICKEN FOIL PACKETS WITH VEGGIES
Chicken foil packets that you can cook on the grill or in the oven filled with veggies and a creamy, tangy sauce and melted cheddar cheese make dinner easy to prepare and even easier to clean up.

- Combine the olive oil, maple syrup, Greek yogurt, and Dijon mustard in a small bowl, and stir until thoroughly combined.
- Place the chicken in a plastic zipper bag and pour about half the mixture over the chicken. Seal the bag and massage to coat the chicken. Refrigerate at least 1 hour or up to 24 hours. Reserve the rest of the maple Dijon mixture.
- Preheat your oven to 400°F or your grill to medium-high, about 400°F.
- Cut four (18x12-inch) sheets of Heavy Duty Aluminum Foil and spray with cooking spray.
- Divide the vegetables between the sheets of foil, placing them on one half of each sheet. Dot with butter and sprinkle with salt and pepper.
- Remove the chicken from the bag and place one chicken breast (or chicken breast half) on top of the veggies on each foil sheet.
- Fold the aluminum foil over the top of the chicken and vegetables and seal the edges tightly.
- Place foil packets on the grill for 20-25 minutes or in the oven for 25-30 minutes, or until chicken reaches an internal temperature of 165°F (exact timing will depend on the thickness of your chicken).
- Open the foil packs and top each with about 2 Tablespoons of the remaining maple Dijon mixture and 1/4 cup shredded cheese. Leave on the grill or in the oven for another 2-3 minutes or until the cheese has melted.
- Remove foil packets from the grill or oven, and top with chives or green onions as desired and serve.

This recipe is from Quick and Easy Meals from the Riceland Kitchen. I did clip this from a box of Riceland Rice but I do not remember how long ago. The recipe is very simple and made in one pot. No fuss cooking!

- Add rice and seasoning packets plus remaining ingredients, EXCEPT sour cream.

- Heat oven to 400°F or heat gas or charcoal grill for direct grilling. Cut 4 (18x12-inch) sheets of foil. In medium bowl, mix melted butter, honey, mustard and seasoning. Add chicken, and turn to coat; set aside.
- In large microwavable bowl, microwave sweet potatoes uncovered on High 5 to 7 minutes or until fork tender. Carefully divide potatoes among the 4 pieces of foil. Top with bell pepper chunks. Top each with chicken breast and sauce.
- For each packet, bring up 2 sides of foil over chicken and vegetables so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
- If baking, place packets on cookie sheet, and bake 25 to 30 minutes or until juice of chicken is clear when center of thickest part is cut (at least 165°F). If grilling, place packets on grill over medium heat. Cover grill; cook 18 to 20 minutes, rotating packets one-half turn after 10 minutes, until juice of chicken is clear when center of thickest part is cut (at least 165°F).
- Place packets on plates. Cut large X across top of each packet; carefully fold back foil. Top with green onions.

- Preheat oven to 375°. Flatten chicken breasts to 1/2-in. thickness; place each on a piece of heavy-duty foil (about 12 in. square). Layer the mushrooms, carrots, onions and red pepper over chicken; sprinkle with pepper, thyme and, if desired, salt. , Fold foil around chicken and vegetables and seal tightly. - Heat gas or charcoal grill. Cut 4 (18x12-inch) sheets of heavy-duty foil. Spray with cooking spray.
- Measure 1/2 cup of the condensed soup, and reserve. In 4-cup glass measuring cup, mix remaining condensed soup, the chicken broth and 1 teaspoon of the seasoning; beat with whisk to blend. Add instant rice; stir and let stand about 8 minutes or until most of the liquid is absorbed. Stir in carrots and peppers.
- Season chicken with remaining 2 teaspoons seasoning; place on center of each sheet of foil. Dividing evenly, spoon rice and vegetable mixture around each chicken breast. Divide any remaining soaking liquid over tops of breasts. Spread 2 tablespoons reserved soup over each breast; evenly top with bacon.
- Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
- Place packs on grill over medium heat. Cover grill; cook 10 minutes. Rotate packs 1/2 turn; cook 9 to 10 minutes longer or until juice of chicken is clear when center of thickest part is cut (at least 165°F). Remove packs from grill; cut large X across top of each pack. Carefully fold back foil, and garnish with green onions.

DIJON-BAKED CHICKEN WITH RICE AND BROCCOLI
If you forget to marinate this overnight, don't worry; it's still great if you cook the chicken in the sauce as soon as you make it. It's just better when it marinates.

- The night before: Unravel thighs to flatten and scrunch together in a large shallow oven-safe pan. Combine the following in a small mixing bowl in this order: spices, honey, Dijon mustard, soy sauce, and hot chili sauce. Stir. Pour evenly over chicken. Flip the chicken around with a fork until each piece is well coated. End by making sure the rough side of the thigh is down. Cover with plastic wrap and refrigerate overnight.
- The next day: Preheat oven to 350 degrees F.
- Combine rice and water in a larger oven-safe pot. Stir. Cover and place in preheated oven.
- Turn chicken over with a fork. Place in preheated oven, beside rice. Set timer for 50 minutes. About halfway through the cooking time for chicken, I like to flip the chicken over again. When the timer rings for chicken, turn off heat but leave it in the oven.
- Rinse broccoli in colander. Place in a microwave-safe pot or casserole dish with lid. Cover, then microwave at high for 5 minutes. When timer rings, add seasoning mix to broccoli.
