1 lb strawberry
2 cups water
2 (1 1/3 ounce) boxes cook-and-serve sugar-free vanilla pudding (4 serving boxes)
1 (1/3 ounce) box sugar-free strawberry gelatin (4 serving box)

Steps:

  • Wash, trim and slice strawberries. Spread strawberry slices across the bottom of a glass pie dish.
  • In a saucepan, combine water and vanilla pudding. Whisk constantly over medium heat until boiling. Remove from heat and add strawberry gelatin. Continue whisking, off heat, until gelatin is fully dissolved. Pour evenly over strawberries. Cool to room temperature, then refrigerate until fully set, 3-4 hours.

This is a fresh low carb strawberry pie with only 6g net carbs per slice.

1 3/4 cups super fine almond flour*
2 tablespoons butter, melted
1/4 cup vanilla or plain whey protein powder
1 large egg
1 1/2 pounds strawberries, sliced in half
1/2 cup Swerve Granular
1 (.3 oz) small box Sugar Free Strawberry Jello
1 cup water
1 1/2 cup heavy whipping cream
5 tablespoons Swerve Confectioners

Steps:

  • Preheat the oven to 350 degrees F.
  • 2. Mix the almond flour and whey protein powder together in a medium-sized bowl. Add the egg and melted butter and mix well.
  • 3. Press the dough into the bottom and up the side of a glass or ceramic pie pan. Poke holes in the crust with a fork to let out steam.
  • 4. Bake for 12-15 minutes until lightly browned around the edges. Remove from the oven and let it cool to room temperature, about 1 hour.
  • 5. Add sweetener and water to a medium-sized saucepan and bring to a boil over medium heat. Remove from the heat and add in Sugar-Free Jello. Mix well to dissolve.
  • 6. Pour Jello mixture over strawberries and mix well to coat.
  • 7. Add strawberries to the pie pan and spread out evenly.
  • 8. Chill in the refrigerator until set, about 3 hours.
  • (Optional)** Whip together heavy whipping cream and Confectioners Swerve with an electric mixer until stiff peaks form. Serve on top of or with the pie.

My sister-in-law just gave me this recipe from a friend of hers. She does Weight Watchers and I have just joined myself. Her friend told her she made eight pies one week! I am told that a whole pie is 4 points. I have made it crustless and also put it into a reduced fat graham cracker crust. You must adjust points for the latter. This is so easy and so tasty. I hope you enjoy! Don't forget the fat free, sugar free Cool Whip. I am also diabetic, so I added that to the title as well.

2 cups water
1 (7/8 ounce) package cook and serve fat-free sugar-free vanilla pudding mix
1 (1/3 ounce) package sugar-free strawberry gelatin
4 cups sliced fresh strawberries (I use a quart clamshell)
whipped topping

Steps:

  • Place sliced berries on bottom of a pie plate.
  • In a saucepan mix the water with the pudding with a wisk, bring to a boil.
  • Remove from heat, add the jello, let cool briefly.
  • Pour over berries.
  • Refrigerate until set. It does not take too long.
  • Enjoy with some whipped topping if you like. Delicious!

This is a restaurant style strawberry glazed pie. Fresh berries are tossed with a glaze, and then chilled until serving time. This is also good made with peaches, using peach gelatin instead of strawberry.

6 cups sliced fresh strawberries
⅔ cup white sugar
1 cup water
4 tablespoons strawberry flavored Jell-O®
4 tablespoons cornstarch
1 (9 inch) prepared graham cracker crust

Steps:

  • Mix together the sugar, water, gelatin and cornstarch in a medium large saucepan. Boil for one minute. Remove from heat.
  • Fold in the sliced strawberries, toss until well coated. Pour into the graham cracker crust.
  • Chill until well set. Serve topped with whipped cream.

3 cups sliced strawberries
3 cups sliced rhubarb
1 ½ cups white sugar
¼ cup instant tapioca
1 squeeze fresh lemon juice
1 recipe pastry for a 9 inch double crust pie
2 tablespoons butter, cut into small pieces

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Place a pie dish onto a baking sheet.
  • Mix the strawberries, rhubarb, sugar, tapioca, and lemon juice in a bowl, and let stand for 15 minutes, stirring occasionally. Fit a pie crust into a 9-inch pie dish; pour the filling into the bottom crust. Scatter pieces of butter over the filling, and place the top crust onto the pie. Press the edges together and crimp with a fork to seal. Cut several slits into the top crust with a sharp knife.
  • Bake in the preheated oven until the crust is golden brown and the filling is bubbling, 40 to 55 minutes.
