DIET COKE CAKE
A friend in college gave me this recipe, if you can even call it that! Since then, I've shared it with pretty much everyone I know: friends, coworkers, family, EVERYONE! Finally, a relatively healthy alternative to chocolate cake! This cake comes out so moist and delicious! For those of you who are worried, it doesn't taste like Diet Coke - I promise!

Steps:
- Preheat oven to temperature on cake mix box.
- Grease a 9x13 pan.
- Combine cake mix and Diet Coke in large mixing bowl. Mix according to directions on box. (For example, my favorite brand says to mix at medium speed for 2 minutes!).
- Pour into 9x13 pan. Bake 5 minutes less than the recommended time on the box. For example, if the box says to bake a 9x13 cake for 28 minutes, bake your Diet Coke Cake for 23. Cake is done when a fork or toothpick inserted in the middle of the cake comes out clean.
- Cool in pan on wire rack.
- When cooled, frost with Cool Whip topping.
- Refrigerate leftovers. (I never have any!).
- Enjoy!
DIET SODA CAKE
I found this recipe and gave it a shot - and was amazed! The recipe didn't specify any specific size of cake cake mix, but I just used the basic size you find at the grocery store. So far, I've made lemon cake mix w/ Diet Sprite & Chocolate cake mix w/ Diet Coke. This is truly amazing- no eggs, oil, etc.

- Preheat oven to 350°. Spray a 9"-x-13" pan with cooking spray.
- In a large bowl, whisk together flour, sugar, baking soda, and salt.
- In a medium saucepan over medium heat, combine butter, Coke, and cocoa powder. Bring to a boil, whisking continuously. Remove from heat and whisk in eggs and buttermilk. Pour into flour mixture and mix until combined.
- Transfer to prepared pan and bake for 30 minutes, or until a toothpick comes out clean.
- While baking, make the glaze: In a medium saucepan, bring Coke to a boil. Allow it to reduce by half, about 15 minutes. Add butter, cocoa powder, vanilla and salt and stir to combine. Pour over powdered sugar and whisk until combined.

- In a large mixing bowl, stir together the can of diet coke and the cake mix until well combined.

SKINNY {LOW FAT} CHERRY POKE CAKE

- Preheat oven according to box directions. Spray 9x13 pan with cooking spray.
- Beat cake mix, diet soda and egg whites in a large bowl for 2 minutes. Pour mixture into prepared pan.
- Decrease cooking time by 5 minutes from what the box says. A toothpick inserted in the middle of the cake will come out clean when it is finished.
- Pull cake out from oven and let cool for 15 minutes. Using a large fork, ice pick or toothpick poke large holes into cake about every 1/2 inch of the cake. (Don't worry about how it looks , we'll be covering it up with frosting!)
- Mix together Jell-o and boiling water and stir for 2 minutes or until dissolved. Add in cold water. Pour over poked cake. Refrigerate until cooled completely.
- Combine pudding and 1-1/2 cups cold milk. Beat together until thickened, about 2-3 minutes. Fold in desired amount of Cool Whip (I used about half a container). When it's the consistency and taste desired, spread over cooled cake. Slice up, serve and enjoy! Make sure to keep cake chilled in refrigerator!
