Bold Teriyaki Sauce image

Make delicious teriyaki sauce with this simple recipe! Unlike store-bought teriyaki sauce, this recipe is naturally sweetened and easily gluten free. Recipe yields about 1 1/4 cups sauce.

1/2 cup reduced-sodium tamari, shoyu or soy sauce*
1/2 cup water
1/3 cup honey or maple syrup
1 tablespoon rice vinegar or white wine vinegar
2 teaspoons grated fresh ginger
6 cloves garlic, pressed or minced
1 tablespoon cornstarch or arrowroot starch
1 tablespoon water

Steps:

  • In a small saucepan, combine the soy sauce, water, honey, vinegar, ginger and garlic. Bring the mixture to a gentle simmer over medium heat, stirring occasionally. Keep an eye on it so it doesn't overflow.
  • Meanwhile, in a small bowl, whisk together the cornstarch and water until smooth (we're creating a slurry, which will thicken the sauce). Set aside.
  • Once the sauce is simmering, whisk the slurry once more and pour it all into the sauce. Continue cooking, while stirring continuously, until the sauce is thickened, about 30 seconds.
  • Remove the sauce from the heat and use as desired. To store for later, let it cool to room temperature before covering and refrigerating. Teriyaki sauce tastes best when it's fresh, but will keep for 1 to 2 weeks in the fridge.

2/3 cup mirin
1 cup soy sauce
2 tablespoons rice vinegar
1 teaspoon sesame oil
1/3 cup light brown sugar
7 large garlic cloves (, minced*)
2 tablespoons fresh ginger (, minced*)
3 tablespoons cornstarch or arrowroot
3 tablespoons water

Steps:

  • Combine all ingredients for teriyaki marinade in a small sauce pan. Bring to a low boil, then a simmer for 10-15 minutes. Mixture will be thin. Use this for marinating.
  • Using an immersion blender or small food processor, blend well.
  • To make marinade into a sauce, whisk together cornstarch and water until fully combined. Mix with teriyaki marinade until it becomes glossy. Remove from heat, mixture will thicken as it cools.

1/8 teaspoon crushed red pepper flakes
2 teaspoons cornstarch
1 tablespoon honey (or agave)

Steps:

  • In a small saucepan, combine soy sauce, sugar, water, mirin, ginger, garlic, and red pepper flakes. Bring to a boil; reduce heat to simmer.
  • Remove 2 tablespoons sauce to a small bowl and whisk in cornstarch. Return to the saucepan and continue simmering until the sauce thickens slightly, about 10 minutes.
  • Remove from heat, stir in honey, and cool to room temperature, or cover and refrigerate for up to one week. Bring to room temperature before using.

2 ounces cold water
1 ounce mirin (can substitute cooking sherry)

8 ounces bittersweet chocolate pieces

Steps:

  • Add first 5 ingredients to a saute pan over medium heat.
  • Once the mixture begins to boil, add the desired amount of sugar and stir gently to dissolve.
  • Allow sugar to caramelize slightly (mixture will begin to thicken), remove from heat and add chocolate. Stir until velvety smooth and enjoy!
