WONDERFUL BROWNIES
This is a recipe I found in one of my grandma's recipe books, and she had them titled Wundervulle Schokoladenkuchen, and they really are wonderful! It was dated 1948, and originally called for cups of chocolate chunks, but was crossed out at some point and Nestle® chocolate chips was written in. These are for the real chocolate lover. A little time intensive, but really worth the wait! Enjoy!

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
- Melt 1 12-ounce package of chocolate chips in a saucepan with 2/3 cup of butter over very low heat, stirring constantly, until smooth. Watch carefully to avoid scorching; Remove from heat, and scrape into a large bowl. Beat in the sugar, a couple of tablespoons at a time, then beat in the eggs 2 at a time until the mixture is well combined. Stir in flour and salt until blended, then stir in the vanilla extract. Gently fold in 1 more 12-ounce package of chocolate chips and the pecans. Spread batter into the prepared baking pan.
- Bake in the preheated oven until a toothpick inserted into the center of the brownies comes out with moist crumbs, about 35 minutes. Remove from oven and cool completely.
- Mix the cream and 1/4 cup of butter together in a saucepan over low heat until the butter has melted, stirring constantly; pour in remaining 1 12-ounce bag of chocolate chips and stir to melt completely. Pour the mixture into a mixing bowl, and beat on Medium speed with an electric mixer until combined, about 1 minute; chill the frosting thoroughly, stirring occasionally, about 45 minutes to 1 hour. Mixture should be the consistency of thick cream; beat the frosting again with electric mixer until it forms stiff peaks, 3 to 5 minutes. Spread frosting on cooled brownies.

FUDGY KETO BROWNIES
Deliciously fudgy keto brownies are made with dark chocolate, almond flour, and cocoa powder. Only 125 calories and 2 grams net carbs in each indulgent square!

Steps:
- Preheat your oven to 325 degrees F. Butter a square 8-inch glass (not metal) baking dish.
- In a large microwave-safe bowl, melt the butter and chocolate in 30-second increments, stirring after each microwave session. Microwave just until almost melted. Chocolate burns easily.
- Allow the mixture to slightly cool, then whisk in the eggs and stevia.
- Whisk in the almond flour and the cocoa powder. Finally, mix in the salt and the baking powder. Mix until the batter is very smooth.
- Using a rubber spatula, transfer the mixture to the prepared baking dish, spreading it evenly. Smooth the top out with the spatula.
- Bake until just set, 15-20 minutes. A toothpick inserted in center should come out not completely wet, but with a few moist crumbs. Start checking after 15 minutes.
- Cool completely, in pan on a wire rack, about 1 hour. Then cut into 16 squares and serve.

- preheat oven to 350 degrees (high altitude 375).
- Melt butter with unsweetened chocolate in a double boiler.
- Set aside to cool.
- Sift together cocoa, flour, baking powder and salt.
- Beat eggs until creamy, and slowly add the sugar, beating constantly.
- Add vanilla and cooled chocolate/butter mixture.
- Stir in dry ingredients until just combined.
- Spread batter in buttered 9x13 pan.
- Sprinkle chocolate chips over surface.
- Bake for 30-35 minutes or until center is set.
- Let cool before cutting.

- Place dates in a small bowl and pour in hot water. Soak for 10 to 15 minutes.
- Preheat the oven to 350 degrees F (175 degrees C). Line an 8x8-inch baking dish with parchment paper, leaving enough paper to hang over the sides of the dish.
- Drain dates and transfer to a food processor. Pulse until dates are completely smooth, 1 to 2 minutes. If date paste is too thick, add hot water 1 tablespoon at a time until completely pureed.
- Add softened butter to the food processor and pulse to combine, about 30 seconds. Add eggs and vanilla extract and process until light and fluffy, about 1 minute. Add whole wheat flour, cocoa powder, baking soda, and salt. Pulse until mixture is just combined, about 30 seconds. Gently stir in chocolate chips by hand. Pour batter into the prepared baking dish.
- Bake in the preheated oven until edges just begin to set, 20 to 25 minutes. Cool in the pan for 10 minutes, then remove brownies from pan by gently lifting up edges of parchment paper. Allow to cool completely on a cooling rack. Cut into 16 pieces.

- Preheat the oven to 350 degrees F. Butter a 9-by-13-inch baking pan. Line the pan with parchment, leaving an overhang, then butter the parchment.
- Whisk the flour, baking powder and salt together in a medium bowl and set aside. In another bowl, whisk the melted butter and brown sugar together until combined. Add the vanilla and eggs and stir to combine. Fold the flour mixture into the wet ingredients, being careful not to overmix. Fold in the walnuts and 1 cup of the chocolate chips. Pour the batter into the prepared pan and smooth the top. Scatter the remaining 2 tablespoons chocolate chips over the batter.
- Bake until the top is a light golden brown, 20 to 25 minutes, being careful not to overbake. Let cool on a wire rack. Remove the blondies from the pan and transfer to a cutting board. Cut into rectangles, sprinkle with flaky salt and serve.
DIANE'S AMAZING BROWNIES
These are great flavors separately. Add them all together ... and you do have one amazing brownie! The layers of this recipe go together so well. Get your glass of milk ready!

- 1. Prepare brownie mix according to the box instructions, bake as directed in a 9x13 pan but take it out of the oven 5 minutes before it's done.
- 2. Immediately drizzle the sweetened condensed milk on top of the brownies. Then sprinkle the other ingredients on top. I like the coconut to be last because then it toasts nice in the oven.
- 3. Bake for an additional 5-10 minutes or so until the coconut is browning and the toppings are bubbly. Set out to cool, and while still warm with a knife sprayed with Pam cut into squares.
- 4. And then you get a big glass of milk and dig in!

- Preheat oven to 350 degrees.
- Line a 1/4 inch sheet pan or 13x9 pan with parchment and spray with baking spray around edges for easy removal of brownies.
- Melt chocolate chips so they have time to cool before adding them (that is the last step)
- Beat butter with sugar until smooth and creamy.
- Add to it the cream cheese and blend together well.
- Add in each egg mixing to incorporate each egg, without overbeating.
- Add in cocoa, salt, coffee, cinnamon, and flour until all combined.
- Stir in melted chocolate.
- Pour batter into the prepared pan and spread smooth.
- Bake at 350 for35-40 minutes, until a toothpick comes out almost clean.
- Do not over bake.
- Allow brownies to cool before slicing.
