DIANA'S AWESOME OATMEAL MUFFINS
Full of the good stuff- and you get to choose what the good stuff is! This is good for people with juicers, too, because you can use your juice pulp for the pulp called for in the recipe. Credit goes to the wonderful "Diana in Wisconsin" of the Simple Living Discussion Forums. Cook time includes soak time for the oatmeal. I'm sure you could also add about 1/2 cup fruit, raisins or nuts too. These are also vegan, as long as you don't use dairy for the liquid. You can add a Tbs or two of sugar if you want a little sweetness.

Steps:
- Preheat oven to 400°F.
- Soak oatmeal in liquid until softened, about 10-15 minutes.
- Add fruit pulp and mix.
- Stir in salt, soda and baking powder.
- Add flour and stir to blend- Don't over stir!
- Bake until lightly browned and a toothpick inserted into the center of one of the muffins comes out clean, about 15 minutes.
- These freeze well.

DAPHNE'S CINNAMON OATMEAL MUFFINS
These muffins are pretty much awesome. They're really healthy and really good too! Lots of whole grains, not too much sugar, and a burst of cinnamon in every tender, delicious bite. My brothers love them. Good warm or cold. The original idea came from the More-With-Less Mennonite cookbook, but I've made enough changes to claim it as my own recipe. :) This recipe makes two dozen muffins, so just cut it in half if you have a smaller family.

Steps:
- Combine dry ingredients (oat flour through salt) in mixing bowl.
- Add remaining ingredients and stir just until moistened.
- Divide batter between 24 greased muffin cups, and let rest for 15 minutes.
- Bake at 425 degrees for 15-20 minutes or until muffins test done.

- Pre-heat oven at 450°F.
- Cover 12 muffin bowls with oven-safe paper.
- On a big bowl, mix oatmeal, nuts, raisins, baking powder and salt (if used).
- Add the rest of the ingredients and mix til you have an even mix.
- Put the mix on the muffin bowls and fill 3/4 of each one.
- Bake for 13-15 min or til golden.
