1 double crust pie crust
7 cups baking apples, thin-sliced, cored, peeled
1 cup Splenda granular (artificial sweetener)
3 tablespoons cornstarch
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon salt

Steps:

  • Preheat oven to 425°F
  • Place one crust into a 9-inch pie pan.
  • Place sliced apples into a large mixing bowl and set aside.
  • Combine Splenda, cornstarch, cinnamon, nutmeg and salt in a small bowl.
  • Sprinkle mixture over apples and toss.
  • Spoon apple mixture into piecrust.
  • Place the second crust over the filling. Seal edges, trim and flute. Make small openings in the top crust.
  • Bake for 40-50 minutes or until the top crust is golden. Serve warm or chilled.

This is the original recipe. I made it more like a cobbler (using no bottom crust at all to save on calories). Also, I used 1 tsp of apple pie spice in place of the cinnamon. It's rustic and homey and legal!!

1 graham cracker crust (you can make your own or use a pre-made one)
1 egg white (slightly beaten)
5 cups fresh peeled apples
1/2 cup Splenda granular
1/4 cup Splenda brown sugar blend
3 tablespoons whole wheat flour
1/4 teaspoon salt
3/4 teaspoon cinnamon
3/4 cup whole wheat flour
1/8 cup Splenda sugar substitute
1/8 cup Splenda brown sugar blend
1/3 cup melted butter, scant

Steps:

  • Brush egg white on crust, bake until light brown, about 6 minutes.
  • Combine next 6 ingredients, mix well, spoon into crust.
  • Mix remaining ingredients and either sprinkle over top OR roll and put on as the top of the pie in thin sheets haphazard for a rustic look. You may need to add a bit more butter if you wish to roll it.
  • Bake at 375 Fahrenheit for about 50 minutes or until bubbly.*.
  • Cool for about 4 hours.
  • *Note: I used a round glass casserole dish and cooked the apples for about 30 mins with the lid on then removed the lid, sprinkled the crust on top and finished baking.

Sugar substitute equivalent to 1 cup sugar
1/4 cup cornstarch
1 teaspoon ground cinnamon
8 cups thinly sliced peeled tart apples
1 tablespoon butter
Dough for double-crust pie

Steps:

  • Preheat oven to 375°. In a large bowl, combine the first 3 ingredients; fold in apples. , On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim even with rim. Add filling; dot with butter. Roll remaining dough to a 1/8-in.-thick circle. Place over filling. Trim, seal and flute edge. Cut slits in top., Bake 35 minutes. Increase oven setting to 400°; bake until apples are tender, 15-20 minutes.

6 cups sliced and pared tart apples
4 (1 g) packets sweet 'n low artificial sweetener
1 tablespoon cornstarch
1/2 teaspoon cinnamon (or to taste)
2 tablespoons lowfat margarine
1 (9 inch) pastry for double-crust pie

Steps:

  • Mix sweetener, cornstarch, and cinammon.
  • Pour over apples and mix well.
  • Pour apple mixture into unbaked pie crust.
  • Cut oleo into small pieces and put on top of apples.
  • Cover with remaining crust and seal edges.
  • Bake at 425 degrees for 15 minutes.
  • Lower temperature to 350 degrees and continue baking for an additional 30-40 minutes.

1 cup Splenda sugar substitute
1 tablespoon flour
1 tablespoon ground cinnamon
5 granny smith apples, peeled and sliced
1 golden delicious apple, peeled and sliced
1 tablespoon butter, cut up
1 (15 ounce) package of pillsbury refrigerated pie crusts

Steps:

  • Prepare piecrusts according to package directions, fit 1 piecrust into 9 inch pie plate.
  • Stir together Splenda, flour, cinnamon mixture.
  • Stir and coat apples with flour sugar mixture, pour into pie plate, dot with pieces of butter.
  • Place remaining pie crust on top, crimp edges and make slits in top crust or pierce evenly with a fork to allow steam to escape during baking.
  • Bake at 350 degrees for 50-55 minutes.
  • Makes 8 servings.
  • Great with Sugar Free ice cream or Lite Frozen whipped topping on it.

Teet is what we call my "nother mother" Marline's mom and have been for years (a nickname given by her dad, I think - they all have nicknames). It's soo good as apples are one of my favorite fruits just about anyway you fix 'em. This one is simple and quick (Splenda change by me for my diet) and is great served with vanilla or cinnamon ice cream. I know there are tons of apple pie recipes here at Zaar, but I never want to lose this one.

1 quart apple, peeled and sliced
1 cup Splenda granular (sugar substitute)
4 tablespoons butter
1 teaspoon cinnamon
2 teaspoons flour
2 refrigerated pie crusts (you'll need them both)

Steps:

  • Preheat the oven to 350 degrees. Allow the pie crusts to thaw if frozen.
  • Mix the sugar, cinnamon and flour; toss with the apples well to coat.
  • Place the base crust into a glass pie plate and flute the edges.
  • Pour the apple mixture into the crust and dot with the butter. Top with the second crust and seal. If desired, cut a pretty design in the top.
  • Place the pie plate on a cookie sheet in case of a juice spillover. Bake for approximately one hour or until the crust is golden brown.
