Splenda Fresh Cranberry Orange Relish image

This recipe has been in our family for years. I can't imagine a traditional holiday dinner without this on the table!I started making this with splenda instead of sugar for my father, who was a diabetic. We sometimes use the pecans, but feel free to leave them out and make this alot lower in calories.

Number Of Ingredients 4

2 (12 ounce) packages fresh cranberries
2 large oranges, unpeeled
2 cups Splenda granular (sugar substitute)
1 cup pecans, chopped (optional)

Steps:

  • Wash the cranberries and set aside.
  • Wash the oranges and do not peel them.
  • Slice each orange into eight sections.
  • Using a food processor, process cranberries and oranges.
  • Stir in splenda. (If using the pecans, add those as well.)
  • This can be made the day before, just keep it chilled until ready to serve.
  • I have also made this and served it as soon as it was made. Either way, this is delicious!

1-1/4 cups sugar
1/2 cup water
1 package (12 ounces) fresh or frozen cranberries
2 large tart apples, peeled and finely chopped
1 medium onion, chopped
1/2 cup golden raisins
1/2 cup packed brown sugar
1/4 cup cider vinegar
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/8 teaspoon ground allspice
1/8 teaspoon ground cloves
1/2 cup chopped walnuts, toasted

Steps:

  • In a large saucepan, bring sugar and water to a boil over medium heat, stirring to dissolve sugar. Reduce heat; simmer, uncovered, 3 minutes. Carefully stir in all remaining ingredients except walnuts; return to a boil. Reduce heat; simmer, uncovered, until mixture reaches desired thickness, 20-25 minutes, stirring occasionally., Serve warm or cold. Stir in walnuts before serving.

2 medium navel oranges
2 bags (12 ounces each) fresh or frozen cranberries
2 medium apples, peeled and cut into chunks
2 celery ribs, cut into chunks
3 cups sugar

Steps:

  • Grate peel of oranges and set aside. Peel and discard white membrane. Separate orange into sections and place half in a food processor or blender. Add half of the cranberries, apples and celery. Process until coarsely chopped. , Transfer to a bowl; repeat with remaining oranges, cranberries, apples and celery. Stir in sugar and reserved orange peel. Cover and refrigerate overnight.

I got this recipe in response to a request on the diabetic forum from LARavenscroft. I just made this for my DH for Thanksgiving. It is so easy to make and looks like a whole berry sauce. This is the simplest of homemade cranberry sauces - no spices, no orange peel, nothing extra. It is about the thickness of pudding. Use it not only only with turkey, but to put over yogurt or ricotta cheese for breakfast or a snack, or accompanying cheeses and nuts as a dessert.

Number Of Ingredients 4

1 (12 ounce) bag fresh cranberries
1 cup sugar substitute, like Splenda, choose one that equals 1 cup of regular sugar
1 cup water
1/4 teaspoon salt

Steps:

  • Put cranberries in a pot on the stove, and pick through to remove soft and/or brown ones.
  • Add the rest of the ingredients, stir, and bring to a boil on medium-high heat.
  • Stir frequently - the cranberries will pop, and then release their "gel" and the sauce will come together like magic. This takes about 10 minutes.
  • Remove from heat and let cool completely before refrigerating.
