3 tbsp masoor dal
3 tbsp moong dal
2 tbsp toor dal
1 inch ginger
2 clove garlic
1 tomato (chopped)
1 carrot (chopped)
¼ tsp turmeric
½ tsp salt
2 cup water
½ tsp pepper powder
1½ cup water (adjust consistency)
2 tbsp coriander (finely chopped)

Steps:

  • firstly, in a bowl take 3 tbsp masoor dal, 3 tbsp moong dal and 2 tbsp toor dal.
  • rinse well and soak for 30 minutes.
  • now transfer the soaked dal to a pressure cooker.
  • add 1 inch ginger, 2 clove garlic, ¼ tsp turmeric, ½ tsp salt and 2 cup water.
  • cover and pressure cook for 2 whistles on medium flame.
  • once the pressure releases, cool completely and transfer to the blender.
  • blend to smooth paste.
  • take the veggie dal paste to a large kadai.
  • add ½ tsp pepper powder and 1½ cup water. adjusting consistency as required.
  • mix well and simmer for 5 minutes or until the flavours are well absorbed.
  • finally, add 2 tbsp coriander and dal soup is ready to serve.

This is a basic dal (Indian lentil soup) recipe that my mom always makes. You can substitute different vegetables and greens and follow similar procedure. This is a hearty and healthy dish that leaves you satisfied without overfilling you. You can substitute spinach for other dark greens like mustard greens, kale, or swiss chard. The cook time will vary. Serve with steamed rice.

1 cup red lentils
4 cups water
1 teaspoon salt, plus more for seasoning
3 tablespoons vegetable oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 onion, chopped
2 cloves garlic, minced
1 pinch ground turmeric
1 bunch spinach, chopped
1 large plum tomato, chopped
½ teaspoon cayenne pepper
¼ cup chopped fresh cilantro
water, as needed

Steps:

  • Bring lentils and 4 cups water to a boil in a saucepan. Stir in salt. Reduce heat to medium-low and cook at a simmer 10 minutes. Skim off any scum that forms and continue to simmer until the lentils are tender, about 1 hour.
  • Heat the oil in a separate saucepan. Cook mustard seeds and cumin seeds in hot oil until they start to splatter, 2 to 3 minutes. Add onion, garlic, and turmeric to the seeds; cook and stir until the onion is soft, about 5 minutes. Stir spinach, tomato, and cayenne pepper into the onion mixture; cook until the spinach wilts and the tomato is tender, about 5 minutes.
  • Stir the cooked lentils and cilantro into the spinach mixture; bring to a simmer and cook for 5 minutes. Adjust salt and water to taste and texture preferences.

2 cups dried split yellow peas
12 cups water
4 tablespoons ghee
1 -2 chili pepper, minced
1 teaspoon cumin seed
1 1/2 medium onions, diced
8 garlic cloves, thinly sliced
1 1/2 teaspoons turmeric
salt
cilantro, chopped for garnish

Steps:

  • Rinse split peas and place in a pot with the water.
  • Bring to a boil and simmer for 30 minutes, skim occasionally.
  • Heat the ghee in a frying pan, brown the chili and cumin seeds, then ad onion and garlic.
  • Saute until onions are golden brown on the edges then add turmeric.
  • Add spicy butter mixture to split peas, simmer for about 1 hour.
  • Season with salt to taste.
  • If the soup appears to be too thick, add more water for a medium-thick consistency.
  • Fold in the cilantro leaves before serving.
  • Serve hot.

2 tablespoons olive oil
2 garlic cloves, crushed
1 onion
1 teaspoon turmeric
1 teaspoon garam masala
1/4 teaspoon chili powder
1 teaspoon ground cumin
2 lbs canned chopped tomatoes
1 cup red lentil
1 tablespoon lemon juice
2 1/2 cups vegetable stock
1 1/4 cups coconut milk
1 teaspoon salt
1/2 teaspoon fresh ground pepper

Steps:

  • In large saucepan, warm olive oil and add garlic and onion. Saute, stirring 2-3 minutes. Add turmeric, garam masala, chili powder, and cumin.
  • Stir in tomatoes, lentils, lemon juice, vegetable stock, coconut milk, and bring to a boil.
  • Reduce heat to low and simmer, uncovered, for 25-30 minutes or until lentils are tender.
  • Serve warm. You can garnish with lemon slices and cilantro if desired. Also good with naan bread.

1 Tbsp sesame oil
1 cup chopped onion
2 clove garlic, finely chopped
2 cups vegetable broth
1 (15-oz) can(s) diced tomatoes (undrained)
1 (13-oz) can(s) light coconut milk
1 cup lentils (red or yellow work equally well)
2 tsp finely chopped ginger (or 1 1/2 tsp ground ginger)
1 tsp ground cumin
1 tsp coriander
1 tsp turmeric
1 tsp salt
1/4 tsp cardamom
1/4 tsp ground cinnamon
1 pinch cayenne pepper
1 medium lemon, juiced
1 cup fresh cilantro, chopped (amount is approximate)

Steps:

  • 1. Heat oil in a large stockpot over medium-high heat. Add onions and garlic, and sauté for about 6 minutes, stirring frequently, or until the onions are soft and starting to caramelize.
  • 2. Add all remaining ingredients (except lemon and cilantro). Let the mixture almost reach a boil. Reduce heat, cover pot, and let simmer 20 to 30 minutes or until lentils are tender.
  • 3. Remove pot from heat, and stir in 3/4 cup of the cilantro. Squeeze lemon halves into the pot, and stir. Ladle into serving bowls, and garnish each serving with remaining cilantro, and serve immediately.

  • SAUTE: Melt the butter and olive oil in a large pot over medium heat. Sauté the onions and celery for 5-6 minutes or until tender and translucent. Add the garlic and continue to cook for 1 additional minute. Add the turmeric, garam masala, chili powder, cumin, and curry powder. Continue to cook the veggies for another 1-2 minutes.
  • MAKE ON THE STOVETOP: Add the tomatoes, lentils, 4 cups of broth, bay leaf, and bring to a boil. Reduce the heat to low and allow the soup to simmer for 10 minutes. Add the coconut milk and allow the soup to continue cooking for an additional 12-18 minutes or until the lentils are fall-apart tender. If the lentils soak up too much of the liquid, use the remaining ½ cup of broth to thin the soup to your liking. Use an immersion blender to puree the mixture if you prefer a smooth texture. Leave as-is for a chunkier texture. Turn the stove off and stir in the lemon juice. Taste and adjust with additional salt if the soup needs it. Serve in bowls. Sometimes I like to add a scoop of basmati rice to my bowl of soup!
  • MAKE IN THE SLOW COOKER: Transfer the mixture from step 1 to a crockpot (slow cooker) and add the tomatoes, lentils and 3 cups of broth. Cook on high for 3 and 1/2 hours or on low for 6 and 1/2 hours. 20 minutes before the time is up add the coconut milk, lemon juice, and cilantro. If at any point the lentils soak up too much of the soup, use the additional broth to thin the soup to your liking. Use an immersion blender to puree the mixture if you prefer a smooth texture. Leave as-is for a chunkier texture. Adjust salt to taste. SOmetimes I like to add a scoop of basmati rice to my bowl of soup!
