- In a small bowl, beat whipping cream for 2 minutes. Add confectioners' sugar and continue beating until stiff. Place the sour cream in a bowl; stir in a small amount of whipped cream. Fold in remaining whipped cream. Cover and refrigerate until serving.

MOCK DEVONSHIRE CREAM
Mock Devonshire cream is used to top scones. Grandma Johnson's on this site is excellent to pair it up with. Take warm scones right out of the oven, spread with strawberry preserves, and top with Devonshire cream.

- Beat cream in a chilled glass or metal bowl with an electric mixer until foamy. Gradually add sugar, continuing to beat until medium-stiff peaks form. Fold sour cream into the mixture until smooth.

NO-FAIL METHOD FOR HOW TO COOK MUSHROOMS
When cooking the mushrooms, make sure they are spread into one layer in the pan and not crowded - this way they will brown instead of steam.

- Using a damp paper towel, brush all dirt from mushrooms. Cut away and discard any hard stems. Chop into 1/4-inch slices or, if there are larger mushrooms like portobello, cut into 1/4-inch cubes.
- Heat olive oil in a large, wide skillet over medium heat. Add mushrooms and spread into one layer. Cook, without moving, until browned on one side, 3 to 5 minutes. Stir then cook another 3 to 5 minutes or until mostly golden brown on all sides. Season to taste with salt and black pepper.
- At the same time as seasoning with the salt and pepper, stir in butter, garlic, thyme and lemon zest. Cook until the garlic is fragrant and the butter absorbs into mushrooms, about 2 minutes. Take the skillet off of the heat and stir in lemon juice.

HOMEMADE DEVONSHIRE CREAM
I found this recipe years ago in a newspaper. It's a great substitute for the real thing. In fact, I prefer it, because it's sweeter. This is great with scones and a little jam or preserves on top. Perfect for afternoon teas or brunches.

- Beat in the sour cream and confectioners sugar until well mixed.

Bring out the devil in a dinner party with these spicy mushrooms

- Preheat the oven to 200C/Gas 6/fan oven 180C. In a large bowl, mix together the mustard, oil, Worcestershire sauce and garlic, then season with salt and freshly ground black pepper.
- Add the mushrooms to the mixture and toss well to coat them evenly. (You can do this ahead and let them marinate while you prepare the rest of the meal.) Place them stalk-side up in a roasting tin and sprinkle over the paprika. Bake for 8-10 minutes.
- Divide the salad leaves between four serving plates. Put two mushrooms on each plate and spoon over the juices. Serve straight away, with French or crusty bread.
