1 (18 1/4 ounce) box devil's food cake mix
1/2 cup vegetable oil
2 eggs
1 (10 ounce) package peanut butter chips, divided
1/2 cup reserved peanut butter chips
2 tablespoons butter
1 tablespoon milk

Steps:

  • Preheat oven to 350.
  • In a large bowl, combine 6 ounces of the peanut butter chips, cake mix, oil, and eggs; mix well.
  • Drop dough by well-rounded teaspoonful 2 inches apart onto ungreased cookie sheet.
  • Bake 9 to 12 minutes Cool 2 minutes, then remove to rack. Cool completely.
  • In a small saucepan over low heat, melt glaze ingredients, stirring constantly.
  • Drizzle over cookies. Let stand until set.

I always make my cookies from scratch, but I was intrigued by the idea of using cake mix, so I gave it a try. I live in high altitude and added extra flour and my texture was great- chewy, chubby, and soft in the middle. You may want to try mixing some good-quality peanut butter chips with the semi-sweet.

1 (18 1/4 ounce) package devil's food cake mix
2 eggs
1/2 cup butter or 1/2 cup margarine, melted
1/2 cup oatmeal
1/4 cup all-purpose flour (This is for high altitudes and I added it. I loved the texture which was chewy and not too cakey) (optional)
6 ounces semi-sweet chocolate chips
1 -2 tablespoon water, mixed with
instant coffee (If you added the extra flour the dough will need this)

Steps:

  • In a mixing bowl, combine dry cake mix, flour, eggs, butter, and oats, and chips.
  • Add the extra water if dough is too crumbly.
  • Drop by heaping tablespoons onto ungreased baking sheets.
  • Bake at 350 degrees for 9-11 minutes, or until set.
  • Note: I baked the cookies with the additional flour in regular altitude but preferred using 375 temperature.
  • Cool for 5 minutes and remove to wire racks.

I got these at a cookie swap a few years ago and these have been among the favorite cookies in my family ever since! I believe the recipe may have come from Southern Living. I use canned frosting, zapped a few seconds in the microwave to speed up prep time. A favorite chocolate frosting, made with simisweet chocolate bits, can also be used.

1/2 cup shortening
1 cup sugar
2 eggs
1 3/4 cups all-purpose flour
1/2 cup cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon butter flavoring
20 large marshmallows, cut in half
1/2 cup semisweet chocolate morsel
2 tablespoons butter
1/4 cup milk
2 cups sifted confectioners' sugar

Steps:

  • Cream shorteing in a large mixing bowl, gradually add sugar, beating until well blended.
  • Add eggs one at a time, beating well after each.
  • Sift together flour, soda, salt and cocoa in a medium mixing bowl, add to creamed mixture, beating until well blended.
  • Stir in flavorings, blending well. (dough will bwe stiff).
  • Cover and chill at least 30 minutes.
  • Shape dough into 1-inch balls.
  • Place 2 inches apart on greased cookie sheets.
  • Bake at 350 degrees for eight minutes.
  • Place a marshmallow half on top of each cookie and bake an additional 2 minutes.
  • Remove to wire racks and spread chocolate frosting evenly over each cookie.
  • Leave on wire racks to set.
  • Frosting: melt semisweet chocolate morsels with butter and milk. add 2 cups sifted sugar, beating until well blended.
  • Store in air-tight containers.

These are not P.B. cookies with choc. chips, or chocolate cookies with P.B. chips. These are the original Reese's P.B. chip cookies that they used to print on the back of the bag. They don't print this recipe anymore, but it has been my favorite since childhood. They are a traditional cookie with P.B. chips...Delicious! A great alternative to choc. chip cookies for those who don't like chocolate or want something different.

Mix and match as you like. If you want to get extra fancy the recipe says you can add food coloring to the Icing and use other extracts to flavor them. You can also drizzle the white Icing one direction and the chocolate the other direction. To make drizzling the cookies easier, line them up on waxed paper touching each other. 2 cups flour
1 3/4 cups granulated sugar
1/2 cocoa powder
1/2 teaspoon salt
1 teaspoon baking soda
1/2 cup butter, melted
1 egg, beaten
1/2 cup coffee, extra strong
1/2 cup granulated sugar, in a bowl for later
1 cup powdered sugar
1/2 teaspoon vanilla
1/4 teaspoon salt
2 -4 tablespoons light cream
1 cup powdered sugar
1/4 cup cocoa
1/2 teaspoon vanilla
1/4 teaspoon salt
3 -6 tablespoons light cream

Steps:

  • In a large bowl mix the flour, sugr, cocoa powdrer, salt and baking soda. Once these dry ingredients are combined, add the melted butter and mix thoroughly.
  • Add the beaten egg and mix thoroughly. Add the strong coffee and mix thoroughly.
  • Chill the dough in the refrigerator for at least 1 hour. Overnight is fine too.
  • When you're ready to bake, preheat the oven to 350.
  • Roll the dough into 1" diameter balls with your hands. This dough may be sticky, so roll only enough for the cookies you plan to bake immediately and return the bowl to the refrigerator. Roll the dough balls in the bowl of sugar and place them on a greased cookie sheet, 12 balls to a standard sheet. Flatten slightly with the heel of your clean hand so they won't roll off on the way to the oven.
  • Bake at 350 for 8-10 minutes. Cool on the cookie sheet for 1 minute and then move to wire rack to cool completely. If you leave them on the cookie sheet longer they will stick.
  • White Icing - Mix the powdered sugar with the vanilla and the salt. Add the light cream gradually until the icing is the consistency you want. Put icing into a plastic food storage bag. Twist the top closed and cut off one of the bottom corners to let out the icing. Squeeze it out and drizzle it in fine lines over the cookies.
  • Chocolate Icing - Mix the powdered sugar with the cocoa. Blend it until the resulting mixture is a uniform color. Add the vanilla and the salt. Add the light cream gradually until the icing is the consistency you want. Put icing into a plastic food storage bag. Twist the top closed and cut off one of the bottom corners to let out the icing. Squeeze it out and drizzle it in fine lines over the cookies.
  • Let the icing dry completely and then pack in single layers in a box lined with wax paper. Do not stack them!
