Buttermilk Devil's Food Cake With Freshly Squeezed Orange Cream Cheese Frosting image

This is my all-time favorite devils food chocolate cake. Inspired by Anne Byrn the Cake Mix Doctor I have become quite a fan of jazzing up cake mix. I have a host of decadent frostings for all my cakes, but let me entice you here to try this deep rich chocolate cake adorned with freshly squeezed orange cream cheese frosting. You're going to love this super easy cake. This is definitely one of my personal favorites!

vegetable shortening, for greasing the pans
flour, for dusting the pans
1 (18 1/4 ounce) package pudding enhanced devil's food cake mix
3 tablespoons unsweetened cocoa powder
1 1/3 cups buttermilk
1/2 cup vegetable oil
3 large eggs
1 teaspoon pure vanilla extract
1 (8 ounce) package cream cheese, at room temperature
8 tablespoons butter, at room temperature
3 cups confectioners' sugar, sifted
2 tablespoons freshly squeezed orange juice
1 tablespoon grated orange zest

Steps:

  • PREHEAT oven to 350F; Generously grease two 9 inch round cake pans with solid vegetable shortening, then dust with flour, shake out the excess flour; Set aside.
  • COMBINE the cake mix, cocoa powder, buttermilk, vegetable oil, eggs, and vanilla in a large mixing bowl; Blend with an electric mixer until the batter is thick and smooth; Pour into prepared pans.
  • BAKE the cake until it springs back when lightly pressed with your finger, approximately 35 minutes; Cool cakes in pans on wire rack for 30 minutes more and then slip both cakes out of the pans into your freezer; (Frozen cakes are much easier to frost.) Now you can prepare the frosting.
  • COMBINE cream cheese and butter with your electric mixer on low speed until fluffy, stop the machine; Add the confectioners' sugar; Continue to blend on low until the sugar is well combined; Add the orange juice and zest, Increase the speed and beat until frosting is light and fluffy; Use at once to frost cake.
  • STORE frosted cake in fridge.

Whipped Cream
2 cups (1 pint) cold heavy whipping cream
3 tablespoons confectioners' sugar, or to taste
1 teaspoon pure vanilla extract
Creamsicle Mousse
1 cup frozen orange juice concentrate, thawed
1/3 cup granulated sugar
1 (7 oz) jar marshmallow cream
1 cup sweetened whipped cream, from above
Orange food coloring, optional but fun
Parfaits
Vanilla ice cream
Creamsicle Mousse, from above
1 cup sweetened whipped cream, from above
Orange slices or mandarin orange segments, for garnish

Steps:

  • Whip the Cream: In the bowl of your stand mixer, using the whisk attachment, beat the cream on low speed until foamy. Add the confectioners' sugar and vanilla and continue whipping, increasing the speed to medium, until it reaches firm peaks. Make the Mousse: In the bowl of your stand mixer, combine the thawed frozen orange juice concentrate, granulated sugar, and marshmallow fluff. Beat until smooth. Add 1 cup of the whipped cream and mix until just combined with no white streaks. If you want, add a few drops of orange food coloring and mix it in. Pour into a large bowl and refrigerate to set. Can be made a day in advance. Stir before assembling the parfaits. To Serve: Put a spoonful of the mousse in the bottom of each serving bowl (preferably glass so you can see the layers). Scoop some ice cream into each bowl and top with more of the mousse. Add more ice cream, mousse, and top with whipped cream. Garnish with orange slices and serve immediately.

1 3/4 cups orange juice
8 ounces low-fat vanilla yogurt or 8 ounces low-fat pineapple yogurt
3/4 cup lowfat chocolate wafer cookies or 3/4 cup ginger snaps (about 10)
orange slices or orange wedge (optional)
fresh mint sprig (optional)

Steps:

  • Prepare pudding mix, except use the 1 3/4 cs.
  • orange juice instead of milk.
  • Transfer pudding to a bowl, cover and chill thoroughly.
  • Before serving, fold yogurt into pudding.
  • Divide 1/3 of the mixture among 6 parfait glasses.
  • Sprinkle with half the crushed cookies.
  • Repeat layers.
  • Top with remaining pudding mixture.
  • Garnish with orange slices or wedges and mint.

CARAMELIZED ORANGE PARFAIT

8 oranges
1/2 cup turbinado sugar
1/4 cup orange liqueur
1 teaspoon sea salt
1/2 teaspoon fresh ground black pepper
1 cup heavy cream
1 large vanilla bean, split, seeds scraped
1/2 cup mascarpone cheese, room temperature
Extra-virgin olive oil, for drizzling, optional
1/2 teaspoon ground cinnamon, plus for garnish, optional

Steps:

  • Preheat the oven to 400 degrees F. Set a wire rack over a baking sheet.
  • Slice of the top and bottom of the oranges using a serrated knife. Place the oranges, cut side down, on the cutting board and slice away the outer layer of skin and pith to just reveal the flesh. Cut the oranges into 1/2-inch-thick slices and then into quarters. Place the oranges in a bowl and add the turbinado sugar and orange liqueur; toss to coat. Arrange the oranges on the wire rack and transfer to the oven. Cook until the sugar has caramelized, 13 to 15 minutes. Let cool, then sprinkle the oranges with the salt and pepper. Reserve to the side.
  • Combine the heavy whipping cream and vanilla seeds in a medium mixing bowl. Whisk until soft peaks form. Fold in the mascarpone and set aside.
  • To assemble: Spoon a dollop of mascarpone whipped cream into 4 to 6 footed parfait glasses. Top with a layer of caramelized oranges. Repeat four more times, so there are five layers of whipped cream and oranges in each glass. Refrigerate the parfaits for 20 minutes to set up.
  • Garnish each parfait with a drizzle of olive oil and a pinch of cinnamon, if using. Serve immediately.

1/2 cup unsweetened cocoa powder
3/4 cup butter, at room temp
1 1/2 cups dark brown sugar, firmly packed
3 eggs, at room temp
2 cups all-purpose flour
1 1/2 tablespoons baking soda
1/4 teaspoon baking powder
3/4 cup sour cream
orange rind, strips for decoration
1 1/2 cups sugar
2 egg whites
1/4 cup frozen orange juice concentrate
1 tablespoon fresh lemon juice
1 grated orange, rind of

Steps:

  • Preheat oven to 350°F Line two 9inch cake pans with waxed paper and grease. In a bowl, mix the cocoa and 3/4 cup boiling water until smooth. Set aside.
  • With an electric mixer, cream the butter and sugar until ight and fluffy. Add the eggs, one at a time, beating well.
  • When the cocoa mixture is lukewarm, stir into the butter mixture.
  • Sift together the flour, baking saoda and baking powder twice. Fold into the cocoa mixture in three batches, alternating with the sour cream.
  • Pour into the pans. Bake until the cakes pull away from the pan 30-35 minutes. Let stand for 15 minutes in pans, then remove from pans, cool on wire rack.
  • Thinly slice the orange rind strips. Blanch in boiling water, 1 minute.
  • For the frosting:
  • Place all ingredients in top of a double boiler or bowl set hot water. With electric mixer, beat until mixture holds soft peaks. Remove from heat and beat until thick enough to spread.
  • Sandwich the cake with frosting, then spread over the top and sides. Arrange rind on top.
