Steps:
- Heat skillet over medium high heat.
- Add olive oil and meat and season with salt and pepper.
- Brown and crumble beef.
- Add Worcestershire, onion, garlic, chili powder, and cook together 5 minute Add tomato sauce and reduce heat to low.
- Meanwhile boil franks in shallow pan to warm through, 5 minute
- Drain water and return pan to medium heat.
- Score casings on dogs.
- Melt butter in skillet and add hot sauce.
- Add dogs to pan, browning and crisping the casings in hot sauce and butter.
- Heat broiler.
- Place dogs in buns and top with chili and cheese.
- Place dogs under broiler and melt cheese.
- Serve immediately.

RACH'S CHILI-CHEESE DOGS HAVE ALL THE FIXIN'S
A spiced-up chili topping and split-and-griddled hot dog make for a super special chili-cheese dog.

Steps:
- Heat a pot over medium-high heat, add oil, finely crumble and brown meat
- Add salt and pepper, onions, jalapeño peppers, garlic, ginger, chili powder, paprika, cumin, coriander, and paste, stir 2 minutes
- Add Worcestershire, stock, ketchup and hot sauce, then reduce heat and simmer 20 minutes
- Simmer dogs in 1-inch water at low rolling boil to heat through
- Heat a griddle or large skillet over medium to medium-high heat
- Butter and grill rolls and remove from pan
- Split the dogs lengthwise to butterfly open and crisp skins and the split sides
- Serve dogs in rolls with cheese, top with chili, onions, relish/pickles and mustard
TYLER'S DAD'S ULTIMATE CHILI DOGS
Tyler Florence on the Food Network is one of my favorite chefs. I really like that show "How to Boil Water", but this recipe came from Tyler's Ultimate Tailgating show on Super Bowl weekend courtesy of his dad. It looked absolutely divine and I LOVE LOVE LOVE chili dogs, chili fries, and chili and cheese wraps. The ingredients and prep are simple and I have all the ingredients on hand usually.

- SAUCE:.
- Heat olive oil in a skillet over medium heat.
- When hot, add the onion and garlic and cook, stirring, until it is soft and translucent, about 5 minutes.
- Add the ground beef, breaking it up with the back of a spoon, and cook until nicely browned, about 10 more minutes.
- Stir in the ketchup, chili powder, and mustard and simmer for 15 minutes until thickened.
- Season with salt and pepper.
- While the chili is cooking, get the grill going.
- Place a large grill pan on 2 burners over medium-high heat or preheat an outdoor gas or charcoal barbecue and get it very hot.
- Take a few paper towels and fold them several times to make a thick square.
- Blot a small amount of oil on the paper towel.
- Then carefully and quickly wipe the hot grates of the grill to make a nonstick grilling surface.
- Bring a pot of water up to a simmer and parboil the dogs for about 5 minutes.
- Take them out of the water, pat them dry, and grill them just long enough to mark them. (That'll give them a grilled flavor too.)
- Brush the insides of the rolls with olive oil and lay them face down on the grill; cook until toasty.
- To serve, put a dog in each roll and top with the chili and some Cheddar.

DEVIL CHILI CHEESE HOT DOGS
I love this recipe. The bread gets crispy/crusty and it is absolutely wonderful with the chili mixutre and cheese. So good! A lot of times, I skip the onion and use onion powder. It's just as good.

Steps:
- Preheat oven to 350°F.
- Brown ground beef with onion.
- Add chili powder, Worcestershire sauce, garlic and salt to taste. Add tomato sauce. Sauce will thicken as it cooks. Be careful not to let it stick or burn. (Sometimes I use 2 cans of tomato sauce.).
- In a shallow pan, heat water to a boil.
- Add hot dogs. Cook until plump.
- Remove from heat and score casings.
- Add butter or margarine to the pan and return franks and "fry" until casings are slightly crisp.
- On a baking sheet place hot dog buns.
- Add hot dogs to buns and top with the chili mixture. Sprinkle cheese across the top.
- Place hot dogs into the oven and bake for about 10 minutes.
