DEVILED LOBSTER TAILS



Deviled Lobster Tails image

These spicy lobster tails are so easy to make. Just a note on the lobster tails in supermarkets: if they're not frozen, they've been frozen and then thawed. So, bypass the 'fresh' for the frozen, which are fresher.

¼ cup mayonnaise
2 tablespoons chopped tarragon
1 tablespoon sriracha sauce
1 teaspoon ground paprika
1 teaspoon lemon juice
¼ teaspoon ground cayenne pepper
1 pinch salt
4 frozen lobster tails - thawed, split in half, and deveined

Steps:

  • Mix mayonnaise, tarragon, sriracha sauce, paprika, lemon juice, cayenne pepper, and salt together in a bowl.
  • Preheat oven to 500 degrees F (260 degrees C). Set oven rack about 8 inches from the heat source and preheat the oven's broiler.
  • Loosen lobster meat from the shell, leaving it attached near the tip of the tail. Place tails on a baking sheet lined with crinkled aluminum foil to help keep them in place.
  • Spoon some of the mayonnaise mixture beneath the lobster meat and spread a generous amount on top.
  • Broil in the preheated oven until lobster tails are browned and cooked through, 5 to 7 minutes.

1 lb scallops
4 Tbsp butter, softened
1/2 tsp dry mustard
dash of cayenne pepper
1 c freshly made bread crumbs
melted butter

Steps:

  • 1. Pre-heat oven to 375 degrees. Butter a small baking dish. Rinse the scallops and pat dry with paper towels. Cream the butter, dry mustard and cayenne in a small bowl. Mix bread crumbs with enough melted butter to slightly moisten (about 1/2 to 1 tablespoon).
  • 2. Put the scallops in the baking dish, dot with the creamed butter, and cover with the buttered crumbs. Bake for 20 minutes.

8 hard boiled eggs (peeled and halved)
1/4 cup mayonnaise
2 tsp dill pickle juice
1/2 tsp yellow mustard ((or dijon), or to taste)
pinch of salt (or to taste)
1/8 tsp black pepper
1/8 tsp garlic powder
2 baby dill pickles (very finely diced)
1/8 tsp paprika (to garnish)
3 oz bacon (4 strips) (chopped and browned, for topping)

Steps:

  • Cut peeled eggs in half lengthwise and place them on a serving platter. Remove yolks with a spoon and place them in a medium mixing bowl.
  • Mash yolks to a fine crumb with a fork. Add 1/4 cup mayo, 2 tsp pickle juice, 1/2 tsp mustard, 1/4 tsp salt, 1/8 tsp black pepper and 1/8 tsp garlic powder and mash together until creamy.
  • Mix in finely diced pickles. Add more seasonings to taste if needed.
  • Spoon a generous teaspoon of the egg mixture into each egg half. Garnish the top with a generous sprinkle of paprika and big pinch of browned bacon bits.

6 large eggs (free range hard boiled)
2 tbsp mayonnaise
1 tsp prepared yellow mustard
2 fresh gherkins (finely diced)
1 fresh jalapeno (finely sliced)
salt

Steps:

  • Cook the eggs in boiling water for 6 minutes and allow to cool
  • Peel shells off cooled hard-boiled eggs; slice into halves lengthwise
  • Remove yolks from whites and place in a small round bowl
  • Mash yolks with a fork into fine pieces
  • Add 2 heaping tablespoons Mayonnaise, yellow mustard, diced gherkins and finely chopped jalapeno and salt and black pepper to taste
  • Stir mixture until creamy
  • Spoon mixture into a piping bag or similar
  • Squeeze mixture into egg white halves.
  • Sprinkle tops of filled deviled eggs with paprika.
  • Chill in refrigerator 1 to 2 hours or until cold before serving.
