3 cloves garlic (chopped)

4-6 eggs
FOR TOPPINGS: Spicy chili flakes

Steps:

  • Heat the oil in a medium skillet (I used my 14-inch cast iron paand add the onion and peppers. Cook them down for 5 minutes to soften.
  • Add the garlic and cook another minute, until you can smell the gorgeous garlic.
  • Stir in the pinto beans, ranchero sauce and salt and pepper to taste. Simmer for 10 minutes to let the flavors develop.
  • Remove the sauce and bean mixture and reserve.
  • Preheat oven to 350 degrees F.
  • Using the same pan (or use a lightly oiled large baking dish), layer half of the tortillas onto the bottom.
  • Top with half the sauce and bean mixture, then half of the shredded cheese.
  • Repeat with the remaining tortillas, then sauce and bean mixture, then shredded cheese.
  • Use a spoon to make impressions into the top layer, then crack the eggs into them.

HUEVOS RANCHEROS RECIPE

Huevos Rancheros Recipe image

Fried eggs served on tortillas, topped with salsa, cheese, with avocado and re-fried beans on the side. That's what I call perfection!

Provided by CookingTheGlobe

Time 35m

Number Of Ingredients 12

1 lb (450g) ripe tomatoes
1 clove garlic (, unpeeled)
1/2 small white onion ((about 1 oz or 30g), sliced)
½ to 1 jalapeño or serrano chile (, or to taste)
3/4 teaspoon sea salt (, or to taste)
vegetable oil (, for frying)
4 tortillas
4 large eggs
sea salt
1 cup refried beans
1/8 cup crumbled queso fresco, Cotija, farmer cheese, or feta cheese
avocado

Steps:

  • The salsa. Heat oven broiler. On a baking sheet, place the tomatoes, garlic, onion, and chile. Broil for about 15 minutes, turning halfway through, until the juices begin to run from tomatoes and the skin slightly blackens. Remove the skin from the garlic and discard.
  • Place the tomatoes together with all the juices, garlic, onion, 1/2 of the chile and salt in a blender or food processor and puree until smooth. Taste and add more chile if you want more heat.
  • The eggs. Heat 3 tablespoons vegetable oil in a skillet until hot. When you dip the edge of a tortilla into it, the oil should bubble. Using tongs, dip the tortillas in the oil (one at a time) for 10-15 seconds per side. Drain on paper towels.
  • Crack the eggs into the same pan, using the same oil, and cook to your preferred doneness. Salt to taste.
  • Serving Huevos Rancheros. Place a tortilla on a plate and top it with the egg. Now top the egg with your red spicy salsa and sprinkle some cheese over it. Serve with the refried beans and avocado slices on the side. Enjoy!

DEVILED HUEVOS RANCHEROS IN A NEST

Deviled Huevos Rancheros in a Nest image

A delicious twist on a breakfast favorite and an all American snack. The two combined is heaven!

Provided by TROY RAY

Categories     Breakfast

Time 45m

Number Of Ingredients 9

1 dozen extra large eggs
6 english muffins
14 oz can la costeña® refried black beans
12 oz container kraft® philadelphia whipped cream cheese
1 c pico de gallo or your favorite salsa
3 Tbsp creamy dijon mustard
1/4 tsp cayenne pepper
kosher salt and cracked pepper
minced baby chives, green onions and dill sprigs for garnish

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Separate English muffins and remove a small amount of the interior bread to create a "nest". Place on a parchment paper lined baking sheet. Lightly butter the inside of each nest, then spoon approximately one tablespoon of the prepared refried black beans and smooth to the inside edge. Layer a tablespoon of pico de gallo or a favorite salsa over the beans and spread evenly to the edge of each muffin.
  • 3. Separate each egg by placing one white in each muffin and reserving the yolks in a Ziploc® Zip'n Steam® Microwave Cooking Bag. Sprinkle a bit of kosher salt and cracked black pepper on top of each egg and place in oven for 10 to 12 minutes, or until eggs are set and muffins are toasted.
  • 4. Seal Zip'n Steam® with all twelve yolks, removing excess air in bag. Microwave at medium power for about 2 minutes, no more than three. Remove from microwave and place in large bowl of cold water [not iced] and let set and cool for a few minutes, or until they are easy to handle [I suggest placing Zip'n Steam® in a Ziploc® Freezer Bag so water does not seep into the yolk mixture].
  • 5. In a mixing bowl, combine yolks, whipped cream cheese, mustard, cayenne pepper, kosher salt and cracked pepper and quickly whip until fluffy. Place in piping bag with a star tip or in Ziploc® bag with a 1/4" tip cut-out and pipe a fluffy mound on the top of each "nest".
  • 6. Garnish with minced baby chives, minced green onions and a tiny sprig of dill.
  • 7. Serve warm. Buen provecho!

  • Heat the oil in a skillet. Sauté the garlic in the oil over a medium low heat for 5 minutes or until softened. Make sure the garlic doesn't burn, as it gets bitter if it does.
  • Remove the garlic and sauté the onions and pepper until soft. Add the tomatoes and seasonings. Simmer, covered until the mixture is thick and the tastes have blended together.
  • Fry, poach eggs or scramble the eggs. You can either pour the sauce over the eggs, allowing 2 eggs per serving or serve the eggs on a bed of sauce as in the image. Either way is fabulous.

  • SAUCE OPTIONS [A] Quick & Easy Ranchero Sauce (as written in recipe) In a large skillet, saute the chopped green onions and green chilis in olive oil for about 3 minutes. Add garlic and saute one more minute, then add tomato sauce and enchilada sauce and bring to a simmer. Simmer on low for 15 minutes, stirring frequently. [B] Homemade Enchilada SaucePut 3-4 cups of homemade sauce in the bottom of a large, heavy skillet. Stir in about 1 cup of water. Heat over medium low until the mixture simmers. [C] Canned Enchilada Sauce Use about 4 cups of your favorite canned enchilada sauce. Heat over medium low until the sauce simmers.
  • While sauce is simmering, fry or warm tortillas. Place prepared tortillas in a tortilla warmer or wrap them in a clean kitchen towel to keep them warm.
  • When the enchilada sauce is prepared, heat a large, heavy bottom skillet full of sauce over very low heat until it is just barely simmering. Carefully break the eggs directly into the hot sauce. Cover the pan immediately and cook for 8-11 minutes, or until the yolks are almost as done as you want them. (They will continue to cook after you turn off the heat.)
