OPEN-FACED DEVILED EGG SALAD SANDWICHES

Love deviled eggs but hate the mess? Enjoy this easy to make (and healthy!) deviled egg sandwich recipe any day of the week!

1 hard-boiled egg
1 tsp mayo
1/2 tsp Dijon mustard
Paprika & salt to taste
1 slice whole wheat bread, toasted
Chives (optional)

Steps:

  • Make a hard-boiled egg.
  • Chop egg and mix with mayo and mustard. Add paprika and salt to taste.
  • Spoon egg mixture over a slice of toast and sprinkle with chives, if desired.

Enjoy the classic combo of ham and eggs any time of day thanks to this deviled egg recipe. Diced ham makes the reliable party pleaser an even bigger hit.

12 eggs
1/4 cup mayonnaise or salad dressing
1 tablespoon yellow mustard
2 teaspoons sugar
2 teaspoons cider vinegar
1/4 teaspoon salt
1/8 teaspoon pepper
3 oz fully cooked ham, diced
1 jar (2 oz) diced pimientos, drained
1 tablespoon chopped fresh parsley

Steps:

  • In 4-quart saucepan or Dutch oven, place eggs in single layer; add enough cold water to cover eggs by 1 inch. Cover and heat to boiling; turn off heat. If necessary, remove pan from heat to prevent further boiling. Cover and let stand 20 minutes. Immediately run cold water over eggs or place them in ice water until completely cooled.
  • Meanwhile, in medium bowl, mix remaining ingredients except ham, pimientos and parsley.
  • Peel eggs; cut lengthwise in half. Reserve egg white halves. Add egg yolks to mayonnaise mixture; mix well with wire whisk. Stir in ham and pimientos.
  • Spoon yolk mixture into egg white halves. Place on serving plate; sprinkle with parsley. Cover and refrigerate until serving.

2 eggs, hard boiled
3 tablespoons butter, melted
1 teaspoon lemon juice
1/4 cup mayonnaise
1 teaspoon onion powder
1 teaspoon celery salt
1 teaspoon pepper

Steps:

  • Grind all the ingredients together (I think a food processor would do).

  • In a saucepan, cover the eggs with water and bring to a boil. Simmer over moderately high heat for 8 minutes. Drain and cool the eggs slightly under cold running water. Peel the eggs and coarsely chop.
  • In a large bowl, whisk the mayonnaise with the mustard, hot sauce, paprika and 1 tablespoon of the pickle brine. Fold in the chopped eggs, pickles and scallion and season with salt and pepper.
  • In a medium bowl, toss the frisée with the olive oil and the remaining 1/2 tablespoon of pickle brine. Season the frisée with salt and pepper.
  • Preheat a large cast-iron skillet. Fry the ham slices, turning once, until lightly browned, about 2 minutes. Lay the ham slices on the muffin bottoms and top with the egg salad and frisée. Close the sandwiches and serve.
