BEST DEVILED EGGS RECIPE

Steps:
- Bring a pot of water to a boil. Reduce the heat to low (or off) to ensure the water is no longer boiling or has bubbles and use a skimmer to place the eggs in the water. Then increase the heat back to high and set a timer for 14 minutes.
- While the eggs are boiling prepare an ice water bath and set aside. After 14 minutes, remove the eggs from the water and place in the ice water bath.
- Once the eggs have cooled completely, peel them and slice in half lengthwise. Remove the yolk to a small bowl with a spoon and place the egg whites on a plate.
- Mash the yolks with a fork and add the mayonnaise, mustard, vinegar, salt and pepper. Stir everything together until it's smooth.
- Use a spoon to add a portion of the deviled egg mixture back into the hole of each egg white. Sprinkle on paprika for garnish.

- For the roasted garlic: Preheat the oven to 400 degrees F.
- Halve the garlic across the equator and place on a sheet of heavy-duty aluminum foil. Sprinkle with salt and drizzle with the oil. Wrap to cover the garlic and roast until soft, about 30 minutes. Remove, cool and pop the garlic cloves out of their skins. Mash with a fork to make a paste and set aside.
- For the deviled eggs: Place the eggs in a large pot and cover with cold water. Bring the water to a boil over high heat; then immediately remove from the heat, cover and let sit for 10 minutes. Drain the eggs and cool for 15 minutes.
- Peel the eggs, then halve them lengthwise and gently scoop the yolks into a bowl. Using a fork, mash the yolks with the mayonnaise, mustard and 1 tablespoon mashed roasted garlic. Fold in the jalapenos and season to taste with salt and pepper. Whisk into a creamy paste.
- Spoon a generous mound of the mixture into each egg white half to fill the divots. Alternately, place the yolk mixture into a piping bag and fill the divots. Garnish with a small dollop of salmon roe and/or black caviar and serve immediately.

- Preheat oven to 400 degrees. Spread bread squares evenly on a baking sheet. Bake until edges are lightly golden, 7 to 10 minutes, and set aside to cool.
- Peel eggs, and cut in half lengthwise. Carefully scoop out the yolks, and reserve. Cut whites in half again lengthwise, and arrange quarters on toast squares at a diagonal.

- Place eggs in a small pan, and cover with water. Bring to a gentle simmer, and cook 9 minutes. Drain, and peel while still warm. Slice in half lengthwise; remove yolks, reserving whites on a serving platter.

- Place quail eggs in a medium saucepan, and cover with several inches cold water. Cover, and bring to a boil over high heat. - Place the eggs in a medium-sized sauce pot and cover them with water by at least an inch. Place the pot over high heat and bring it to a boil as quickly as possible. Once the water begins to boil, set a timer for 10 minutes. Once the timer sounds, remove the pan from the heat and pour out the hot water. Run the eggs under cold water until they are cool enough to handle but still warm. Carefully peel the shell from each egg under running water. Carefully rinse any remaining yolk from the white, then set the whites on a plate lined with paper towels to dry. - Combine the yolks, mustard, cayenne pepper, salt, water and lemon juice in a small blender or food processor. Blend until smooth, then slowly drizzle in the oil until it has been thoroughly incorporated and is homogenous. For added refinement, the yolk purée can be passed through a small fine-meshed strainer (chinois). Chill the yolk purée in the refrigerator, then transfer it to a disposable plastic piping bag.
- Uncover the egg whites and blot dry any remaining liquid inside the area where the yolk was. Twist the piping bag to concentrate the yolk mixture toward the tip. Snip the tip of the piping bag so that the opening is a hole about three-eighths inch in diameter. Place the open tip about one-eighth inch from the bottom of the cavity in the white. Slowly squeeze out the yolk mixture and gradually raise the tip until the yolk mixture comes up to the flat surface of the egg. Do not mound the yolk above the flat surface.
