- Put the beet in a medium saucepan and add the balsamic vinegar, brown sugar, peppercorns, bay leaf, 3/4 cup cider vinegar, 1 tablespoon salt and 3 cups water and bring to a boil. Let boil until the sugar is completely dissolved, about 5 minutes. Add the peeled eggs to the pan, then cover and refrigerate for at least 4 hours and up to overnight for a deeper pink color.
- Cut the eggs in half, then scoop out the yolks and place them in a medium bowl. Put the egg white halves on a serving platter. Add the mayonnaise, Dijon, chives, remaining tablespoon cider vinegar and a bunch of grinds of black pepper to the bowl with the yolks. Use a fork to mash the yolks until smooth and creamy and well combined. Transfer the mixture to a large resealable plastic bag and snip about 1/2-inch off of one of the corners. Pipe the mixture into the holes of the egg whites. Sprinkle the chopped pistachios over the top, then place 1 piece baby arugula on top of each egg. Sprinkle the platter with the crumbled goat cheese.

- In pint-size glass jar, place peeled eggs. (A wide-mouth jar works the best.)
- Into 2-quart saucepan, drain liquid from can of beets. (Reserve beets for another use or discard.) Add sugar, vinegar and cloves. Heat over medium-high heat, stirring to dissolve sugar, until mixture comes to a boil. Remove from heat.
- Carefully pour hot liquid over eggs. Cool completely, about 1 hour.
- Cover jar tightly with lid. Refrigerate at least 4 hours before serving.

QUICK PICKLED EGGS AND BEETS
Easy and simple way to make pickled beets and eggs. You can double the recipe for larger gatherings. This is my late grandmother's recipe and everyone loves it. Will keep in fridge for up to 2 weeks.

- Place egg in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, and peel. Place eggs in a glass or plastic container.

- In a medium pot, mix 1 cup apple cider vinegar, 1 tablespoon sugar, 2 teaspoons salt, and 3 cups water. Add the beet and bring to a boil, then remove from heat and let cool slightly. Pour into a large heat-safe jar or bowl (including beet). Add eggs, stir, and refrigerate at least 3 hours (stirring occasionally) or overnight for a darker shade of pink.
- Remove eggs from liquid. Halve eggs (reserving the whites) and gently transfer the yolks to a bowl. Add 1 tablespoon vinegar, mayonnaise, herbs, and anchovy paste to the yolks. Season with 1/4 teaspoon each salt and pepper, then spoon or pipe the filling into the egg whites.
- Place the chiles, remaining 2 tablespoons vinegar, the remaining pinch each of sugar and salt in a bowl and let stand 15 minutes. Drain the chiles, then sprinkle over the deviled eggs. Sprinkle with additional herbs, if desired. Serve.

- Drain beets and reserve juice. Set beets aside.
- Combine vinegar, beet juice, brown sugar, peppercorns, and salt in a sauce pan and boil until sugar is dissolved. Remove from heat and cool.
- Layer eggs, beets, and onion in a jar large enough to fit (with room for the brine), and fill the jar with the cooled brine.
- Soak eggs for at least 16 hours, up to 20 (suggested: 17 hours,).
- After brining, remove the eggs and cut in half. Scoop out the yolks into a medium-large bowl.
- Remove a few slices of onion from the jar, and finely chop/mince (if desired).
- With a stand or hand mixer, whip together the egg yolks, mayo, butter, onion, and seasonings; make sure to taste and adjust seasoning to preference. Mix in minced onion, if using.

BEET-PICKLED HUNGARIAN DEVILED EGGS

- For the beet-pickled eggs: Put the cold eggs in a medium saucepan and cover with cold water. Heat the water to a boil, then cover the saucepan and remove it from the heat. Let stand for 12 minutes. Drain the eggs and rinse with cold water. Let the eggs cool a bit, then peel them while they are still warm (eggs are much easier to peel when warm).
- Place the hard-boiled eggs in a bowl or storage container and pour the pickling brine from the beet jars over the eggs, making sure the eggs are submerged. (You may need to place a weight or a plate on top.) Allow the eggs to sit for 45 minutes to 1 hour in the brine, but no longer or they'll start to get rubbery.
- For the sweet Hungarian filling: Mix together the mayonnaise, sour cream, dill, vinegar, horseradish, mustard, paprika and cucumber. Season with salt and black pepper.
- Slice the eggs in half lengthwise. Gently remove the yolks by pressing your thumb against the back of each yolk to pop it out of the white. Add the yolks to the bowl with the filling and mash with a fork until smooth. Season with salt.
- Spoon the filling into the egg whites, or use a re-sealable plastic bag to pipe it in. Sprinkle with paprika and dill before serving.

- Preheat the oven to 350 F.
- Place the beet on a small sheet pan and roast for 1 hour to 1 hour and 20 minutes, or until the beet is tender when pierced with a paring knife.
- Allow the beet to cool to room temperature and peel off the skin.
- Place the peeled beet in a large bowl.
- Set aside.
- In a saucepan, add the red wine vinegar, sugar, and salt.
- Place over a medium flame and heat until the salt and sugar have dissolved.
- Pour this liquid over the cooked beet.
- Allow this to cool to room temperature, then cover and place in the refrigerator for at least 24 hours.
- The next day, remove the beet, reserving the pickling liquid.
- Cut the pickled beet into a small dice and set aside.
- In a large pot, heat the canola oil to 300 F, measuring the heat with a candy or deep-fry thermometer.
- Rinse the slices of sweet potato under cold water for 2 minutes to release excess starch.
- Dry very, very thoroughly and fry the slices in batches for 2 to 5 minutes, or until the chips are just beginning to brown and curl at the edges.
- Remove the chips and check for crispiness.
- If the chips are not crisp, return to the oil for another 20 to 30 seconds.
- Remove and season with salt.
- Set aside.
- Fill a pot or a large saucepan with water and bring to the boil.
- Once boiling, add the eggs and boil for 10 minutes.
- Drain the eggs and immediately plunge into a bowl of cold water.
- Allow the eggs to sit in the cold water for 5 to 10 minutes to allow for easy peeling.
- Peel the eggs over lightly running water from the faucet (this will also help in peeling).
- Place the eggs in the reserved beet pickling liquid and let them sit for 15 minutes.
- Remove the eggs, rinse under cold water, and dry very thoroughly.
- On the long side of each egg, shave off a piece of the egg, about 1/8-inch thick, so that the egg will lay flat when served.
- Cut each egg in half lengthwise and remove the yolks to the bowl of a stand mixer.
- Set the hollowed-out whites aside while you make the filling.
- In the bowl with the yolks, add the mayonnaise, mustard, rice vinegar, turmeric, salt, pepper, and Tabasco.
- Mix on low until well combined.
- Add the capers and chives and fold gently until incorporated.
- Spoon this mixture into a piping bag fitted with a large star tip and pipe into the hollowed-out egg white shells.
- Garnish each egg with the diced pickled beets, sweet potato chip, dill, and sea salt.

- Bring water, vinegar, beet, shallot, sugar and a pinch of salt to a boil in a 2-quart saucepan. Simmer it, covered, until beet is tender, about 20 minutes.
- Transfer the beet mixture to a container and cool it completely, uncovered.
- Add the eggs to the mixture, submerging them entirely in the liquid. Refrigerate the eggs for at least 2 hours, and up to 6 hours, allowing the eggs to marinate while gently stirring them once or twice.

- First, hard boil your eggs. I bring a medium saucepan full of water to a boil, carefully place the eggs in, cook for 12 minutes and then cool the eggs in an ice bath or under cool water. Peel the eggs and set aside.
- While eggs are cooking, bring apple cider vinegar, water, sugar, salt and beets to a simmer in a medium saucepan. Simmer until beets are fork tender, about 20-30 minutes, and cool completely. Do not over cook the beets or the liquid will be more reddish brown than pink.
- Place peeled eggs into large mason jars and pour the cool beet liquid and beets into the jars to cover the eggs. Refrigerate for at least 8 hours (I did 16). Any more that 24, and you won't have much white left, so keep that in mind. Gently shake the jars every few hours to rotate the eggs.
- To make the deviled eggs, slice the eggs in half the long way and carefully scoop out the yolks into a bowl.

- To boil eggs: Place eggs in a pot and cover the eggs with water. Transfer the pot to the stove and turn the heat to high. Bring the pot of water to a medium boil. The second the boil begins, turn the heat off, cover the pot and set your timer to 9 minutes. This will give you a firm yolk---yet not overcooked---that's perfect for deviled eggs. Drain the eggs and run cold water on them--just so they're cool enough to handle. I find that warm eggs are easier to peel than cold eggs. Peel each hard boiled egg and set them aside.
- To a medium saucepan, add all of the pickling ingredients: water, apple cider vinegar, sugar, salt, beet juice, beet, yellow onion, garlic clove, cloves and cinnamon stick. Bring the mixture to a simmer; cook for 20 minutes, until the beet is very tender when poked with a fork.
- Transfer the pickling liquid to the refrigerator or freezer (I put it in the freezer for 15 minutes to cool it down quickly) to come to room temperature. (We're doing this so the liquid doesn't overcook our perfectly boiled eggs.) When the mixture is room temperature, transfer it to a large bowl or jar. Carefully drop in the hard boiled eggs and allow to pickle for at least 2 hours or up to 2 days. Obviously, the longer you allow them to sit, the more pink in color they'll be and the more they'll taste like the pickling liquid. The pickled eggs you see pictured were pickled for 2 1/2 hours.
- Once pickled, remove the eggs from the pickling liquid and slice them in half. Gently scoop out the egg yolks and transfer them to a medium bowl. Mash the egg yolks with a fork until they reach a fine crumble. Mix in the mayonnaise, sour cream, Dijon mustard and freshly ground pepper until the egg yolks are very smooth. Salt to taste and adjust any other seasonings to your liking (you may find you need to add a tablespoon or two more of mayo or sour cream to reach a smooth consistency).
