DEVILED EGG & SPINACH CASSEROLE
I prefer to rinse and use the frozen spinach, solely because when using fresh spinach you need to be sure to THOROUGHLY wash all the spinach of dirt. I've tried using fresh, and didn't clean it as well as I thought I did... needless to say it ruined the entire dish! Sad day in my amateur cooking career, but it gives me a good...

Steps:
- 1. Cut eggs in half lengthwise and remove yolks.
- 2. Mash yolks with mayonnaise, mustard, and pepper. Once desired texture is reached fill egg whites with mixture. Set aside.
- 3. Cook spinach, drain, and squeeze out excess water.
- 4. Melt butter in saucepan and blend in flour. Gradually add milk, stirring constantly while cooking over medium heat until sauce thickens.
- 5. Reserving about 1/4 cup grated cheese, stir remaining cheese into sauce until melted. Then add Worcestershire sauce, salt, and Tabasco sauce.
- 6. Place spinach in a lightly greased 3 quart baking dish with half of the cheese sauce. Mix together.
- 7. Place deviled egg halves on top of spinach and cover with remaining sauce.
- 8. Sprinkle the remaining cheese over all. And bake at 375°F for about 25 minutes, or until bubbly and lightly browned.
- 9. Eat & Enjoy!

- Cut eggs in half lengthwise.
- Remove yolks and mash on a flat plate with a fork.
- Set aside.
- Place egg white halves in a 13x9x2-inch glass baking dish.
- Set aside.
- Make sauce by melting butter in a medium saucepan over low heat.
- Stir in flour, salt and white pepper.
- Cook 1 minute with mixture bubbling.
- Whisk in milk gradually, bring to a boil, stirring constantly.
- Boil 1 minute, stirring.
- Add cheese; stir until melted and smooth.
- Measure out 1/2 C.
- of sauce in a small bowl and add 1 T.
- mustard and 1/2 tsp.
- Worcestershire sauce; stir to blend.
- Pour over mashed egg yolks and mix until smooth.
- Fill egg white halves with egg yolk mixture, dividing evenly.
- Add remaining 1 T.
- mustard and remaining 1/2 tsp Worcestershire sauce to remaining sauce.
- Pour sauce over top of filled eggs.
- Sprinkle tops of eggs with Parmesan cheese.
- Bake in a preheated 375°F oven for 25 minutes, or until tops are lightly browned.
- Serve hot.

- Wrap drained tofu in a clean, lint-free dish towel and place on a plate. Set another plate or block of butter on top. Place in the refrigerator to drain for 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Line a small baking dish with parchment paper.
- Unwrap tofu and discard accumulated liquid. Cut tofu widthwise into 4 equal pieces. Carve each piece into the shape of half an egg white using a spoon. Hollow out the center of each piece to create a spot for the "yolk." Reserve all the scraps.
- Marinate "egg whites" in cider vinegar in a shallow dish for 10 to 15 minutes. Remove from vinegar and transfer to the prepared baking dish.
- Bake tofu in the preheated oven for 10 minutes.
- Combine tofu scraps, chickpeas, mustard, nutritional yeast, cayenne pepper, salt, and pepper in a food processor; blend until smooth. Spoon mixture into a resealable plastic bag and snip off one corner.
- Pipe the chickpea mixture into the hollows in the tofu. Garnish with chives and paprika. Chill before serving.

- Slice eggs in half lengthwise.
- Remove yolks and put in a bowl and mash with a fork.
- Set egg whites aside.
- To the egg yolks, add sour cream, mustard and salt and mix till creamy.
- Fill the egg whites with this mixture and set aside.
- In a small saucepan, saute the onions in the butter until tender.
- Add the soup and sour cream and mix well.
- Pour half of soup into an ungreased, shallow baking dish.
- Arrange stuffed eggs over the sauce.
- Spoon remaining sauce on top and sprinkle with the cheese and paprika.
- Cover and refrigerate overnight.
- The next morning take dish out of refrigerator for at least 30 minutes before baking.
- Bake in a preheated 350 degree oven for approximately 30 minutes or until heated through.
