SPICY FRIED CHICKEN BITES WITH DERBY DIP



Spicy Fried Chicken Bites with Derby Dip image

4 strips bacon
1 1/2 pounds boneless skinless chicken
2 cups buttermilk
2 tablespoons hot sauce
2 1/2 cups all-purpose flour
2 teaspoons cayenne pepper
2 teaspoons paprika
1 teaspoon garlic powder
1 tablespoon salt
1 teaspoon freshly ground black pepper
2 cups canola oil
3/4 cup sour cream
1 tablespoon mayonnaise
1/4 cup blue cheese, room temperature, cut into small pieces

Steps:

  • Preheat oven to 375 degrees F.
  • Put the bacon onto a baking sheet and bake until crisp about 12 minutes. Transfer the bacon to a plate lined with paper towels. Reserve 2 tablespoons of the bacon fat. Once the bacon is cool enough to handle, chop into small pieces.
  • Cut the chicken into bite-size pieces. In a large bowl combine the buttermilk, hot sauce, and chicken. Cover and let marinate in refrigerator for at least 2 hours or up to overnight.
  • In a glass baking dish, whisk together the flour, cayenne pepper, paprika, garlic powder, and salt and pepper. Remove the chicken from the buttermilk and add to the seasoned flour. Make sure all the chicken pieces are thoroughly coated. Remove the chicken from the flour mixture and put back into the buttermilk. Remove chicken from buttermilk and put back into the seasoned flour mixture for a second coating. Transfer the double coated chicken to a baking sheet and reserve.
  • Heat the canola oil in a large cast iron skillet to 350 degrees F. Add the reserved 2 tablespoons bacon fat. Working in batches, fry the chicken until golden brown, about 3 to 4 minutes per side. Transfer the cooked chicken to a sheet pan lined with paper towels.
  • In a medium bowl stir together the sour cream, mayonnaise and blue cheese. Stir in the crumbled bacon.
  • Serve the chicken with the Derby Dip on the side.

1 (3 ounce) package cream cheese, softened
2 tablespoons mayonnaise
2 tablespoons finely grated onion
2 tablespoons finely grated peeled and seeded cucumber
1 drop green food coloring

Steps:

  • Mix cream cheese, mayonnaise, onion, cucumber, and food coloring together in a bowl until well blended and food coloring is incorporated. Cover and chill, 8 hours to overnight. Serve.

We were down in Kentucky to meet my niece's fiance and his friends and family and found this dip. Thought I'd pass it on. Can be served with veggies, but I liked it best with Triscuits®. I was surprised by this dip. I only tried it because of the crackers. For better flavor, make the day before so the flavors can meld. Can also be made by leaving out bacon and adding 1/2 cup slivered almonds or finely chopped pecans.

1 cup creamy salad dressing (such as Miracle Whip®)
1 cup shredded Cheddar cheese
1 cup seeded and chopped Roma tomatoes
1 (3 ounce) jar real bacon bits
1 tablespoon chopped green onion

Steps:

  • Mix sour cream, creamy salad dressing, Cheddar cheese, tomatoes, and bacon bits in a bowl until thoroughly combined. Refrigerate until serving time; served topped with green onion.

This spread can be used as a dip or sandwiches and canapes. It was made popular at Louisville's Benedict's Restaurant earlier in this century for the Kentucky Derby.

1 large English cucumber, peeled and seeded
1 (8 ounce) package light cream cheese, softened
2 tablespoons onions, minced
1/4 teaspoon salt
1 tablespoon light mayonnaise
1 tablespoon light sour cream
1 dash green food coloring (optional)
2 tablespoons fresh dill weed, snipped
vegetables, crudites
crackers, tortilla or pita bread chips

Steps:

  • Grate cucumber and drain in a fine mesh sieve. Combine cucumber, cream cheese, onion, salt, mayonnaise, sour cream and food coloring (if using) in a food processor.
  • Transfer to a bowl and add chopped dillweed. Taste for seasoning.
  • Serve with vegetable crudites as baby carrots, broccoli, cauliflower, celery, grape tomatoes, sugar snap peas; or white and blue con tortilla or pita bread chips.
